Recipe—Pork Tenderloin Sammy with Red Cabbage Coleslaw and Sriracha Sauce

Do you like tender flavor packed pork tenderloin? Do you like sandwiches? Do you like easy meals that require very little effort? How about the perfect balance of sweet and spicy with a nice little crunch? If you answered yes to all of these questions then I have the PERFECT sandwich for you! This has got to be the best sandwich I have had in a very long time. The meat has an incredible flavor and goes so well with the crunchy, slightly sweet, and super simple coleslaw and the Sriracha sauce is just the icing on the sammy. I could seriously eat these all day every day! I made my sandwiches meal size but I think this would be the perfect slider sandwich next time I am entertaining a group of guests. For lunch the next day I just took the leftover sliced meat, topped it with the coleslaw and added a drizzle of the sauce. It was a perfect low carb meal sans bun and the flavors just marinated into the meat making it even better than the night before. Seriously, make this sandwich. Your mind will be blown!

Note: When I get the sealed two pound pork tenderloin at our local store there is actually two small ones in the package. These worked perfectly! If you have one big one you may need to cook it for closer to 40 minutes.

INGREDIENTS
6 c red cabbage, shredded
1/2 c green onions, chopped
1/2 c mayonnaise
2 tbsp milk
kosher salt
pepper
2 lb pork tenderloin
3 tbsp brown sugar
2 tbsp dark chili powder
2 tsp cumin
1 tsp garlic powder
1 tsp onion powder
1/4 c olive oil
4–6 rolls
Sriracha sauce

STEPS

  • Place the shredded red cabbage and green onions in a large bowl.
  • In a small bowl whisk together the mayonnaise, milk, and some salt and pepper.
  • Pour the dressing over the cabbage and green onions and mix well.
  • Place the coleslaw in the fridge and keep cold until ready to serve.
  • Preheat oven to 375º.
  • Season the pork tenderloins with kosher salt and pepper.
  • Place the brown sugar, chili powder, cumin, garlic powder, and onion powder in a large Zip Loc bag and shake to mix.
  • Place the pork loin in the bag and toss to coat.
  • Add the olive oil to the bag and toss to coat.
  • Place the seasoned pork loin in a roasting pan or glass pyrex.
  • Bake for 30 minutes or until a thermometer reads 145º.
  • Remove the pork from the oven and allow it to rest for 10 minutes.
  • While the pork is resting place the rolls in the oven to warm and lightly toast them.
  • After the pork has rested slice it thinly.
  • Place several slices of the pork on each bun bottom, top with a generous amount of coleslaw, drizzle with the Sriracha sauce, and add the bun tops.
  • Chow down!

Recipe—Raspberry Turnovers

Over the summer my mom was coming for a visit and I was trying to think of something fun that we could do outside. I decided to take her, my husband, and son berry picking at Patrick’s Mountain Grown Fresh Berry Farm. It was a total blast!

We ended up picking 12 pounds of delicious raspberries and blackberries.

Within 24 hours of picking we made raspberry jam, blackberry jam, blackberry ice cream, blackberry cobbler, mixed berry hand pies, and these tasty raspberry turnovers. (Don’t worry, I will eventually get around to sharing all of those fabulous recipes.) We ended up making these for breakfast and oh my goodness were they tasty! The perfect balance of sweet and tart. While it may not be berry season right now, you can most certainly find some at your local market. So please, give these a try. They are the perfect treat for breakfast or dessert.

Note: If you don’t think you will eat these all in one sitting, no need to waste. Just freeze some of them! They freeze great and can easily be baked at a later date. Just place any extra unbaked turnovers on a wax paper lined sheet and freeze for at least an hour. Once they are frozen solid, transfer them to an airtight bag or container. When you are ready to cook them just place them on the parchment paper lined baking sheet for 15–20 minutes and then bake as directed below.

