Recipe—Triple Chocolate Parfait

Last weekend we celebrated the hubby’s 35th birthday. (Happy birthday babe!) I wanted to make him a fabulous dessert but he is not much of a cake guy. You may remember this from last year when I shared a recipe for Snickers Cake. He does however like chocolate so I threw together these triple chocolate jars of goodness and they were a real hit! You have the nice cakey layer from the Oreos, a thick rich chocolate pudding layer, and then the Cool Whip combined with pudding creates a lite and airy chocolate mousse. Layer upon layer of tasty goodness! And I am totally loving desserts in mason jars. One of our guests couldn’t finish hers so we just threw a lid on it and she took it home for later. Super convenient and and so cute!

Note: This recipe will make enough to fill four 12 oz mason jars (pictured) or six 8 oz mason jars. These can be made a full day in advance. The Oreos take on a nice cake like consistency the longer they sit.

INGREDIENTS
5.9 oz box instant chocolate fudge Jell-O pudding
3 1/2 c milk
8 oz container Cool Whip
20 Oreos, crushed

STEPS

  • Prepare instant pudding per package instructions using the milk.
  • Place pudding in fridge and chill for 20 minutes.
  • In a large mixing bowl stir together the container of Cool Whip and about half of the prepared pudding until well combined.
  • Place a heaping spoonful of the crushed Oreos in the bottom of your serving dishes and then top with a couple of tablespoons of the pudding, followed by a couple tablespoons of the Cool Whip mixture.
  • Repeat until the containers are full making sure to finish off with the crumbled Oreos.
  • Chill until ready to serve.

Recipe—Tuscan Tortellini Soup

I saw this recipe a couple of months back for a ravioli soup and knew I had to try it. Well I am never one to really “follow” a recipe so I mixed things up and created a tortellini soup. Tortellini are far less doughy so you have these fabulously light cheese filled pillows floating around in a rich creamy tomato soup and then of course some big hearty chunks of sausage in the mix as well. This soup was phenomenal! My four-year-old son gobbled it up and he is usually kind of weird about soups (I think it is a texture thing). This recipe made a massive pot, which allowed us to have a full dinner and then also freeze a bunch for future meals. Tuscan tortellini soup is perfect for a chilly winter day and is so quick and easy to prepare. I could go for a big bowl of it right now!

INGREDIENTS
2 lb ground Italian sausage
4 tbsp butter
1/2 onion, finely diced
1 tbsp garlic, minced
28 oz can crushed tomatoes
28 oz can petite diced tomatoes
4 c chicken broth
1 tsp salt
1/2 tsp garlic powder
4 c half & half
1 c heavy cream
6 oz bag baby spinach leaves, chopped
18–20 oz fresh four cheese tortellini (I got two 9 oz packages.)
1 c parmesan cheese, shredded
croutons

STEPS

  • Brown the sausage over medium-high heat in a VERY large soup pot.
  • Once the meat is about halfway cooked add the butter, onion, and garlic and cook until the union is soft and transparent.
  • Add the crushed tomatoes, diced tomatoes, chicken stock, and chopped spinach.
  • Bring to a boil and add salt and garlic powder.
  • Boil for 10 minutes making sure to stir frequently.
  • While the soup is boiling cook your tortellini in a separate pot per package instructions and drain.
  • Add the half & half and heavy cream to the pot and simmer for 10 minutes.
  • Stir in the parmesan and cooked tortellini until the cheese is melted.
  • Transfer the soup to a bowl using a ladle.
  • Top with croutons and additional parmesan cheese.

Recipe—Blueberry French Toast Casserole

I run a household that always seems to be full of friends and family who come to visit on the weekends. I absolutely love entertaining and cooking delicious meals for my visitors. What I don’t love is when I’m in the kitchen for hours on end. It means I am missing out on valuable time with them. This is a breakfast dish that is perfect for when you are entertaining, or heck, even if you just want an easy breakfast in the morning for the family. You prepare this in advance before your company even arrives, and then just pull it out and pop it in the oven in the morning. And by make it in advance is that you literally take the ingredients, plop them in a dish (in an orderly fashion of course) and refrigerate. How much more easy could it get? Easy to prep and easy to bake. That is my kind of breakfast!

