Recipe—Roasted Fennel Fries

Awhile back I posted a recipe for kale chips. Kale chips are a delicious and healthy snack that my son absolutely loved. I was eager to find more recipes that were just as simple, tasty, and nutritious. I recently used the same seasoning and cooking technique with roasted fennel and had fabulous results. These roasted fennel fries were absolutely addicting. My son and I could not stop eating them! We didn’t even waste time getting out a plate. I kid you not, we were eating the pieces straight off the baking sheet. They were that good! Think french fries, but without the calories and even more flavorful. Roasted fennel fries are not only a great snack but they also make a great side dish for any dinner. Just be sure you make enough because these fries will go fast!

INGREDIENTS

2 large fennel bulbs, fronds removed and sliced into 1/3” thick pieces
1 tbsp olive oil
salt and pepper

STEPS

  • Preheat oven to 375º.
  • Cover a large baking sheet with parchment paper and place the fennel slices in a single layer.
  • Drizzle with olive oil and season with salt and pepper.
  • Place in the oven and cook for 30–45 minutes flipping once halfway through.
  • Bake until the fennel is fork tender and a golden brown.

Recipe—Chocolate Covered Peanut Butter Truffles

This recipe is definitely an oldie and a goodie. The first time I made these was over 20 years ago when I was a Brownie. We made little boxes of these for our moms for Mother’s Day. (My mom was our troop leader so this is actually her recipe.) These are great for any occasion as individual truffles but you can also have fun with various shapes. Occasionally on Easter, my mom would make us homemade peanut butter eggs. I actually did that this Easter for my son’s teachers.

These are super easy to make and they blow Reese’s out of the water! Come on, you know anything with peanut butter and chocolate is going to be delicious. It is a fun and easy recipe to make, so get the kids involved. What kid doesn’t like to get in the kitchen and use their hands? I hope you and your family love these as much as mine.

Note: Finished truffles should be stored in the refrigerator or freezer. My hubby thinks they are best when frozen.

INGREDIENTS

1 1/2 c creamy peanut butter
4 tbsp butter, softened and divided
3 tbsp light corn syrup
1 tsp vanilla
4 tbsp heavy whipping cream
1 lb powdered sugar
24 oz bag of semi sweet chocolate chips

STEPS

  • In a large mixing bowl beat together the peanut butter, 2 tablespoons of the butter, corn syrup, vanilla, and whipping cream until well incorporated.
  • Add the powdered sugar to the bowl, and using your hands mix until everything is completely incorporated.
  • Pinch off bite size pieces and roll into balls. As you finish the balls place them on a wax paper lined baking sheet.
  • Place the baking sheet in the freezer for at least 30 minutes.
  • Once the balls are frozen, in a medium microwave safe bowl combine the chocolate chips, the remaining 2 tablespoons of butter, and 2 tbsp of water.
  • Microwave the chocolate for 1 minute.
  • Remove the chocolate from the microwave and beat with a fork. If there are still chunks, continue microwaving and stirring in 30 second increments.
  • Once your chocolate is smooth allow it to sit on the counter for a minute.
  • Dip each frozen ball into the melted chocolate and turn until evenly coated and place back on the wax paper covered baking sheet. (I find using a fork works great to remove the balls from the melted wafers so that the extra chocolate can drip off between the prongs.)
  • Once you have finished dipping all the balls place the baking sheet back in the freezer so that the chocolate can set.
  • Enjoy!

Recipe—Chicken Cordon Bleu Rollups

My son loves chicken strips dipped in honey mustard and he also loves croissants. (Who doesn’t, really?) I whole-heartedly made this for him because I knew it would be a hit with the munchkin. Turns out the whole family loved them! This recipe is so simple, quick, and cheap to make. My little guy was even a wonderful helper in assembling them, and of course he made sure to be on quality control check while we were putting them together. Little rascal. I just served these with a big green salad for a balanced dinner. We had plenty of leftovers and they reheated extremely well in the oven. I’m definitely keeping these in mind for appetizers too. They were a perfect finger food and were fun to eat and make!

INGREDIENTS
1/4 c honey
1/4 c yellow mustard
1/8 c mayonnaise
1 lb chicken breast tenders
1 tbsp butter
2 cans crescent rolls
8 slices Swiss cheese, cut in half
8 slices ham cut in half lengthwise

STEPS

  • Combine together honey, mustard, and mayonnaise in a small bowl or measuring cup.
  • Place the chicken tenders in a large Ziploc bag and add in 1/2 of the honey mustard sauce and toss to coat.
  • Melt the butter in a large skillet over medium-high heat and cook the saucy chicken breast tenders flipping once until done, about 10–12 minutes.
  • Separate the crescent rolls into the individual triangles.
  • Spread the remaining honey mustard on each one.
  • Place a slice of the Swiss cheese on each crescent triangle and then top with a slice of ham folded in half.
  • Top each with a cooked breast tender.
  • Roll up the crescent starting at the wide end and place on a baking sheet covered in parchment paper. (The parchment paper helps make cleaning up the melted cheese a breeze!)
  • Repeat with remaining chicken tenders and crescents.
  • Bake for 18–20 minutes or until golden brown.

