Recipe—Roasted Fennel Fries

Awhile back I posted a recipe for kale chips. Kale chips are a delicious and healthy snack that my son absolutely loved. I was eager to find more recipes that were just as simple, tasty, and nutritious. I recently used the same seasoning and cooking technique with roasted fennel and had fabulous results. These roasted fennel fries were absolutely addicting. My son and I could not stop eating them! We didn’t even waste time getting out a plate. I kid you not, we were eating the pieces straight off the baking sheet. They were that good! Think french fries, but without the calories and even more flavorful. Roasted fennel fries are not only a great snack but they also make a great side dish for any dinner. Just be sure you make enough because these fries will go fast!

INGREDIENTS

2 large fennel bulbs, fronds removed and sliced into 1/3” thick pieces
1 tbsp olive oil
salt and pepper

STEPS

  • Preheat oven to 375º.
  • Cover a large baking sheet with parchment paper and place the fennel slices in a single layer.
  • Drizzle with olive oil and season with salt and pepper.
  • Place in the oven and cook for 30–45 minutes flipping once halfway through.
  • Bake until the fennel is fork tender and a golden brown.

Recipe—Creamy Smoked Salmon Dip

Are you on the hunt for an elegant and absolutely delicious hours devours? If so the hunt can come to an end. This dish takes less than 10 minutes to make and is the perfect snack to serve at the next function you have coming up. Salmon is an incredibly popular fish here on the West Coast and I really enjoy the flavor combination of smoked salmon, cream cheese, and capers. This has all those wonderful flavors plus a nice refreshing zest of lemon and a little bite from the shallot. One of the things that is great about this recipe is that it can be whipped up minutes before your social function or even made ahead a day or two ahead of time. This appetizer truly is perfect for an afternoon or evening social, or even spread on your bagel for breakfast.

Note: You can serve this dip with crackers, toasted bread, sliced cucumber, pretty much anything, but what I love is this dip served with everything crackers or bagel chips. Just something about all those wonderful flavors really takes this already awesome dip to the next level.

INGREDIENTS
4–6 oz smoked salmon
1/3 c extra virgin olive oil
1/2 c mayonnaise
1/2 c cream cheese
1/2 c grated parmesan cheese
2 tsp capers
1 tsp garlic, minced
1 1/2 tbsp shallot, minced
1 tsp lemon juice
1 tbsp white wine
1/2 tsp lemon pepper
1 tbsp chives, minced

STEPS

  • Place all ingredients except for the salmon in a blender or food processer and blend until well incorporated.
  • Add the smoked salmon to the blender and pulse until desired consistency.
  • Transfer the dip to a small bowl and refrigerate until ready to serve.
  • Serve with some toasted crostini or your favorite crackers.

Father’s day is just around the corner and there are going to be some hungry men hoping to get a day off in the kitchen or on the grille. While many people may enjoy going out, my hubby is more partial to a nice home cooked lunch or dinner with the fam. Rather trying to guess what recipes I think the men in our lives would like I went straight to the source and got a male perspective. I asked my husband to sort through my entire archive of recipes and pick out his top 12 favorite recipes that I have featured on my blog. Recipe—Italian Style Stuffed Artichokes

One of my best friends used to work in this cute little Italian deli that had numerous homemade Italian dishes. My three favorite things there was their gelato (which my friend kindly delivered to my door step while I was pregnant, becasue she’s awesome like that), eggplant parmesan, and their Italian stuffed artichokes. I LOVE their stuffed artichokes! They are a tad bit messy to eat but so delicious! When I eat artichokes I’m the type of gal that needs soemthing to dip the leaves in, whether it be mayonnaise, aioli, or garlic butter. However with these there is so much flavor in the bread crumbs that no dip is necessary. You just pull the bread crumbs off with the tender ends of the leaves.

INGREDIENTS
3 tbsp olive oil
1 tsp garlic
salt and pepper
1 c Italian breadcrumbs
1/4 c grated parmesan cheese
2 large artichokes
1/2 of a lemon

STEPS

  • Preheat oven to 425º.
  • Heat the olive oil in a medium skillet.
  • Add the garlic and sauté until fragrant.
  • Remove the skillet form heat and stir in breadcrumbs and parmesan cheese.
  • Season bread crumbs with salt and pepper.
  • Put a pot of water on to boil. (The amount of water you will need will depend on the size of your baking dish. You will need enough that the artichokes can sit in 1” of water.)
  • Prepare the artichokes by slicing off the stems and their tops and then pulling off the small outer leaves. (I trim about an inch off. This exposes the center leaves making it easier to remove them.)
  • Using a pair of kitchen shear trim the pointy tips off of the leaves.
  • Take the lemon half and rub it all over the artichokes. (This keeps the cut areas from turning an ugly brown color and gives it a nice little zest.)
  • Gently try to loosen up the dense center leaves by pressing them outward.
  • Pull out some of the thin center leaves if you are able to, creating a small well in the middle.
  • Stuff the prepared breadcrumbs in the center well and in between the large leaves.
  • Place the stuffed artichokes in a baking dish.
  • Once your water has come to a boil, carefully pour it into the baking dish so that the artichokes are sitting in 1” of water.
  • Cover the entire baking dish tightly with foil.
  • Bake in the over for 1 hour or until the leaves are cooked to desired tenderness.