INGREDIENTS
12 slices French toast bread, cut into 1” cubes
16 oz (2-8 oz blocks) cream cheese, cut into cubes
2 c blueberries
12 eggs
2 c milk
1/2 c syrup
1 tsp vanilla

STEPS

  • Grease a 9” x 13” baking dish.
  • Spread half of the bread cubes into the bottom of the baking dish.
  • Sprinkle about three quarters of the cream cheese cubes over the bread.
  • Sprinkle about three quarters of the blueberries into the dish.
  • Top with remaining bread, cream cheese, and blueberries.
  • In a large bowl, whisk together eggs, milk, syrup, and vanilla.
  • Pour the egg mixture over the entire dish.
  • Using your fingers or the back of a spatula gently press all of the bread pieces down into the egg mixture.
  • Cover the baking dish with foil and place in the fridge 8 hours or overnight.
  • When ready to bake remove the dish from the fridge and allow it to sit on the counter for about 30 minutes.
  • Preheat oven to 350º.
  • Keep the dish covered in foil and bake for 45 minutes.
  • Remove the foil and continue baking until the top is s nice golden brown and the egg mixture is set, about an additional 20–30 minutes.
  • Remove from oven and allow it to cool for 5 minutes.
  • Cut and serve.

Recipe—Chocolate Chip Cookie Dough Cheesecake Bars

As I announced a few weeks back after my break from blogging I started a new job back in August. It’s always a rough transition moving out of your comfort zone into something totally new. New environment. New responsibilities. New coworkers. Eek! It can be kind of nerve racking! Well the way I deal with nerves is food. Yes, I am an emotional eater! So I made a batch of these wonderful delicious bars but I couldn’t bear to eat them all so what did I do, I took them to work to share with my new co-workers. Way to bond and score some points at the new gig, right? Well these were a hit and I apologize that the recipe is 5 months late getting to you. Good news is I am still at my job so I must have made quite the impression with my tasty treats or maybe it’s my mad skills.

Recipe—S’More Snack Mix

S’more snack mix please! Last year I made a Valentine’s Day Snack Mix that was a total hit with my followers and also my little man’s little buddies at school. Well it’s that time of year again and I was trying to come up with something fun. All kids love Teddy Grahams so those were a given ingredient. What goes better with graham crackers than M&M’s and marshmallows? This was a no brainer! I had to make s’more snack mix. This is a perfect treat whether or not it’s Valentine’s Day. I’m thinking I will make a big batch for our next summer camping trip (with traditional M&M’s of course). You can just serve it in a large bowl (perfect for a party) ORRRRR you can make your own Valentine’s Day snack bags to pass out!

Last year I had a couple people contact me requesting that I share my valentine snack bag design so that they could print and make their own. This year I thought I would just go ahead and include it right here on my blog. That’s right! You can download a pdf of the cute cards I designed and print and make your own! How fun is that?!? A special homemade bag of snack mix for the kiddos to share with their friends! You’re welcome.

Recipe—Roasted Carrot Fries

A couple of weeks back we got these GORGEOUS rainbow carrots in our box of organic produce and when my son saw them he honestly didn’t believe me that they were carrots.  They ranged from a deep purple to red and even white. They were just too pretty to get tossed into a salad or cooked any ordinary way. I wanted these to stand on their own. I know I have mentioned in many previous posts that I am always looking for fun and healthy after school snacks for my little man so we decided to make roasted carrot fries. They were awesome! I just sliced, baked, and served them with a little side of ranch (because every 3 year old loves to dip their food in sauce).  These were super quick and a wonderful way to enjoy these rainbow carrots.

INGREDIENTS
4–5 large carrots (I used rainbow carrots)
olive oil for drizzling
salt
ranch for dipping (optional)

STEPS

  • Preheat oven to 425º.
  • Carefully cut the carrots into “fry sized” pieces.
  • Place the carrots on a parchment paper lined baking sheet and drizzle with olive oil.
  • Toss the carrots to coat and season with salt.
  • Bake the carrots for 15–18 minutes or until crisp tender, flipping once halfway through cooking.
  • Remove from oven and transfer to a serving dish or plate.
  • Serve with a side of your favorite dressing or enjoy all on their own.

