Chicken Tamale Pie

I’m all for one-pot dinners that are quick, easy, and save me from washing any extra dishes. This dinner is all of the above and it is absolutely delicious. If you love tamales then you will love this recipe. Think tamales, but on steroids. The cornbread has so many wonderful flavors and great texture. And then you get way more meat than you will ever find in some little hand rolled tamale, plus cheese. Glorious cheese! If you have a family that loves all the flavors of Mexican food and you are looking for something new that will save you some time in the kitchen give this recipe a try. You wont regret it!

Del Real Shredded Chicken

Note: I love Del Real products. I frequently use them as a way to save me time in the kitchen. For this recipe I used a package of the Del Real Shredded Chicken. It shaved off prep time and their products are super affordable. You can also purchase a rotisserie chicken, or if you have time just boil 2 chicken breasts for about 20 minutes and shred them yourself.

INGREDIENTS
1/3 c milk
1 egg
1/4 tsp chili powder
14.75 oz creamed corn
8.5 oz package of Jiffy corn muffin mix
4 oz can diced green chilies, drained
10 oz can red enchilada sauce (I love Las Palmas)
2 c chicken, cooked and shredded
1 1/2 tbsp taco seasoning
1 c pepper jack cheese, shredded
2 tbsp fresh cilantro, chopped
2 tbsp Cotija cheese, crumbled

STEPS

  • Preheat oven to 400º.
  • Combine milk, egg, chili powder, creamed corn, Jiffy, and green chilies in a medium mixing bowl and stir just until combined.
  • Pour the cornbread mix into a greased pie dish.
  • Bake the cornbread for 23–28 minutes or until it is just cooked through and golden on top.
  • While the cornbread is baking toss the shredded chicken with the taco seasoning and 1/3 cup of the enchilada sauce.
  • Using a fork, poke a liberal amount of holes into the cornbread.
  • Pour the remaining enchilada sauce over the top of the baked cornbread.
  • Add the seasoned shredded chicken to the top of the cornbread spreading it around evenly.
  • Sprinkle the shredded pepper jack cheese over the top of the chicken.
  • Bake for an additional 15 minutes.
  • Remove from the oven and allow it to set for 5 minutes.
  • Sprinkle with the cilantro and Cotija cheese.
  • Cut and serve as you would a pie.
  • Enjoy!

Recipe—Creamy Chicken Enchilada Roll Ups

This is actually a recipe adapted from one my mother-in-law made back around the holidays. They seemed like such a great idea and were absolutely delicious. She brought her Mexican inspired wraps over all rolled up in Saran wrap and then just sliced them when she got to our house. They traveled great! When she put them out I could not stop eating them. They were so yummy! So when I was invited to a summer pool party a couple weeks back I knew these would be a hit! Me being the tinkerer I am I had to put my own twist on them. I added in the chicken, olives, and cilantro to help bulk up the filling. They were wonderful additions. If you have any parties coming up definitely keep these in mind. They are relatively easy to assemble and are the perfect finger food for a party of any kind.

Note: You can use a couple of tablespoons of my homemade taco seasoning or just part of an envelope of taco seasoning you would pick up at the store. If you like a little heat add in a chopped jalapeño.

INGREDIENTS
2-8 ox packages cream cheese, softened
1 1/2 c shredded Mexican cheese blend
1 tsp garlic, minced
2 tbsp taco seasoning
10 oz can Rotel tomatoes and chilies, drained
rotisserie chicken, skinned and chopped
1/2 c cilantro, chopped
4 green onions, chopped
4.25 oz chopped black olives
1 package burrito sized tortillas

STEPS

  • Using an electric mixer beat together cream cheese, shredded cheese, garlic, and taco seasoning until well blended.
  • Fold in the canned tomatoes, chicken, cilantro, green onions, and chopped olives.
  • Lay a tortilla out flat and place a heaping spoonful of the creamy mixture in the center.
  • Use a rubber spatula and spread an even layer of the filling out to the edges of the tortilla.
  • Roll up the tortilla and as you finish each place on a cutting board or plate.
  • Continue until the filling is gone.
  • Place the rolls in the freezer for 30–45 minutes allowing them to firm up. (I do this step so that when I slice them they keep their round shape.)
  • Slice the rolls into 1 inch thick pieces and arrange on a plate.
  • Refrigerate until ready to serve.