Recipe—Garlic Parmesan Wings

Recipe—Garlic Parmesan WingsSo I am totally on a low carb kick right now. I am determined to loose this extra weight in preparation for summer and just to feel better overall. A lot of people ask me, “How can you do low carb? Don’t you miss all the good stuff?” My response is, “Uhhh…NO!” One of the reasons I love low carb is that you still get to eat really good food. Look at these garlic Parmesan wings, NO CARBS! Zero! Zilch! And while they are short on carbs they are most certainly not short on flavor. I actually made these for a party last weekend and they were a hit! When I told my husband what I was making for the party he told me he probably wouldn’t eat any. Well, guess who was standing over the kitchen sink chowing down on these wings? He just could not resist them. They smelled so incredibly good! And tasted just as scrumptious. I highly recommend these wings even if you aren’t watching your carbohydrates. They were super easy to make and a real crowd pleaser. By the end of the night several people had asked for the recipe. That my friends, is a very good sign.

INGREDIENTS
2 tsp dried oregano
2 tsp dried rosemary, chopped
2 tsp kosher salt
1 tsp dried cumin
3 lbs chicken wings & drumsticks
4 tbsp olive oil (I used some roasted garlic flavored that I had on hand. Delish!)
2 tbsp dried basil
2 tbsp garlic, minced
1/2 c Parmesan cheese, finely grated

STEPS

  • Preheat oven to 425º.
  • In a small bowl combine oregano, rosemary, salt, and cumin. Stir to combine.
  • Place the wings in a large bowl and sprinkle with the seasoning mixture. Toss to coat.
  • Place all the wings in a single layer in a baking dish.
  • Bake for 23–27 minutes or until the wings just start to turn a golden brown.
  • Place the cooked wings in a large mixing bowl.
  • Drizzle the wings with olive oil and toss to coat.
  • Season the wings with the basil, garlic, and Parmesan and again toss to coat, making sure they all have an even coating of all the flavorful goodness.

Recipe—Pizza Rolls

For this years Super Bowl I was trying to come up with some fun new recipes and was contemplating making a stromboli. If you don’t know what that is, it is basically a big baked pizza log. Since half our guests this year were kids I thought it might get a little messy. So I decided to slice up my stromboli and make pizza rolls. I just served them up with a warm side of my homemade marinara and they turned out great! The kids had a blast eating them. I won’t lie, they were a hit with the adults too. They were perfect little fun size pizzas! (And who doesn’t like miniature stuff?) If you have kids that like to help out in the kitchen this is a great recipe for them to assist with. Let them help sprinkle on the toppings and roll that bad boy up. Get creative and use your favorite pizza toppings. I just went basic since I had pepperoni on hand. These pizza rolls are a great appetizer to make any time of year. Enjoy!

Note: You can prepare your log a day in advance and keep it in the fridge. Then just pull it out, slice it up, and toss the rolls in the oven for a super quick and easy appetizer.

INGREDIENTS
1 can refrigerated pizza dough (I like Pillsbury)
1 tsp garlic salt
2 tsp Italian seasoning
2 c mozzarella, shredded
1 cup pepperoni, chopped
marinara, alfredo, or pesto sauce for dipping (optional)

STEPS

  • Preheat oven to 425º.
  • Open pizza dough and roll it out flat, about 1/4 “ thick.
  • Sprinkle with garlic salt, Italian seasoning, cheese, and pepperoni.
  • Starting at the long end roll the pizza dough up tightly to form a log.
  • Carefully wrap the log in saran wrap and place in the freezer for 30 minutes. (It will slice much easier if it is firm.)
  • Cut the log into 1/2”–3/4” thick slices.
  • Place the slices on a lightly greased baking sheet.
  • Bake for 10–12 minutes or until lightly brown on top.
  • Serve with some warm marinara for dipping.