Recipe—Bacon Jalapeño Cheese Ball

I have always loved the idea of cheese balls, but have been turned off by the fake processed taste of the premade ones you get at the store. Well cheese balls seem to be redeeming themselves with all the creative gourmet versions popping up all over the place. I recently threw my husband a little birthday bbq and wanted an appetizer that could be prepared ahead of time and then just set out once the party started. When I saw this recipe on Pinterest I knew it was exactly what I was looking for! My husband loves bacon, and of course loves the spice of jalapeños. (Don’t all men? Okay I guess vegetarians may be repulsed by the bacon but there are substitutes for that.) Once I had the bacon cooked and the jalapeños chopped this recipe came together in about 5 minutes. It was super quick and easy. A perfect recipe for any social events you may have coming up. By the end of the night I had several people asking for the recipe, which, in my mind, is a very good sign.

Note: This can be made a day ahead of time and stored in the refrigerator until ready to serve.

INGREDIENTS
8 oz cream cheese
3/4 c cheddar cheese, shredded
2 tbsp green onions, chopped
1 tsp garlic, minced
1/4 tsp cumin
1/4 tsp salt
dash cayenne pepper
1 tsp lime juice
1/2 tsp Worcestershire sauce
2 jalapeños, deseeded, deveined, and finely chopped, divided
6 slices of bacon, cooked and crumbled, divided
1/4 c pecans, chopped

STEPS

  • In a medium mixing bowl stir together the cream cheese, cheddar cheese, green onions, garlic, cumin, salt, cayenne pepper, lime juice, and Worcestershire sauce.
  • Fold in half of the chopped jalapeños and half of the crumbled bacon until well blended.
  • On a large plate combine the remaining jalapeños, remaining bacon, and the pecans and mix together.
  • Using your hands shape the cream cheese mixture into a large even ball.
  • Once you have formed the ball roll it in the pecan mixture until it is evenly coated.
  • Place the finished cheese ball on a plate and refrigerate for at least an hour before serving.
  • Serve with your favorite crackers.

Recipe—Chicken Cordon Bleu Rollups

My son loves chicken strips dipped in honey mustard and he also loves croissants. (Who doesn’t, really?) I whole-heartedly made this for him because I knew it would be a hit with the munchkin. Turns out the whole family loved them! This recipe is so simple, quick, and cheap to make. My little guy was even a wonderful helper in assembling them, and of course he made sure to be on quality control check while we were putting them together. Little rascal. I just served these with a big green salad for a balanced dinner. We had plenty of leftovers and they reheated extremely well in the oven. I’m definitely keeping these in mind for appetizers too. They were a perfect finger food and were fun to eat and make!

INGREDIENTS
1/4 c honey
1/4 c yellow mustard
1/8 c mayonnaise
1 lb chicken breast tenders
1 tbsp butter
2 cans crescent rolls
8 slices Swiss cheese, cut in half
8 slices ham cut in half lengthwise

STEPS

  • Combine together honey, mustard, and mayonnaise in a small bowl or measuring cup.
  • Place the chicken tenders in a large Ziploc bag and add in 1/2 of the honey mustard sauce and toss to coat.
  • Melt the butter in a large skillet over medium-high heat and cook the saucy chicken breast tenders flipping once until done, about 10–12 minutes.
  • Separate the crescent rolls into the individual triangles.
  • Spread the remaining honey mustard on each one.
  • Place a slice of the Swiss cheese on each crescent triangle and then top with a slice of ham folded in half.
  • Top each with a cooked breast tender.
  • Roll up the crescent starting at the wide end and place on a baking sheet covered in parchment paper. (The parchment paper helps make cleaning up the melted cheese a breeze!)
  • Repeat with remaining chicken tenders and crescents.
  • Bake for 18–20 minutes or until golden brown.

Recipe—Garlic Parmesan WingsSo I am totally on a low carb kick right now. I am determined to loose this extra weight in preparation for summer and just to feel better overall. A lot of people ask me, “How can you do low carb? Don’t you miss all the good stuff?” My response is, “Uhhh…NO!” One of the reasons I love low carb is that you still get to eat really good food. Look at these garlic Parmesan wings, NO CARBS! Zero! Zilch! And while they are short on carbs they are most certainly not short on flavor. I actually made these for a party last weekend and they were a hit! When I told my husband what I was making for the party he told me he probably wouldn’t eat any. Well, guess who was standing over the kitchen sink chowing down on these wings? He just could not resist them. They smelled so incredibly good! And tasted just as scrumptious. I highly recommend these wings even if you aren’t watching your carbohydrates. They were super easy to make and a real crowd pleaser. By the end of the night several people had asked for the recipe. That my friends, is a very good sign.