Recipe—Summertime Rosemary Lemon Chicken with Veggies

This is one of those fabulous recipes you will want to make all summer long. Here are the reasons why I think you will love this recipe:

  1. It’s an entire dinner done in one skillet (easy cleanup)
  2. It takes under 25 minutes to make
  3. It’s incredibly healthy (low cal and low carb)
  4. It utilizes fresh summer veggies
  5. It tastes and looks fabulous!

Do you really need more reasons than that to give this recipe a try?

INGREDIENTS
2 large or 4 small, boneless skinless chicken breasts
kosher salt and black pepper
3 tsp garlic, minced
2 tbsp fresh rosemary, chopped and divided
1 tbsp olive oil
2 yellow squash or zucchini, sliced
3 carrots, peeled and sliced
2 c green beans, cut in half
2 lemons
1/4 c white wine

STEPS

  • Preheat a large skillet over medium high heat.
  • In a small bowl combine 1 teaspoon of kosher salt, 1 teaspoon of black pepper, garlic, and 1 tablespoon of the rosemary.
  • Season both sides of the chicken breasts with the seasoning mix.
  • Drizzle the olive oil in the skillet and add the prepared chicken breasts.
  • Cook chicken on both sides until cooked through.
  • Add the squash, carrots, and green beans to the skillet.
  • Squeeze the juice of the two lemons into the skillet and add in the white wine.
  • Season the veggies with the remaining tablespoon of rosemary and some additional salt and pepper.
  • Place the chicken breast on top of the vegetables and bring to a boil.
  • Cover the pan and cook for 5 minutes or until the veggies are cooked to desired doneness.

Recipe—Herb Roasted Chicken

I would say 95% of the time when I am cooking chicken I am working solely with the breast. Boneless skinless breasts seem to be the quickest and easiest to work with, but you pay a little bit more for the convenience factor. However, there isn’t really anything special or fancy about a plain chicken breast. On occasion I really do enjoy cooking a whole chicken. It just seems much more impressive to roast the whole thing. While the ingredients are incredibly simple in this recipe, it is the most fabulous and flavorful chicken you will ever have. I’m not one to typically sit there and eat the skin off a chicken but when I am carving up this chicken I can’t stop eating it once I start. The skin has just the perfect amount of crispiness and more flavor than you can imagine. You are lucky if there is any skin left on your piece of chicken by the time it makes it to the table. It is that good! Once you make this recipe you will understand. I guarantee this will be the best roasted chicken you will ever have.

Note: The most complicated part of this recipe is brining the chicken, which really isn’t complicated at all, people just think it is. If you aren’t familiar with brining I will bring you up to speed. Brining a chicken is when you soak it in salt water for a good amount of time. Giving it this “salt bath” ensures your chicken will be moist and juicy and it also allows the salt to soak into the meat, which really enhances the chicken’s natural flavors. I personally feel it makes a huge difference in the taste. In my opinion, brining is the difference between a good chicken, and a great chicken.

INGREDIENTS
3–4 lb chicken
1/2 c kosher salt
2 tbsp butter, melted
2 tsp garlic, minced
1 tsp dried basil
1/2 tsp dried sage
1/2 tsp dried thyme
1/2 tsp salt
1/4 tsp pepper

STEPS

  • Remove the neck and giblets from the chicken and place it in a large pot.
  • Pour the kosher salt over the chicken and fill the pot with water until it is submerged.
  • Cover the pot with the lid and place in the fridge for 4–8 hours.
  • Remove the chicken from the pot, rinse with cold water, and pat dry.
  • Place the chicken on a rack in a shallow roasting pan breast side down. (If you do not have a rack just place it in a large baking dish.)
  • Preheat the oven to 375º.
  • Combine the melted butter and garlic in a small bowl.
  • Combine the basil, sage, thyme, salt, and pepper in a second small bowl.
  • Use a basting brush or your hands to lather the chicken in half of the garlic butter.
  • Sprinkle half of the herb mixture over the chicken.
  • Flip the chicken over so that it is now breast side up.
  • Repeat with remaining butter and herb mixture.
  • Roast the chicken uncovered for 1.5–1.75 hours or until cooked through. (I like to baste mine every 20–30 minutes.)
  • Allow the chicken to sit for 5–10 minutes and then transfer to a cutting board to be carved.