Recipe—Homemade Marshmallows

divadicucina_marshmallows

I was trying to come up with a cute idea for a Christmas gift for my son’s teachers and came up with the idea of making hot cocoa gift baskets. You know, a mug, some hot cocoa, some homemade cookies, and marshmallows. Well I am never the person to take the easy way out by just buying an actual bag of jet puffed marshmallows at the store, I wanted these gift baskets to be special, made from the heart. So I decided to attempt to make my very own marshmallows. Gourmet marshmallows seem to be all the rage this season but unfortunately they can cost a fortune. With this recipe you can make your own at home. They are a little bit of work, and one might by intimidated, but they are actually easy. I think the hardest part was waiting for them to set! These homemade marshmallows put store bought marshmallows to shame and are so totally worth making on your own. If making your own marshmallows isn’t on your bucket list it should be. Give these a shot. They will take your hot cocoa on a cold winter night over the top!

divadicucina_hotcocoa

Note: The original recipe I followed called for using a stand up mixer but I used a hand mixer. You can use either. The marshmallows can be very sticky and difficult to handle so the trick to cutting them is to constantly coat them in powdered sugar after every slice of the knife.

INGREDIENTS
3 c sugar
1 1/4 c light corn syrup
water
4 envelopes Knox unflavored gelatin
1/2 tsp salt
1 tbsp vanilla extract
1 c powdered sugar

STEPS

  • Combine sugar, corn syrup, and 3/4 cup water in a large saucepan and bring to a boil over medium-high heat.
  • While sugar water is heating up add 3/4 cup water to a large mixing bowl and sprinkle the 4 packs of gelatin over the top. Set aside.
  • Bring the sugar water mixture to a rolling boil and boil for 5 minutes or until a candy thermometer reads 235º.
  • Carefully pour the hot sugar water into your mixing bowl with the water and gelatin and mix on low.
  • Add the salt and increase mixer speed to high.
  • Beat the sugar mixture on high for 5 minutes and than add vanilla.
  • Continue beating the mixture for another 5 minutes.
  • When you are done, pour the marshmallow cream into a greased 9” x 13” pan.
  • Smooth the top and gently tap to release air.
  • Leave the dish on the counter for at least 10 hours.
  • After the waiting is up sprinkle the entire top of your marshmallows with powdered sugar making sure it’s coated and place a cutting board over the top of your dish.
  • While holding the cutting board and dish together carefully flip the dish and cutting board upside down simultaneously releasing the marshmallows onto the cutting board. (Your set marshmallows will now be upside down on the cutting board.)
  • Lift the baking dish and sprinkle all of the exposed marshmallow with powdered sugar making sure there are no exposed areas.
  • Using a large sharp knife cut into 1” strips and coat each exposed side with powdered sugar.
  • Cut those strips into 1” cubes making sure you coat each cut side with powdered sugar.
  • Once done, sprinkle all of the marshmallows with the remaining powdered sugar making sure there are no exposed sticky areas.
  • Enjoy in a big mug of hot cocoa!

Recipe—Caramel Apple Cheesecake Bars

Talk about a match made in heaven! Two classic American desserts coming together to make one heck of a fabulous and indulgent dish. This delicious recipe is perfect for all the holiday social events this time of year. I recently made it for my office party and it was a hit. I cut the squares pretty small so that they were easy to handle and could be eaten as a finger food. This reminds me a lot of Dutch apple pie á la mode. You have the crisp topping drizzled with syrupy caramel, the soft spiced apples, and the creamy sweet cheesecake layer all over a buttery crust. This is a great recipe to keep in mind come Christmas since you can prepare it a day or two in advance giving you some extra time with your guests on Christmas day. Hope you enjoy it as much as I did!

CRUST INGREDIENTS
2 c flour
½ c brown sugar
1 c butter, softened
½ tsp cinnamon

CHEESECAKE FILLING INGREDIENTS
3-8 oz packages cream cheese
3/4 c sugar
3 eggs
1 1/2 tsp vanilla

APPLE LAYER INGREDIENTS
3 apples peeled, cored, and finely chopped
3 tbsp sugar
½ tsp cinnamon
¼ tsp nutmeg

STREUSEL TOPPING INGREDIENTS
1 c brown sugar
1 c flour
½ c oats
½ c butter, softened
1 c caramel topping

STEPS

  • Preheat oven to 350º.
  • In a mixing bowl combine the flour, brown sugar, butter, and cinnamon and mix with your hands until crumbly.
  • Line a 9” x 13” baking dish with foil making sure to go up the sides. (The helps you to easily remove the final cheesecake from the dish making it a breeze for cutting into bars.)
  • Press the crumbly mixture into the bottom of the lined pan making sure it is an even thickness.
  • Bake crust for 15 minutes.
  • In a large mixing bowl use an electric mixer to beat together the cream cheese, sugar, eggs, and vanilla until smooth.
  • Pour the cream cheese mixture over the warm crust and using a rubber spatula carefully spread it so that it is an even layer.
  • In a small bowl stir together all the apple layer ingredients.
  • Sprinkle the apples over the cream cheese layer.
  • In a small bowl combine the streusel ingredients and using your hands mix until crumbly.
  • Sprinkle the streusel over the apple layer.
  • Bake for 40–45 minutes.
  • Allow the cheesecake to cool and then drizzle with the caramel sauce.
  • Once cheesecake is room temperature store in the refrigerator until ready to serve.
  • To serve, carefully lift the finished cheesecake from the pan by holding the edges of the foil.
  • Transfer to a large cutting board and cut into bars.
  • Serve cold.