Recipe—Mushroom and Swiss Cheeseburger Pie

Finding family friendly low-carb recipes can be a struggle. One go to ingredient you can work miracles with are eggs. Yes, the incredible, edible egg! I love that you can mix in practically any ingredients with eggs, throw the mixture in a pie dish and voilá! Dinner is done! Call it a frittata, a quiche, a pie, whatever your heart desires. My son is a cheeseburger fanatic (what 3 year old boy isn’t?) so when I told him we were having a cheeseburger pie for dinner his little blue eyes lit up. (It amazes me that all I have to do to get him to try something new is give it a fun name. Now if only that trick worked with my husband…) When I initially made this it was for dinner, but I will tell you the leftovers make an awesome breakfast too. Who would have thought of throwing all your favorite hamburger toppings right into a pie dish? I will tell you who, this crazy diva!

INGREDIENTS
3/4–1 lb of lean ground beef
1/4 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
1 yellow onion, chopped
2 c slice white mushrooms
6 large eggs
3 tbsp milk
1 1/2 c shredded Swiss cheese

STEPS

  • Preheat oven to 400º.
  • In a large skillet cook the ground beef over medium high heat.
  • When the meat is still a little pink add in the salt, pepper, garlic powder, onion, and mushrooms.
  • Cook until the onions are translucent and meat cooked through.
  • Remove from heat and drain off any excess fat.
  • In a large mixing bowl whisk together the eggs, milk, and 1 cup of the shredded Swiss cheese.
  • Add the cooked meat mixture to the mixing bowl and stir to combine.
  • Transfer the egg mixture to a greased pie dish.
  • Sprinkle the remaining Swiss cheese over the top.
  • Bake for 25–35 minutes or until set and no longer “jiggly” in the middle.
  • Allow to cool for 5 minutes before cutting and serving.

Recipe—Southwest Turkey Meatballs with Creamy Cilantro Lime Sauce

Every couple of months I get together with a fabulous group of ladies for a book club meeting. I don’t know why we really call it a book club meeting because about 20% of the time is spent discussing the book we read and the other 80% is spent drinking fabulous wines, eating delicious foods, and catching up with some good old fashioned girl talk. Maybe wine and food club meeting would be more appropriate? Either way, we always end with an awesome variety of the most wonderful treats. Our last meeting was on a Friday night right around dinnertime so I wanted to bring something filling and yet low carb (I try and cut out carbs from the food when I know I will be consuming plenty in the wine.) These were absolutely wonderful! They were light yet completely filling. The meatballs were packed full of wonderful Mexican flavors and they really complemented the turkey nicely. The refreshing creamy cilantro lime sauce is actually from a recipe I shared a couple months back for shrimp taco cups. I LOVED that sauce and wanted to make it again. I could put that sauce on everything. So tasty!

CREAMY CILANTRO LIME SAUCE INGREDIENTS
1/3 c mayonnaise
1/2 c sour cream
2 tbsp milk
2 oz. canned diced green chilies
2 tbsp lime juice
1/2 tsp ground cumin
1/4 tsp kosher salt
1/4 c fresh cilantro, chopped

MEATBALL INGREDIENTS
1.25 lbs lean ground turkey
1 jalapeño, deseeded, deveined, and chopped
1 tsp garlic, minced
2 green onions, chopped
1/4 c cilantro, chopped
1/4 c panko or breadcrumbs
1 egg
1 tsp cumin
1/4 tsp oregano
salt and pepper

SAUCE STEPS

  • To make the sauce combine all sauce ingredients except the cilantro in a blender and puree until smooth.
  • Add in cilantro and pulse until combined.
  • Refrigerate sauce until ready to use.