INGREDIENTS
1/4 c flour
1 package puff pastry (2 sheets), thawed
1/2 c raspberry jam
1 1/4 c fresh raspberries
1 egg
1 tbsp water
2 tsp sugar

STEPS

  • Spread the flour around your work surface and unfold the puff pastry sheets.
  • Cut each sheet into either 4 or 9 squares. It just depends how small or large you want your turnovers.
  • In a small bowl mix together the jam and raspberries.
  • Place an even amount of the raspberry filling in the center of each square of puff pastry.
  • Fold each puff pastry square in half diagonally gently pinching around the edges to seal.
  • Carefully transfer the turnovers to a parchment paper lined baking sheet as you finish them making sure they are at least an inch apart.
  • Using a the prongs of a fork carefully press down along the unfolded edges “crimping the pastry dough.
  • Whisk together the egg and water and brush the egg wash over the top of each turnover.
  • Sprinkle the top of each with a little bit of the sugar.
  • Using a small paring knife cut one slit in the top to help with venting.
  • Place your baking sheet in the freezer for approximately 15 minutes.
  • Preheat the oven to 350º while the turnovers are chilling.
  • Once they are finished in the freezer and your oven is preheated bake them until they are a nice golden brown, about 18–20 minutes.
  • Transfer to a cooling rack and allow to sit for 5 minutes before serving.

Over the past several months I have been on a total broccoli salad kick. Whenever we go to the store I can’t resist getting some at the deli counter. I figured I might as well learn to make my own, and so I did. And it was the bomb diggity! This broccoli salad is the perfect balance of crunchy and creamy, and sweet and salty. I could seriously eat this as a meal all on it’s own, okay I did eat this as a meal all on it’s own. I ate it by the bowlful! It is the perfect summer salad. It’s super light and refreshing. I don’t care if you are a fan of broccoli or not, you will love this recipe. I will make broccoli lovers out of all of you yet!

INGREDIENTS
3 heads of broccoli, chopped into small pieces
1 lb bacon, cooked and crumbled
1/2 red onion, chopped
1 c craisins
1/2 c salted sunflower seeds
1 c mayonnaise
1 tbsp sugar
2 tbsp white vinegar

STEPS

  • In a large bowl combine the broccoli, bacon, red onion, craisins, and sunflower seeds.
  • In a small bowl whisk together the mayonnaise, sugar, and vinegar.
  • Drizzle the dressing over the broccoli salad and toss to coat.
  • Cover the salad and place in the refrigerator for several hours or overnight.
  • Stir right before serving.

Individual Blueberry Cheesecakes

Last weekend we went to another summer BBQ. This one was about two hours away and would be a long windy drive. I needed a dessert that would transport well. Pies seem to always end up squished and most of my Pyrex dishes wont fit in my ice chest. I have seen individual desserts in mason jars trending on Pinterest and I thought to myself, “I bet something like that would transport wonderfully.” And they did! Now what to put in them? Hmm…

If you have been following my blog for a while now then you may know that I love my cheesecake. I am not picky about my desserts but if it has the word “cheesecake” in the name I will lack all self control. So I knew I wanted some sort of cheesecake in a jar. (I know, pretty self-serving right?) Blueberries were on sale at the grocery store and so my decision was made. I would be taking individual blueberry cheesecakes in mason jars. They made a great presentation, were out of this world good, could not have been easier to serve, and they were fun to eat. In other words, they were amazing!

Note: I was able to fill six 8 ounce mason jars. You can get also get 4 ounce jars for smaller servings.

BLUEBERRY FILLING INGREDIENTS
2 tbsp butter
4 c blueberries, fresh or frozen
1/2 c sugar
1/2 tsp lemon juice
2 tbsp cornstarch
4 tbsp water

CHEESECAKE INGREDIENTS
1 c graham cracker crumbs
1/3 c butter, melted
1 1/4 c sugar, divided
8 oz cream cheese, softened
1/3 c milk
8 oz tub of Cool Whip
mason jars (see note above regarding sizes)

BLUEBERRY FILLING STEPS

  • Melt the 2 tbsp of butter in a saucepan over medium heat.
  • Add in the blueberries, sugar, and lemon juice.
  • Whisk together the cornstarch and water in a small bowl and pour into the pot.
  • Lightly mash the blueberries with a hand held masher making sure to leave about half of the berries in tact.
  • Bring the blueberry filling to a boil and then reduce the heat to low.
  • Cook the filling for 6–8 minutes stirring frequently.
  • Remove from heat.