Recipe—Buffalo Cauliflower Bites

I am a girl who loves her boneless buffalo wings, just not all the calories that come with the batter fried chicken. This is a fabulous adaptation of the classic American appetizer. My husband isn’t really a fan of buffalo chicken but he really enjoyed these to my surprise. To be honest, the two of us finished off the entire batch over some Sunday football and I was guilt free! This is a really great appetizer that is not only quick but incredibly easy. Enjoy!

INGREDIENTS
1 head of cauliflower, cut into bite size pieces
1/2 c buttermilk
1/2 c flour
1 tsp garlic salt
1/2 c buffalo sauce (I love Frank’s Red Hot Buffalo Wings Sauce!)
1 tbsp butter, melted

GARNISHES
bleu cheese dressing
celery and/or carrots

STEPS

  • Preheat oven to 350º.
  • In a large bowl whisk together buttermilk, flour, and garlic salt until smooth. (If the batter seems too thick add more buttermilk a tablespoon at a time. You want it to be slightly thick so that it sticks to the cauliflower. If it is too runny the batter will all drip off while baking.)
  • Place the cauliflower into the bowl of batter and gently toss to coat.
  • Spread the battered cauliflower out on a greased baking dish making sure to shake off any excess batter.
  • Bake for 20–25 minutes turning once until some of the edges turn a nice golden color.
  • While the cauliflower is baking combine the buffalo sauce and melted butter in a small bowl.
  • Remove the cauliflower from the oven and drizzle the buffalo sauce mixture over the top and toss to coat.
  • Return the cauliflower to the oven and bake for an additional 5–10 minutes.
  • Remove the finished cauliflower from the oven and plate with some fresh veggies and a side of bleu cheese dressing.

Note (added 01/13/14): Many people have asked about the texture. The batter becomes more like a soft breading on the outside rather than crispy. To get a crispy texture try frying the battered cauliflower. And be sure to shake of excess batter as you place it on the baking sheet so that the cauliflower is lightly coated.

Recipe—Shrimp Taco Cups with Creamy Cilantro Lime Sauce

The other night we were going to a friend’s house for a Mexican feast and I was put on appetizer duty. I wanted something besides plain ol’ bean dip that I could make ahead of time and assemble there, something light, refreshing, and elegant with a Mexican flare. These bite size shrimp taco cups were perfect! I must admit the sauce totally makes this dish. It is sooooo good! I think I will be making it in the future as a salad dressing. It would be great with a spicy chicken breast over a bed of greens. It just has so many flavors and each ingredient really shines through. Enjoy!

Note: Since these had to travel I was able to cook the won ton cups and shrimp at home and assemble them at my friend’s house. These are perfect if you are hosting a social gathering since all the prep can be done ahead of time and just quickly assembled once your guests arrive, which means more time for socializing! Perfect for the upcoming holidays.

CREAMY CILANTRO LIME SAUCE INGREDIENTS
1/3 c mayonnaise
1/2 c sour cream
2 tbsp milk

2 tbsp lime juice

1/4 c fresh cilantro, chopped

SHRIMP CUP INGREDIENTS
24 small won ton wrappers
2 tbsp olive oil, divided
24 medium shrimp, peeled and deveined
1/2 tsp salt
1 tsp chili powder
1 lime
1 c shredded cabbage

  • Add in cilantro and pulse until combined.
  • Refrigerate sauce until ready to use.
  • Preheat oven to 350º.
  • Lightly brush wonton wrappers with olive oil and arrange in a mini muffin pan making sure to press down flat in the bottoms.
  • Bake for 5–7 minutes or until golden brown and crisp.
  • Toss the shrimp with 1 tbsp of olive oil, salt, and chili powder.
  • Roast shrimp on a baking sheet in the oven for 6–8 minutes or until cooked through.
  • Remove shrimp from oven and squeeze the juice from the lime over the shrimp.
  • To assemble fill each wonton cup with a bit of shredded cabbage, add a spoonful of the sauce, and top with one shrimp.
