Recipe—Bruschetta Chicken

Tomatoes and basil are like an Italian match made in heaven. You can almost guarantee that anything made with those two ingredients will be amazing. One of my favorite ways to bring them together is in a classic bruschetta made up of tomatoes, basil, garlic, and olive oil. So simple but so damn good! Now imagine that fresh bruschetta spooned over a juicy chicken breast smothered in zesty pesto and a layer of melted mozzarella cheese. That my friends, is one hell of a tasty main dish for dinner.

I like to just eat this chicken on it’s own but with the carb monsters I live with, I tend to serve it for them with a side of rice pilaf or over a bed of pasta alfredo. This recipe is so easy to put together, but it looks fancy enough, that you can totally serve it for dinner guests.

BAKED CHICKEN INGREDIENTS
3–4 boneless skinless chicken breast
salt & pepper
1 c pesto
2 c mozzarella, shredded

BRUSCHETTA INGREDIENTS
2 large ripe tomatoes, diced
8–10 basil leaves, chopped
1 tsp garlic, minced
2 tbsp extra virgin olive oil
salt & pepper

STEPS

  • Preheat the oven to 400º.
  • Place the chicken breasts in a lightly greased baking dish and season both sides with salt and pepper.
  • Spread the pesto over the tops of the chicken breasts and sprinkle with the mozzarella cheese.
  • Place the baking dish in the oven and bake for about 25 minutes or until the chicken is cooked completely through and mozzarella is just starting to brown up.
  • While the chicken is cooking, combine all the bruschetta ingredients in a medium bowl and stir to combine.
  • When the chicken is done cooking, transfer them to a plate and finish with a big scoop of that fresh bruschetta.

Recipe—Salsa Fresca

Last year in my garden we were harvesting more tomatoes than we knew what to do with! We were having Panzanella Salad and Marinated Tomatoes almost every week. Once my jalapenos came in, I was all about that fresh salsa! Who doesn’t love that fresh salsa flavor!? Store bought salsa just does not compare.

This recipe is pretty much goof proof. You just add all the ingredients to the blender and blend. Yes, it really is that simple!

Just serve up with a side of some crispy salty tortilla chips or along with your favorite tacos or burritos.

Note: If you over blend your salsa, it can become sort of frothy. If this happens, just cover and store in the fridge for a couple of hours and it should settle. Fresh salsa can last in the fridge covered for up to two weeks. The flavors get better and better with time.

INGREDIENTS
1/4 white onion
2 tsp garlic, minced
1 jalapeno
4–6 medium sized tomatoes
1/4 tsp salt
1/4 tsp ground cumin
1/2 c fresh cilantro leaves
juice from 1 lime
pinch of sugar (optional, to balance the acidity of the tomatoes)

STEPS

  • Add the onion, garlic, and jalapeno to a food processor or blender and pulse a few times to chop.
  • Add all the remaining ingredients to the blender and blend to desired consistency.
  • Refrigerate for 30 minutes to allow the flavors to really come together. (Optional)

This salsa goes great with the following recipes:

Recipe—Summertime Marinated Tomatoes

Summertime Marinated Tomatoes

Summertime means my garden is going nuts and producing more tomatoes than we can get through in a day. No joke. I am sometimes getting 4–5 huge ripe tomatoes a day! I love it! You just can’t beat the smell and flavor of a tomato that has been able to fully ripen on the vine. Even if you go to the grocery store or farmers market, the smell of fresh tomatoes wafts through the air. That is the smell of summer!

The other day I was looking at a pile of 10–12 tomatoes on the counter that needed to be eaten within the day and I knew just what to do with them. Marinade them! The marinade for this recipe is out of this world! The red wine vinegar really brings out the flavors of the tomatoes and then you get all these great flavors from the fresh herbs and garlic. I mean seriously, just look at that layer of herbs over the top of the tomatoes!

Summertime Marinated Tomatoes

These make for a great side dish with some grilled meat or even as a salad. I served it with some garlic bread and it was so good to soak up all those yummy tomato juices, olive oil, and vinegar with the bread. This recipe is for sure a summertime staple as it is so easy to make and I am all about cooking with what is in season.

Notes:

  • The key to this recipe is making sure to marinade the tomatoes at room temperature for at the very least 2 hours. You MUST let them marinade! The tomatoes need time to soak up all the red wine and herb flavors.
  • Do not refrigerate as the texture and natural flavor of the tomatoes will change.
  • Consume within 6–8 hours of marinating.
  • If you want to prepare in advance, just make the marinade ahead of time and store in a jar in your refrigerator until 3 hours before you plan to serve. Then pour the chilled marinade over the tomatoes.