MEATBALL STEPS

  • Preheat oven to 400º.
  • In a large bowl combine all meatball ingredients.
  • Using your hands mix well.
  • Using a large spoon, scoop a spoonful of the meat mixture and shape into 1”–1 1/4” round meatballs.
  • Place the formed meatballs into a greased baking dish making sure they don’t touch.
  • Bake for 16–20 minutes.
  • Serve hot with the cool cilantro lime dipping sauce.
  • Enjoy!

Recipe—Chicken Tamale Pie

Chicken Tamale Pie

I’m all for one-pot dinners that are quick, easy, and save me from washing any extra dishes. This dinner is all of the above and it is absolutely delicious. If you love tamales then you will love this recipe. Think tamales, but on steroids. The cornbread has so many wonderful flavors and great texture. And then you get way more meat than you will ever find in some little hand rolled tamale, plus cheese. Glorious cheese! If you have a family that loves all the flavors of Mexican food and you are looking for something new that will save you some time in the kitchen give this recipe a try. You wont regret it!

Del Real Shredded Chicken

Note: I love Del Real products. I frequently use them as a way to save me time in the kitchen. For this recipe I used a package of the Del Real Shredded Chicken. It shaved off prep time and their products are super affordable. You can also purchase a rotisserie chicken, or if you have time just boil 2 chicken breasts for about 20 minutes and shred them yourself.

INGREDIENTS
1/3 c milk
1 egg
1/4 tsp chili powder
14.75 oz creamed corn
8.5 oz package of Jiffy corn muffin mix
4 oz can diced green chilies, drained

2 c chicken, cooked and shredded
1 1/2 tbsp taco seasoning
1 c pepper jack cheese, shredded
2 tbsp fresh cilantro, chopped
2 tbsp Cotija cheese, crumbled

STEPS

  • Preheat oven to 400º.
  • Combine milk, egg, chili powder, creamed corn, Jiffy, and green chilies in a medium mixing bowl and stir just until combined.
  • Pour the cornbread mix into a greased pie dish.
  • Bake the cornbread for 23–28 minutes or until it is just cooked through and golden on top.
  • While the cornbread is baking toss the shredded chicken with the taco seasoning and 1/3 cup of the enchilada sauce.
  • Using a fork, poke a liberal amount of holes into the cornbread.
  • Pour the remaining enchilada sauce over the top of the baked cornbread.
  • Add the seasoned shredded chicken to the top of the cornbread spreading it around evenly.
  • Sprinkle the shredded pepper jack cheese over the top of the chicken.

Recipe—Bacon Jalapeño Poppers Wrapped in Puff Pastry

Bacon Jalapeño Poppers Wrapped in Puff Pastry

Any recipe that has bacon, cheese, and jalapeños is a home run in my book. Wrap that up in a flaky delicate layer of puff pastry and it is a grand slam baby! These look like they would be heavy because they are good sized but the puff pastry is actually really light. These are the perfect appetizers for any occasion. The puff pastry takes what is an average appetizer and glamorizes them. Delicate enough for girl’s night in or macho enough for a guy’s night of watching sports. Either way, everyone will love them!

Bacon Jalapeño Poppers Wrapped in Puff Pastry

INGREDIENTS
9 jalapeños, halved lengthwise, deseeded, and deveined
1 package puff pastry (2 sheets), thawed
8 oz cream cheese softened
1/2 c bacon, cooked and chopped
1 c cheddar cheese, shredded
2 tsp garlic, minced
salt and pepper
1 egg
1 tbsp water

STEPS

  • Preheat oven to 400º.
  • In a medium-mixing bowl combine the cream cheese, bacon, cheddar cheese, garlic, and some salt and pepper.
  • Stuff each pepper half with a heaping mound of the cheese filling and set aside.
  • Unfold the thawed puff pastry and cut each sheet into 9 squares.
  • Wrap each stuffed pepper in one of the pastry squares and place on a parchment paper lined baking sheet as you finish them, making sure they are about an inch apart.
  • Whisk together the egg and water and brush the egg wash over the top of each popper.
  • Bake for 20 minutes or until the poppers are golden brown on top.
  • Allow to cool for 5 minutes before serving.