CHEESECAKE STEPS

  • While the blueberry filling is cooling, stir together the graham cracker crumbs, melted butter, and 1/4 c of the sugar.
  • Distribute the graham cracker crumb mixture into the bottom of each jar saving a couple of spoonfuls for garnish.
  • Using a hand held mixer, beat together the cream cheese and remaining cup of sugar until well combined. Gradually add in the milk until it is nice and creamy.
  • Distribute the cream cheese filling among the jars. (I transferred my filling into a Ziploc bag, cut of the corner, and piped it into each jar.)
  • Add a layer of the blueberry filling to each jar.
  • Fill the rest of the jar with Cool Whip and sprinkle with remaining graham cracker crumbs.
  • Add lids if you will be transporting your dessert.
  • Chill for at least one hour before serving.
  • Enjoy!

Recipe—Crunchy Pea Salad

Crunchy Pea Salad

Whenever you go to a BBQ there is typically the classic macaroni and potato salad. Don’t get me wrong I LOVE both of those dishes but with back-to-back BBQs throughout the summer I sometimes am looking for a way to mix things up a bit. This pea salad was a welcome addition to a BBQ I went to last weekend. It was very refreshing and light. There is a nice sweet flavor to this salad similar to a coleslaw. If you are looking for a tasty summer salad for lunch or dinner give this a try. You can have the whole thing thrown together in 5 minutes. You will find the hard part is just waiting for it to chill. The unique combination of flavors go together incredibly well. This is one of those salads that you may not quite be sure of, but once you give it a try you and your guests will keep going back for more of it.

Note: I made this a day ahead of time and it was awesome! Feel free to make it a day in advance if you need to.

INGREDIENTS
12 oz bag frozen sweet peas, thawed
1 c peanuts
1/4 c green onions, chopped
1 lb bacon, cooked and crumbled
1 c craisins
1/2 c mayonnaise
1 1/2 tbsp vinegar
1 tsp sugar
1/4 tsp soy sauce
1/4 tsp Worcestershire sauce
salt and pepper

STEPS

  • In a large mixing bowl combine sweet peas, peanuts, green onions, bacon pieces, and craisins.
  • In a small bowl whisk together the mayonnaise, vinegar, sugar, soy sauce, Worcestershire sauce, salt, and pepper.
  • Pour the dressing over the salad ingredients and toss to combine.
  • Cover and refrigerate for at least one hour before serving.

Recipe—Summertime White Sangria

So I have this incredible friend named Brandy. We have many things in common. One of which is our fabulous taste in refreshing adult beverages. A few weeks back I was at her home for a summer birthday party, and she made this white wine sangria. It was incredible! I would define it as being the perfect summer drink. I have had red sangria before but found it to be a bit heavy for a warm summer day. (I’m more of a white wine gal anyways.) This could not be further from the traditional sangria. It is light and super refreshing. I decided to make Brandy’s recipe for 4th of July for my aunt who says she doesn’t like sangria. (She had a bad experience.) Well guess what, my aunt could not get enough. Who am I kidding? No one could get enough! We had the pitcher wiped out within an hour. It could have been the 100º+ day that had us drinking glasses hand over fist, but either way every drop was enjoyed. This is the perfect drink for a summer party or just a lazy day by the pool. And don’t forget to eat the fruit. That is one of the best parts! Gotta get in your vitamins.