INGREDIENTS
5 or 6 extra-large tomatoes, cut into 1/2″ slices
2/3 c extra-virgin olive oil
1/2 c red wine vinegar
4 tbsp red onion, minced
2 tbsp garlic, minced
2 tbsp parsley, chopped
2 tbsp basil, chopped
2 tsp kosher salt
1/2 tsp black pepper

STEPS

  • Arrange the sliced tomatoes in a shallow serving dish.
  • Combine all the remaining ingredients and mix to combine.
  • Pour the marinade over the tomatoes.
  • Cover the dish with a lid or saran wrap.
  • Allow the tomatoes to rest/marinade at room temperature for 2–3 hours.
  • Enjoy!

Recipe—Panzanella Salad

Panzanella Salad

Panzanella salad is essentially just an Italian tomato and bread salad. This is one of my all-time favorite summertime dishes. It is so easy and comes together in minutes. You can make this with pretty much any tomatoes, just make sure they are juicy and ripe. Heirloom are always a good safe bet. Traditional panzanella salads don’t have mozzarella but I am a girl who LOVES her cheese. Call me a rebel. This salad is all about taking simple ingredients and bringing them together to create a fresh and flavorful dish perfect for those warm spring and summer nights out on the patio.

Note: This salad pairs perfectly with grilled steak and some red wine. My favorite is the Rombauer Vineyards Barbera.

INGREDIENTS

4 c tomatoes, chopped
1/2 c fresh basil, chopped
1/4 c shallots, thinly sliced
8 oz mini mozzarella balls
4 tbsp butter
1 tsp garlic, minced
4 c sour dough bread, cut into cubes
1 tbsp olive oil
balsamic glaze
salt and pepper

STEPS

  • Place your chopped tomatoes, basil, shallots, and mozzarella balls in a large bowl.
  • Melt the butter in a large skillet over medium high heat and add garlic cooking until the garlic is nice and fragrant.
  • Add the bread cubes to the skillet and toss to coat in the melted garlic butter.
  • Toast the bread cubes on all sides until they are golden and crispy on the outside.
  • Add the toasted bread cubes to the bowl.
  • Toss the “salad” and season with salt and pepper.
  • Drizzle with a little extra olive oil and finish with some balsamic glaze.
  • Serve and enjoy!

Recipe—Italian Chicken Dinner

If you have tried this recipe before you may have noticed an update. After making this recipe dozens of times I recently started adding Italian sweet peppers and it really takes this to the next level. I have updated the photo and recipe to reflect this change. Hope you enjoy!

Recipe—Italian Chicken Dinner

I first tried this recipe about two months ago and have since made it at least 6 times tweaking it a little bit each time. IT HAS BECOME ONE OF MY ALL TIME FAVES! We are actually having it again this week. It is perfect for this summer fully utilizing all those fresh tomatoes and basil. Most of my recipes are for a main dish or a side dish but this one is actually an entire meal. All of the components of this dish are just amazing! You have a flavorful juicy roasted chicken breast, sweet caramelized tomatoes that are literally bursting with flavor, and then the salty creamy fresh mozzarella with a nice little kick of heat from crushed red peppers, and then of course to balance it out you have some hearty brown rice simmered in chicken broth. Is your mouth watering now? Mine is! All these flavors are just so amazing together! Depending on the brown rice you get, this dinner takes about 45 minutes from start to finish and it is worth every minute of it!

Note: You can use fresh mozzarella in any form. I have used both the sliced mozzarella log as well as the little mozzarella balls. This makes a dinner that will serve 3–4 people.

INGREDIENTS
1 c uncooked brown rice
2–2 1/2 c chicken broth (amount depends on the brown rice you purchase)
3 c cherry tomatoes
10–12 Italian sweet peppers, tops cut off
olive oil
balsamic vinegar
1 lb boneless skinless chicken breasts
Italian seasoning
salt & pepper
8 oz fresh mozzarella, sliced
1/4 tsp red pepper flakes
1/2 c fresh basil leaves, chopped

STEPS

  • Cook the brown rice per the package instructions but substitute chicken broth for water.
  • While the rice is cooking preheat the oven to 400º.
  • Place the cherry tomatoes and peppers in a large baking dish and drizzle with olive oil and balsamic vinegar. Toss to coat.
  • Season both sides of the chicken breasts with Italian seasoning, salt, and pepper and place in the baking dish.
  • Bake the tomatoes, peppers, and chicken for about 25 minutes or until the tomatoes have just started to burst and the chicken is done.
  • While the rice, chicken, and tomatoes are cooking prepare the mozzarella.
  • Place the mozzarella in a small bowl and drizzle with olive oil and sprinkle with red pepper flakes and salt.
  • Once all the components of the dish are ready, plate the rice, chicken, blistered tomatoes, peppers, mozzarella, and top with chopped basil.