Recipe—Chicken Parmesan Meatloaf

Chicken parmesan has got to be one of my favorite Italian dishes. I don’t make it very often because of the amount of work that it requires but I love the stuff! I also love meatloaf, the hubby not so much. Well I saw a recipe the other day for an Italian chicken meatloaf and I thought to myself, why not give it more of a kick and incorporate my favorite chicken parm qualities, flavorful marinara and melted mozzarella…and this gorgeous chicken parmesan meatloaf was made. I expected the loaf to be much dryer, but with the sauce and eggs, it was the moistest meatloaf I have ever made, hands down. The parsley and basil give the meat a nice Italian flavor but really took it over the top was the homemade sauce and fresh mozzarella smothering the top. Delish! I love that this recipe is not only tasted fantastic but it is light on carbs and low in calories. I was able to whip this recipe up in less than 15 minutes so the hardest part was waiting for it to bake. And best of all, the hubby liked it.

Note: I used panko instead of breadcrumbs to keep the carbs down but I imagine some Italian seasoned breadcrumbs would be wonderful!

INGREDIENTS
2 lb ground chicken meat
2 tsp garlic, minced
1/2 yellow onion, chopped
2 eggs
1–1 1/2 c panko
2 c marinara sauce, divided
1/2 c parmesan cheese, grated
1/2 c fresh basil, chopped, divided
1/4 c fresh Italian parsley, chopped
salt and pepper
8 oz fresh mozzarella ball, sliced

STEPS

  • Preheat oven to 375º.
  • In a large bowl combine the meat, garlic, onion, eggs, panko, a 1/2 cup of the marinara, parmesan cheese, a 1/4 cup of the chopped basil, Italian parsley, salt and pepper. (I start with a cup of the panko crumbs and add more as needed to help absorb some of the moisture.)
  • Mix until well combined.
  • Shape the meat mixture into a loaf shape and place in a large greased baking dish.
  • Bake for 40 minutes.
  • Remove loaf from oven and pour remaining marinara sauce over the top.
  • Layer the sliced mozzarella over the top and continue baking for an additional 20 minutes.
  • Turn on the broiler for 3–4 minutes to brown the cheese.
  • Remove the loaf from the oven and allow it to sit for 10 minutes.
  • Garnish the meatloaf with the remaining 1/4 cup of chopped basil and slice to serve.

Recipe—Jalapeño Cheddar Chicken Burger with Guacamole

This chicken burger is the love child of Mexican and American cuisine. It is delicious. Or should I say was delicious, because my husband and I each devoured ours. The entire thing. This had to be the most flavor packed chicken burger I have ever had. Usually when I think of turkey or chicken burgers I think of dry flavorless patties. Not the case with these bad boys! These jalapeño cheddar chicken burgers were incredibly moist and definitely not short on flavor. If you are looking for a way to spruce up the average burger, or even to cut some calories give these burgers a try. They are definitely unique and unlike any chicken burger you have probably ever had before, the perfect burger to enjoy with a refreshing Corona on a warm summer day. Ahhhhhh yeaaahhhhh. That’s what I’m talking about.

Note: These can definitely be cooked on the barbeque. I used my skillet because ground chicken tends to stick easily due to the low fat content.

INGREDIENTS
1 lb ground chicken
1/2 c yellow onion, finely chopped
1/4 c fresh cilantro, finely chopped
2 tsp garlic, minced
2 tsp jalapeño, chopped
1 tsp ground cumin
1 tsp paprika
1/2 c shredded cheddar
kosher salt and pepper
2 tbsp olive oil
2–4 buns

FABULOUS TOPPINGS
guacamole
slices of cheddar cheese
lettuce
sliced tomatoes
sliced red onion

STEPS

  • Preheat oven to 350º.
  • Combine ground chicken, onion, cilantro, garlic, jalapeño, cumin, paprika, cheddar, salt, and pepper in a bowl.
  • Using your hands mix everything together.
  • Form the mixture into 2–4 patties depending on the size you want.
  • In a large skillet, heat the olive oil over medium-high heat.
  • Add the patties and cook for 5–7 minutes per side or until cooked through.
  • While the patties are cooking toast the buns in the oven or 4–5 minutes.
  • Place each patty on a bun and garnish with whatever your heart desires. (I would use all the garnishes I recommended if I were you.)