Note: For the white wine I used Pomelo’s sauvignon blanc (one of my favorite summer wines). It has a nice refreshing grapefruit flavor. Anything with citrus notes will give you wonderful results. I recommend using a pinot grigio or sauvignon blanc. I actually bought two bottles and made ice cubes with one of them. This way rather than get watered down as the ice melted, the sangria just got better. 😉

INGREDIENTS
750 ml bottle of sweet white wine (see above note)
2/3 c peach schnapps
1 peach, sliced
1 mango, sliced
1 orange, sliced
1 lime, sliced
1 1/2 c raspberries
2 c ginger ale

STEPS

  • In a large pitcher combine together the wine, peach schnapps, and all the fruit.
  • Place the pitcher in the fridge and allow it to set overnight. (This step is not necessarily but it is highly recommended. Sitting overnight will allow the fruit to soak up some of the boozy goodness and allow the fruit flavors to infuse into the wine.)
  • Add the ginger ale to the pitcher right before serving.
  • Top off the pitcher with ice.
  • Pour. Relax. Enjoy.

Recipe—Fig, Goat Cheese, Prosciutto, and Arugula Flatbread

I have this coworker that lives on a real genuine farm. (In the Sacramento Area that’s not very common.) Throughout the year we are the very lucky recipients of various homegrown goodies. A couple weeks back he brought in the most gorgeous figs. I will admit, I look forward to his figs every year. Figs always inspire me to make fun and creative recipes. Well we were having some friends and their kids over the other day for a bbq and some slip n’ slide fun. I knew we would be sitting out on the patio and wanted to come up with a fun appetizer we would all enjoy with a nice bottle of white wine. This flatbread was amazing and so perfect! This took 15 minutes total and was super easy to whip up. The figs are mildly sweet and go great with the richness of the goat cheese and saltiness of the prosciutto. The finishing touch of fresh arugula gives it a nice peppery flavor and the sweet honey just pulls it all together. This rustic flatbread is just layer after layer of fabulous flavors.

Note: I used the Pillsbury whole grain pizza dough and thought it turned out great!

INGREDIENTS
1 can refrigerated pizza dough (I like Pillsbury)
olive oil
4 figs, thinly sliced
3–4 oz sliced prosciutto
4 oz goat cheese
salt and pepper
2 tbsp honey
2 c arugula

STEPS

  • Heat oven to 400°F.
  • Grease large nonstick cookie sheet with cooking spray.
  • Unroll and press out the dough onto the prepared baking sheet to make a 10” x 15” rectangle.
  • Drizzle the crust with olive oil.
  • Place the fig slices on the crust in a single layer.
  • Tear off pieces on the prosciutto and scatter it over the top of the figs.
  • Crumble the goat cheese and sprinkle it over the flatbread.
  • Season the flatbread with salt and pepper.
  • Bake for 12–14 minutes or until the crust is a nice golden color.
  • Remove from oven and allow to cool.
  • Drizzle the honey over the flatbread.
  • Scatter the arugula over the flatbread.
  • Slice the flatbread into squares and serve.

Recipe—Bok Choy and Carrot Slaw in a Tangy Sesame Soy Vinaigrette

I really wanted to cook some seared ahi the other night and I was looking for the perfect side dish. Well low and behold! There was bok choy in my produce box that week so I knew exactly what to do.  A light and refreshing Asian inspired slaw. It was perfect for the warm summer night and was exactly what my gorgeous piece of ahi needed. Something not too heavy but loaded with flavors that would complement the simplicity of the fish. The dressing for this slaw is tangy, sweet, has a nice sesame flavor, and just a little bite from the fresh garlic. This is great for any Asian inspired dinner you have planned. I also had it with some chicken teriyaki and it was killer! This super fabulous recipe takes less than five minutes to make and is super low cal. Delicious and nutritious!

Note: Dressing can be made a couple of days ahead of time and stored in the refrigerator. Then just toss the salad and the dressing right before serving.

INGREDIENTS
1 tsp garlic, minced
2 tsp sesame seeds (plus more for garnish if desired)
1 tbsp honey
1 tbsp low sodium soy sauce
3 tbsp rice vinegar
1 tbsp sesame oil
3 tbsp olive oil
2–3 large baby bok choy, thinly sliced (about 4–6 c)
1/2 c shredded carrots

STEPS

  • In a small bowl whisk together the garlic, sesame seeds, honey, soy sauce, rice vinegar, sesame oil, and olive oil until well combined.
  • Pour the vinaigrette over the sliced bok choy and shredded carrots and toss to coat.
  • Garnish with extra sesame seeds if desired.
  • Serve and enjoy!