Recipe—Crock-Pot Green Chicken Chili

A while back I had plans with my aunt to come over for dinner on a Friday night. She wanted to make a special request for dinner and had asked me to make a chicken chili. Since I had to work that day I figured something in the crock-pot would be ideal. Less time slaving in the kitchen, meant more time for drinking wine and schmoozing. Besides chopping up the veggies this recipe really requires almost no prep. I found a few different recipes and merged them all together to make this one delicious one. You might look at the ingredients and go “Oh boy, that is gonna be spicy!” I promise you it is not. If you deseed and devein the jalapeños you get a real nice mild and tangy flavor. The big chunks of chicken, all those green veggies, white beans, and spices make for one delicious belly warming meal. I highly recommend serving this with some cheese quesadilla wedges or cornbread to round out dinner. It was a total hit in my household. So if you are doing your meal prep for next week be sure to add this recipe to your menu.

Note: When I made this recipe, I chopped up the tomatillos, chiles, jalapeños, onion, and garlic and put them all in a one gallon Ziploc bag the night before to save time the next morning. It literally took me about two minutes to throw it all in the crock-pot.

INGREDIENTS
2 (15 oz) cans cannellini beans, drained
3 boneless skinless chicken breasts
4 c tomatillos, chopped
4 anaheim chiles, seeded and chopped
3 jalapeños, seeded, deveined, and chopped
1 medium yellow onion, chopped
2 tbsp garlic, minced
1 tbsp cumin
2 tsp oregano
1 tsp coriander
4 c chicken broth
1/3 c masa harina
1 tsp kosher salt
1/4 tsp coarsely ground black pepper
lime

GARNISHES
shredded cheese
sour cream
green onions, chopped
lime wedges

STEPS

  • In a large crock-pot combine the beans, chicken breasts, tomatillos, anaheim chiles, jalapeños, onion, garlic, cumin, oregano, coriander and broth to the slow cooker. (Do not stir)
  • Cover and cook on low for 8 hours or high for 4 hours.
Remove the chicken breasts, shred, and put back in the pot.
  • Add in the masa harina, salt, pepper, and the juice of one lime and stir.
  • Continue cooking for another 30 minutes.
  • Serve in a bowl and top with garnishes of your choice.

Recipe—Fiesta Salad

When most people think of salads they think of a big pile of greens topped with a handful of other veggies and dressing. Well this is not your ordinary salad. It consists of avocados, tomato, cilantro, and a sweet onion all tossed in a lime olive oil dressing. No lettuce here! I always make this with my Rio Grande Spice Rub New York Steaks and Cornbread Muffins. Seriously amazing! I also love this recipe with a nice piece of grilled fish. This simple salad is made up of fresh summer ingredients and is so light, and refreshing. Perfect for those nights you want a quick and easy side dish but just don’t want to fire up the oven.

Note: Since avocados can become mushy and brown quickly, wait to add the avocadoes until right before serving.

INGREDIENTS
2 c cherry tomatoes, cut in half OR 2 large tomatoes, chopped
1/2 sweet onion, chopped
1/4 c cilantro, chopped
kosher salt to taste
1/4 c olive oil
1/4 c lime juice
2 avocados, chopped (see note above)

STEPS

  • In a medium bowl combine the tomatoes, onion, cilantro, salt, olive oil, and lime juice. Toss to combine.
  • Add the avocado last and gently stir it in.

Recipe—Tuscan Tortellini Soup

I saw this recipe a couple of months back for a ravioli soup and knew I had to try it. Well I am never one to really “follow” a recipe so I mixed things up and created a tortellini soup. Tortellini are far less doughy so you have these fabulously light cheese filled pillows floating around in a rich creamy tomato soup and then of course some big hearty chunks of sausage in the mix as well. This soup was phenomenal! My four-year-old son gobbled it up and he is usually kind of weird about soups (I think it is a texture thing). This recipe made a massive pot, which allowed us to have a full dinner and then also freeze a bunch for future meals. Tuscan tortellini soup is perfect for a chilly winter day and is so quick and easy to prepare. I could go for a big bowl of it right now!

