Recipe—Chicken and Cheese Stuffed Sammy

I am in love with almost any recipe that can be prepared in advance and then just tossed in the oven. This recipe is one of those! I recently made it when a couple of friends would be stopping by for lunch. It was a quick visit so I knew I didn’t want to be in the kitchen while they were there. I assembled the whole thing that morning and then just put it in the oven when they arrived. Not only is great if you are having a couple of guests over for lunch but it is perfect for a picnic or even camping. You can make the sandwich ahead of time and then just toss the foil wrapped sandwich on the grille and turn it once or twice to keep the bottom from getting too crisp.

This sandwich is made in one large sourdough loaf that can be cut into 3-5 individual servings. It is literally packed with delicious flavors that go together really well. There’s just something perfect about the combination of hearty chicken pieces and thinly sliced pastrami, especially when smothered with gooey melted Swiss cheese and pressed together with perfectly toasted bread. I promise that you won’t find anything like this is your local deli. De-lish!

INGREDIENTS
large sourdough loaf
Dijon mustard
mayonnaise
1 1/2 c Swiss, shredded
1/2 lb sliced pastrami
2 c shredded rotisserie chicken
1/2 c roasted red bell peppers
3 thin slices of red onion
salt and pepper

STEPS

  • Preheat oven to 400º.
  • Cut an oval out of the top of the loaf and remove it.
  • Tear out the inside of the bread leaving 1/2” thick bread shell.
  • Spread mayonnaise and Dijon mustard on the inside of the loaf and the underside of the lid.
  • Sprinkle half of the shredded Swiss in the bottom of the bread shell.
  • Layer in pastrami, shredded chicken, roasted red peppers, onions, and remaining cheese.
  • Season with salt and pepper.
  • Place the sandwich lid back in place and wrap tightly in foil.
  • Bake for 20–22 minutes or until the cheese is melted and all of the ingredients are warmed through.
  • Remove sandwich from foil and place on cutting board.
  • Cut into desired number of servings.

Super Sunday is right around the corner! The Super Bowl is the biggest football game in America. It’s when we get together with family and friends to watch two rival teams have it out on the field (and of course over indulge in delicious food).

Recipe—Hot Ham & Swiss Sammies

I think I have mentioned before that ham and mayo on a croissant was my favorite sandwich as a kid. And by favorite I mean that was one of the only sandwiches I would eat. I have grown up haven’t I? Well this is my favorite childhood sandwich on steroids, and it is AWESOME! I know you may look at the poppy seed sauce and wonder what that’s all about. Well the sauce bakes to the top of the croissant making an ordinary croissant extraordinary. It does not leave the croissants soggy. It actually gives them a nice caramelization and lots of added flavor. Since these make a good size batch and they can be assembled ahead of time they are perfect for a luncheon or shower. These may be my ultimate in comfort food sandwiches this winter, just throw in a bowl of soup and call it dinner.

Note: These can be assembled and kept in the fridge up to 24 hours before baking. How handy is that?!?

SANDWICH INGREDIENTS
9 medium sized croissants cut in half
1 lb thin sliced deli ham
9 square slices of Swiss, cut in half horizontally
mayonnaise

POPPY SEED SAUCE INGREDIENTS
1 1/2 tsp poppy seeds
2 tsp yellow mustard
4 tbsp butter, melted
2 tsp yellow onion, finely minced
1/4 tsp Worcestershire sauce

STEPS

  • Preheat oven to 350º.
  • Spread each half of the croissant with a thin layer of mayonnaise.
  • Place a piece of Swiss on the bottom half of the croissant.
  • Evenly distribute the ham among the nine sandwiches.
  • Top the ham with a second piece of Swiss cheese and then the croissant top.
  • Place the finished sandwiches edge to edge in a large baking dish or on a cookie sheet. It’s okay if they are snug.
  • In a small bowl whisk together all the poppy seed sauce ingredients.
  • Spoon the sauce over the top of each sandwich and allow the sandwiches to sit for at least 10 minutes.
  • Cover the baking dish with foil and bake for 15–18 minutes or until the cheese is melted.
  • Remove the foil and allow the sandwiches to cook uncovered for an additional 5 minutes.
  • Serve warm and enjoy!

Recipe—Jalapeño Popper Grilled Cheese

This was one of my recipes in the running for the Hot and Spicy Week I did back in September but I just had too many good jalapeño recipes to share so this one got the boot. Well my jalapeño plant was still producing in November thanks to this unseasonably warm weather so here it is, the jalapeño popper grilled cheese sammy! It is creamy, cheesy, and spicy, all the qualities a person looks for in a popper. Enjoy!

INGREDIENTS
2–3 large jalapeños, roasted
2 tbsp butter, softened
4 large slices of sourdough
1/3 c cream cheese
8 slices cheddar cheese

STEPS

  • Heat a large skillet over medium-high heat.
  • Spread one side of each piece of the bread with butter.
  • Place two slices of bread butter side down in the skillet.
  • Top the bread in the skillet with the sliced cheddar cheese.
  • Add the roasted jalapeños to the sandwich.
  • Spread the remaining two slices of bread with cream cheese on the sides without butter.
  • Place the bread cream cheese side down on the sandwich.
  • Cook for approximately 3 minutes or until the bread is a toasty brown.
  • Flip and cook for another 3 minutes until cheese is melted and the other side is a nice toasty brown.