INGREDIENTS
2 tsp dried oregano
2 tsp dried rosemary, chopped
2 tsp kosher salt
1 tsp dried cumin
3 lbs chicken wings & drumsticks
4 tbsp olive oil (I used some roasted garlic flavored that I had on hand. Delish!)
2 tbsp dried basil
2 tbsp garlic, minced
1/2 c Parmesan cheese, finely grated

STEPS

  • Preheat oven to 425º.
  • In a small bowl combine oregano, rosemary, salt, and cumin. Stir to combine.
  • Place the wings in a large bowl and sprinkle with the seasoning mixture. Toss to coat.
  • Place all the wings in a single layer in a baking dish.
  • Bake for 23–27 minutes or until the wings just start to turn a golden brown.
  • Place the cooked wings in a large mixing bowl.
  • Drizzle the wings with olive oil and toss to coat.
  • Season the wings with the basil, garlic, and Parmesan and again toss to coat, making sure they all have an even coating of all the flavorful goodness.

Recipe—Pizza Rolls

For this years Super Bowl I was trying to come up with some fun new recipes and was contemplating making a stromboli. If you don’t know what that is, it is basically a big baked pizza log. Since half our guests this year were kids I thought it might get a little messy. So I decided to slice up my stromboli and make pizza rolls. I just served them up with a warm side of my homemade marinara and they turned out great! The kids had a blast eating them. I won’t lie, they were a hit with the adults too. They were perfect little fun size pizzas! (And who doesn’t like miniature stuff?) If you have kids that like to help out in the kitchen this is a great recipe for them to assist with. Let them help sprinkle on the toppings and roll that bad boy up. Get creative and use your favorite pizza toppings. I just went basic since I had pepperoni on hand. These pizza rolls are a great appetizer to make any time of year. Enjoy!

Note: You can prepare your log a day in advance and keep it in the fridge. Then just pull it out, slice it up, and toss the rolls in the oven for a super quick and easy appetizer. 

INGREDIENTS
1 can refrigerated pizza dough (I like Pillsbury)
1 tsp garlic salt
2 tsp Italian seasoning
2 c mozzarella, shredded
1 cup pepperoni, chopped
marinara, alfredo, or pesto sauce for dipping (optional)

STEPS

  • Preheat oven to 425º.
  • Open pizza dough and roll it out flat, about 1/4 “ thick.
  • Sprinkle with garlic salt, Italian seasoning, cheese, and pepperoni.
  • Starting at the long end roll the pizza dough up tightly to form a log.
  • Carefully wrap the log in saran wrap and place in the freezer for 30 minutes. (It will slice much easier if it is firm.)
  • Cut the log into 1/2”–3/4” thick slices.
  • Place the slices on a lightly greased baking sheet.
  • Bake for 10–12 minutes or until lightly brown on top.
  • Serve with some warm marinara for dipping.

Recipe—Chubby Chicken Taquitos

This is one of the snacks I whipped up for my Super Bowl get together a couple weeks back and they turned out AMAZING! I find many of the store bought taquitos are too much tortilla, not enough meat. That is not the case with these, hence the name chubby chicken taquitos. These things are stuffed with all sorts of delicious flavors. In fact they were so filling I think they would even make an awesome meal. These aren’t spicy in the least so they are great for the whole family. Keep these in mind for a fun dinner or even your next fiesta!

Note: The recipe is written for baked taquitos but I fried half and baked half just to compare. They were equally good but the fried ones had a nice light crisp to them that was wonderful. Feel free to use your preferred cooking method.

INGREDIENTS
3 chicken breasts
3 oz cream cheese, softened
1/3 c green salsa
juice from 1/2 a lime
1/2 tsp cumin
1 tsp chili powder
1/2 tsp onion powder
2 cloves garlic, minced
3 tbsp chopped cilantro
2 tbsp sliced green onions
1 1/2 c jack cheese
10–12 soft taco sized flour tortillas
cooking spray
kosher salt

DIPPING SAUCES
salsa
sour Cream
guacamole

STEPS

  • Bring a large pot of water to a boil and add chicken breasts.
  • Boil chicken breast for 20–25 minutes.
  • While the chicken is boiling, combine the cream cheese, salsa, lime juice, cumin, chili powder, onion powder, and garlic in a large mixing bowl.
  • Stir in the cilantro, green onions, and cheese.
  • Set the filling mixture aside.
  • Remove chicken from pot and place on a large cutting board to cool.
  • Using a large fork shred the chicken breasts to pieces.
  • Preheat oven to 400º.
  • Heat 3–4 tortillas for 30 seconds in the microwave (This makes them soft and easier to work with.)
  • Spoon some of the chicken filling down the center of the tortilla and roll tightly.
  • Place the finished taquitos seam side down on a parchment paper lined baking sheet making sure they don’t touch.
  • Repeat with the remaining tortillas and filling until gone.
  • Spray the tops of the taquitos with cooking spray and sprinkle with salt.
  • Bake for 15–20 minutes or until crisp and golden.
  • Serve with your favorite dipping sauce.