INGREDIENTS
2 lb ground Italian sausage
4 tbsp butter
1/2 onion, finely diced
1 tbsp garlic, minced
28 oz can crushed tomatoes
28 oz can petite diced tomatoes
4 c chicken broth
1 tsp salt
1/2 tsp garlic powder
4 c half & half
1 c heavy cream
6 oz bag baby spinach leaves, chopped
18–20 oz fresh four cheese tortellini (I got two 9 oz packages.)
1 c parmesan cheese, shredded
croutons

STEPS

  • Brown the sausage over medium-high heat in a VERY large soup pot.
  • Once the meat is about halfway cooked add the butter, onion, and garlic and cook until the union is soft and transparent.
  • Add the crushed tomatoes, diced tomatoes, chicken stock, and chopped spinach.
  • Bring to a boil and add salt and garlic powder.
  • Boil for 10 minutes making sure to stir frequently.
  • While the soup is boiling cook your tortellini in a separate pot per package instructions and drain.
  • Add the half & half and heavy cream to the pot and simmer for 10 minutes.
  • Stir in the parmesan and cooked tortellini until the cheese is melted.
  • Transfer the soup to a bowl using a ladle.
  • Top with croutons and additional parmesan cheese.

Recipe—Italian Pasta Salad

Italian Pasta Salad

My husband and I grew up in a very small town so on the weekends it was not out of the norm for us to drive an hour to go to the closest mall or to go find some entertainment outside of town. On our way back home we frequently passed this wonderful little Italian deli. They had the BEST sandwiches and side salads. One of the side salads, which my husband absolutely loved, was their Italian pasta salad. I did my best to recreate this salad just for him. This makes a party sized batch, so if you are just making it for the family I recommend halving it. This is a perfect salad for a bbq or potluck and is sure to be a hit with all partygoers.

Note: This pasta salad will last approximately 4 days in the fridge. It gets better each and every day as the Italian dressing soaks into the pasta and veggies.

INGREDIENTS
1 lb rotini noodles
2 tbsp salt
1 1/2 c Newman’s Family Recipe Italian dressing
2 tsp garlic, minced
1/2 c red bell pepper, chopped
1/2 c red onion, chopped
1/2 c celery, sliced
2-6 oz jars artichoke hearts. drained
1 1/2 c cherry tomatoes, cut in half
1 c mozzarella cheese, cut into squares
2.25 oz can black olives, sliced
salt and pepper

STEPS

  • Bring a large pot of water and the 2 tbsp of salt to a boil.
  • Add noodles and cook per package instructions.
  • Drain the cooked pasta and rinse with cold water.
  • Transfer the cooked pasta to a large bow.
  • Add the Italian dressing, garlic, red bell pepper, red onion, celery, artichoke hearts, cherry tomatoes, mozzarella, and olives.
  • Stir to combine.
  • Season with additional salt and pepper if desired.
  • Refrigerate the pasta for 3 or more hours.  The longer the better.
  • Stir well before serving.

Recipe—Orzo Pesto Pasta

In my office we all have a habit of bringing in various treats to share with each other throughout the year. (I know rough environment to be working in right?) Several years back we had an awesome (student assistant named Sarah. One day Sarah brought in this incredible orzo pesto pasta salad. I was in love! (With both Sarah and her pasta. Sarah was awesome.) She made her own pesto from scratch and I will not lie, I was impressed. This is the perfect summer salad. You have the seasonally fresh tomatoes and zucchini mixed with tangy vinegar and pesto giving it a wonderfully light and refreshing flavor. I make it several times of year and whenever I am generous enough to share with my friends I am asked for the recipe. It is definitely a favorite in our household. My son was even eating it by the bowlful when he was 1 1/2 years old. If you are looking for a tasty recipe for any summer cookouts or BBQs then search no further. This is perfect. While that little box of orzo may not look like much, it expands a great deal so this makes a very decent sized bowl of the tasty pasta salad.

Note: I save a couple of tablespoons of the feta and pine nuts to garnish the top of the salad with.

INGREDIENTS
1 lb box of orzo pasta, uncooked
1 tbsp olive oil
2 medium zucchini, cut into quarters lengthwise and then sliced
salt and pepper
4 oz feta cheese crumbles (see above note)
2 c pesto (make your own or get some from the market to save time)
3/4 c white vinegar
2 c cherry tomatoes, cut in half
1/2 c pine nuts

STEPS

  • Cook orzo pasta per package instructions.
  • While the orzo is cooking, heat olive oil in a small skillet over medium high heat.
  • Add zucchini and season with salt and pepper.
  • Cook the zucchini for 3–4 minutes just slightly cooking it and then remove from heat.
  • Drain the orzo and place in a large mixing bowl.
  • Add the feta and pesto stirring to combine.
  • Drizzle the vinegar while stirring.
  • Stir in the cooked zucchini, tomatoes, and pine nuts.
  • Transfer to a serving bowl and garnish with extra feta and pine nuts if you saved any.
  • Refrigerate for at least 2–3 hours before serving.