Recipe—Bacon Cheddar Chicken (Copycat Version of Outback’s Alice Springs Chicken)

I am a bacon and cheese fanatic, which is why I am in LOVE with Outback Steakhouse’s Alice Springs Chicken. If you have never had this dish I speak of, let me tell you all about it. It is a juicy chicken breast cooked in a sweet and tangy honey mustard sauce, then topped with the most delicious things you can think of, sautéed mushrooms, bacon, and cheese, LOTS of cheese! Yummy-messy-goodness that’s what this is! I will admit though, I think mine is slightly better than Outback’s. Shhhhhh… don’t tell. While this dish does require a bit of prep I personally think it is well worth it.

Note: For best results be sure to allow adequate time for marinating the chicken breasts.

INGREDIENTS
1 c Dijon mustard
1 c honey
1/2 c mayonnaise
1 tsp lemon juice
4 boneless, skinless, chicken breasts
1 tbsp olive oil
2 tbsp butter
2 c white mushrooms, sliced
salt and pepper
paprika
8 slices bacon, cooked
1 c Monterey jack, shredded
1 c cheddar, shredded
2 tsp fresh parsley, chopped

STEPS

  • In a medium sized bowl mix together the mustard, honey, mayonnaise, and lemon juice until well combined.
  • Spoon out half of the marinade and place in a small bowl, cover, and chill until later.
  • Add the chicken breast to the large bowl with the marinade and toss to coat.
  • Cover the bowl and place in the fridge for 2–12 hours to marinade.
  • Preheat oven to 375º.
  • Heat the olive oil in a large skillet over medium heat.
  • Add the chicken to the skillet and discard the marinade that the chicken was soaking in.
  • Cook the chicken for 5–7 minutes per side or until golden brown.
  • While the chicken is cooking melt the butter in a small skillet over medium-high heat and sauté the mushrooms.
  • Transfer the cooked chicken breasts to a large baking dish and drizzle with some of the reserved honey mustard marinade. (Save the leftover marinade to serve alongside the finished dish.)
  • Season the chicken with salt, pepper, and paprika.
  • Place two pieces of bacon on each chicken breast and top with the sautéed mushrooms.
  • Sprinkle the Monterey jack on each breast and then the cheddar.
  • Bake the dish for 10–12 minutes or until the cheese is thoroughly melted and the chicken cooked through.
  • Remove the dish from the oven and sprinkle the chopped parsley over the melted cheese.
  • Serve each chicken breast with a small side of the honey mustard.

Recipe—Chicken Cordon Bleu Rollups

My son loves chicken strips dipped in honey mustard and he also loves croissants. (Who doesn’t, really?) I whole-heartedly made this for him because I knew it would be a hit with the munchkin. Turns out the whole family loved them! This recipe is so simple, quick, and cheap to make. My little guy was even a wonderful helper in assembling them, and of course he made sure to be on quality control check while we were putting them together. Little rascal. I just served these with a big green salad for a balanced dinner. We had plenty of leftovers and they reheated extremely well in the oven. I’m definitely keeping these in mind for appetizers too. They were a perfect finger food and were fun to eat and make!

INGREDIENTS
1/4 c honey
1/4 c yellow mustard
1/8 c mayonnaise
1 lb chicken breast tenders
1 tbsp butter
2 cans crescent rolls
8 slices Swiss cheese, cut in half
8 slices ham cut in half lengthwise

STEPS

  • Combine together honey, mustard, and mayonnaise in a small bowl or measuring cup.
  • Place the chicken tenders in a large Ziploc bag and add in 1/2 of the honey mustard sauce and toss to coat.
  • Melt the butter in a large skillet over medium-high heat and cook the saucy chicken breast tenders flipping once until done, about 10–12 minutes.
  • Separate the crescent rolls into the individual triangles.
  • Spread the remaining honey mustard on each one.
  • Place a slice of the Swiss cheese on each crescent triangle and then top with a slice of ham folded in half.
  • Top each with a cooked breast tender.
  • Roll up the crescent starting at the wide end and place on a baking sheet covered in parchment paper. (The parchment paper helps make cleaning up the melted cheese a breeze!)
  • Repeat with remaining chicken tenders and crescents.
  • Bake for 18–20 minutes or until golden brown.