Recipe—The Most Awesome Pork Tenderloin Ever

I know what you are thinking, that is a pretty big name for a pork tenderloin recipe. But this recipe really did result in the best pork tenderloin I have ever had in my life! (And I have eaten pork tenderloins, prepared in many different ways in my lifetime.) The flavors from the marinade are incredible and they seem to seep their way into the meat, it was super moist since you cook the tenderloins right in the sauce, and it was cooked absolutely perfect. My husband and I could not get enough. We each ate over a half pound of pork and chowed down on the cold leftovers for lunch the next day. The flavors are sweet, tangy, and garlicky.  Awesome, awesome, and more awesome. If you are looking to mix things up in the kitchen I highly recommend you give this recipe a try. Your mind will be blown and your palette and belly happy.

INGREDIENTS
1 package of pork tenderloins (2–2.5 lbs), there should be two small tenderloins in the package
6 garlic cloves, sliced in half lengthwise
1/4 c soy sauce
2 tbsp Dijon mustard
4 tbsp honey
2 tbsp orange juice
1 tbsp fresh rosemary, chopped
1 tsp pepper
3 tbsp olive oil

STEPS

  • Preheat your oven to 350º.
  • Spray an 11” x 17” baking dish with cooking spray.
  • Use a sharp knife to poke 6 holes along the topside of each of the tenderloins going about an inch deep.
  • Push a sliver of garlic into each hole and place the tenderloins in the baking dish.
  • In a small bowl whisk together the soy sauce, mustard, honey, juice, rosemary, pepper, and olive oil.
  • Pour the marinade over the tenderloins.
  • Bake uncovered for 45 minutes basting every 7–10 minutes. This gives the tenderloins a delicious glaze over the top.
  • Transfer the tenderloins to a large cutting board and allow them to rest for 10 minutes before slicing.
  • Thinly slice the tenderloins and transfer to a serving dish or plates.
  • Drizzle the marinade from the pan over the sliced pork medallions and enjoy!

Recipe—Banana Toffee Cookies

We have over ripened left over bananas at our house on a pretty frequent basis. I’m not one to let things go to waste so I’m always finding new ways to use them. My typical go to recipe is my banana nut bread but last week I still had several loaves in the freezer. I happened to have on hand, some leftover white chocolate chips and toffee bits so like a mad scientist I went to work on creating something new. Now normally I have the self-control to wait for cookies to cool but when these came out of the oven they were practically going straight to my mouth. Totally irresistible sugar bombs are what these are! Super sweet and totally addicting! The banana flavor definitely comes through and then there were these fabulous little chewy toffee bits mixed in. Okay, I could so go for another batch right now. If you like bananas and have a sweet tooth then this is the recipe for you!

INGREDIENTS
1/2 c butter, softened
1/3 c bananas, smashed
1 tsp vanilla
18.25 oz box of Duncan Hines Butter Golden cake mix
3/4 c white chocolate chips
1/2 c Heath Toffee Bits for baking

STEPS

  • Beat together the butter, bananas, and vanilla.
  • Stir in the dry cake mix and mix thoroughly.
  • Fold in the chocolate chips and toffee bits until evenly distributed.
  • Place the dough in the freezer and chill for 30 minutes. (This makes it much easier to work with.)
  • Preheat oven to 350º.
  • Roll the dough into 1” cylinders and place on a parchment paper lined baking sheet making sure to give them adequate space. (I found that my dough spread out a lot while baking when I made them into circles so I made them more vertical and they did not spread out as much.)
  • Bake the cookies for 10–12 minutes making sure not to overcook them. They will still look undercooked but they will set as they cool.
  • Leave the cookies on the sheet for 3–5 minutes before transferring to a cooling rack or a parchment paper lined cutting board.
  • Enjoy!