Recipe—Garlic Parmesan WingsSo I am totally on a low carb kick right now. I am determined to loose this extra weight in preparation for summer and just to feel better overall. A lot of people ask me, “How can you do low carb? Don’t you miss all the good stuff?” My response is, “Uhhh…NO!” One of the reasons I love low carb is that you still get to eat really good food. Look at these garlic Parmesan wings, NO CARBS! Zero! Zilch! And while they are short on carbs they are most certainly not short on flavor. I actually made these for a party last weekend and they were a hit! When I told my husband what I was making for the party he told me he probably wouldn’t eat any. Well, guess who was standing over the kitchen sink chowing down on these wings? He just could not resist them. They smelled so incredibly good! And tasted just as scrumptious. I highly recommend these wings even if you aren’t watching your carbohydrates. They were super easy to make and a real crowd pleaser. By the end of the night several people had asked for the recipe. That my friends, is a very good sign.

INGREDIENTS
2 tsp dried oregano
2 tsp dried rosemary, chopped
2 tsp kosher salt
1 tsp dried cumin
3 lbs chicken wings & drumsticks
4 tbsp olive oil (I used some roasted garlic flavored that I had on hand. Delish!)
2 tbsp dried basil
2 tbsp garlic, minced
1/2 c Parmesan cheese, finely grated

STEPS

  • Preheat oven to 425º.
  • In a small bowl combine oregano, rosemary, salt, and cumin. Stir to combine.
  • Place the wings in a large bowl and sprinkle with the seasoning mixture. Toss to coat.
  • Place all the wings in a single layer in a baking dish.
  • Bake for 23–27 minutes or until the wings just start to turn a golden brown.
  • Place the cooked wings in a large mixing bowl.
  • Drizzle the wings with olive oil and toss to coat.
  • Season the wings with the basil, garlic, and Parmesan and again toss to coat, making sure they all have an even coating of all the flavorful goodness.

Recipe—Loaded Up Buffalo Chicken Tacos

I am a huge fan of buffalo chicken or anything smothered in buffalo sauce. As a matter of fact the buffalo chicken salad at Chili’s is one of my all time favorite salads. Something about the hot and spicy chicken paired with all the crunchy fresh vegetables in a cool ranch dressing is just darn right tasty. My husband is not nearly a big of fan as I when it comes to buffalo chicken, however he LOVES anything Mexican, especially tacos. So basically these “fusion” tacos were my way to morph one of my favorite dishes into something he would be eager to try. And they were a hit! These loaded tacos are spicy, cheesy, crunchy goodness; all wrapped up in a nice little tortilla. And this is the type of dish that takes me to my happy place. Hmmmm…

INGREDIENTS
2 boneless, skinless chicken breast, chopped into bite size pieces
salt and pepper
3 tbsp butter
1/2 c buffalo sauce (I love Frank’s Red Hot Buffalo Wings Sauce!)
6–10 soft taco sized tortillas

DELICIOUS TOPPINGS
2 c green leaf lettuce, chopped
1 large carrot, grated
2 stalks celery, thinly sliced
1 tomato, chopped
1 avocado chopped
1/2–3/4 c blue cheese crumbles
1/4 c ranch dressing
2 green onions, chopped
buffalo sauce for drizzling

STEPS

  • Season chopped chicken pieces with salt and pepper.
  • Melt butter in a large skillet over medium-high heat.
  • Add the chicken to the skillet and cook turning occasionally for 6–8 minutes.
  • Add the buffalo sauce to the skillet and reduce heat to medium-low.
  • Cook for another 6–8 minutes or until the sauce has cooked into the meat and the chicken is cooked thoroughly.
  • Place the tortillas on a microwave safe plate and cover with a paper towel.
  • Warm the tortillas in the microwave for 30 seconds. Flip the tortillas over and heat for an additional 30 seconds.
  • Fill each tortilla with a spoonful of the cooked meat and then finish off with all those delicious toppings.