Recipe—Chicken Caesar Burgers

Everything delicious about a chicken Caesar salad can be found in this chicken burger. It’s got the lemon zest, rich parmesan, and creamy dressing. Many people think of ground chicken patties as bland and dry. After trying these one’s opinion of them will completely change. These are not only really moist but they are also super tasty.  When I cooked these the other night I made my hubby the burger on the bun and I just enjoyed the patty along with a big side Caesar. This gave me a fabulous low-carb alternative. These sandwiches are incredibly quick and easy to make and give you a really great healthy alternative to a beef burger.

INGREDIENTS
1 lb ground chicken breast
2 tsp garlic, minced
1/3 c grated parmesan
salt and pepper
1 tbsp Worcestershire sauce
1/3 c fresh parsley, finely chopped
1 tbsp lemon zest
4 tbsp olive oil, divided
1/2 c parmesan, shredded
4 sandwich rolls
1/4 c Caesar dressing
8 large romaine leaves
1 large red tomato, sliced

STEPS

  • Preheat oven to 400º.
  • In a large bowl combine the chicken, garlic, parmesan, salt, pepper, Worcestershire sauce, parsley, and lemon zest.
  • Mix the meat and ingredients and form into 4 patties making sure they are the same shape and size as your rolls.
  • Heat 2 tablespoons of olive oil in a large non-stick skillet.
  • Add the chicken patties to the heated skillet and cook for 4–5 minutes per side.
  • While the patties are cooking place the buns cut side up on a cookie sheet and drizzle with the remaining 2 tablespoons of olive oil.
  • Flip the buns over so they are cut side down.
  • Remove the patties from the skillet and transfer them to the baking sheet if there is room, if not use a second baking sheet.
  • Top the chicken burger patties with the shredded parmesan cheese.
  • Bake the buns and patties in the oven for 5 minutes or until the cheese is melted and the buns are nice and toasty.
  • Spread each cut side of the buns with Caesar dressing.
  • Place 2 romaine leaves and two slices of tomatoes on each bun bottom.
  • Add the chicken patty and finish off with the top bun.

Recipe—Chicken Pesto Panini

I am on a total pesto kick after making my own. Just love the stuff! Especially when I can use it on one of my favorite paninis made with chicken, mozzarella, tomatoes, and of course some delicious pesto. The flavors of this sandwich all go together so perfectly! It’s crunchy, melty, flavorful goodness all in one simple sandwich. Make it for lunch or dinner and serve with an Italian green salad for one heck of an awesome meal.

Note: The recipe calls for grilled chicken breasts but you can also just go pick up a rotisserie chicken at the grocery store to save some time.

INGREDIENTS
4 large slices sourdough bread
2 tbsp butter, softened
1/3 c pesto
1 tomato, sliced
2 grilled chicken breasts, sliced in half lengthwise
6–8 slices fresh mozzarella (I recommend getting the good stuff from the deli)

STEPS

  • Heat a large skillet over medium-high heat.
  • Spread one side of each piece of the bread with butter and spread the opposite sides with pesto.
  • Place two of the slices of bread butter side down in the skillet.
  • Top the bread in the pan with the tomatoes, chicken, and mozzarella.
  • Add the last two slices of bread to the top of the sandwiches, butter side out.
  • Cook for approximately 3 minutes or until the bread is a toasty brown.
  • Flip and cook for another 3 minutes until cheese is melted and the other side is a nice toasty brown.

Recipe—Philly Cheese Steak Sloppy Joes

One of my favorite sandwiches has got to be the Philly cheese steak. While this recipe isn’t for a traditional version of the classic sandwich it is a quick and easy recipe the whole family will love! The provolone cheese sauce totally makes this recipe so don’t skip it. All of the flavors are really mild so it is great for the kiddos. I think next time I may try adding in some sautéed mushrooms just to get one more veggie in there. This is the perfect meal for a night of watching football so I think this will be making my Super Bowl party menu this season. Don’t forget the fries or a big green salad to go with.

INGREDIENTS
1 lb ground beef
1 small yellow onion, chopped
1 green bell pepper, chopped
2 tbsp steak sauce (I like A1)
1 c beef stock
salt and pepper
4 hoagie rolls
1 tbsp butter
1 tbsp flour
1 c milk
1 c provolone cheese, shredded

STEPS

  • Preheat oven to 350º.
  • In a large skillet brown the ground beef and drain off any excess grease.
  • Add the bell peppers and onions and cook until tender, about 3–5 minutes.
  • Add in the steak sauce, broth, salt, and pepper.
  • Bring to a simmer and cook for about 2 minutes. Reduce heat to low.
  • Cut the rolls in half and place in the oven to toast.
  • In a large saucepan melt the butter over medium-high heat.
  • Stir in the flour and cook for about 1 minute.
  • Whisk in milk and bring to a boil. Allow to simmer stirring frequently until it begins to thicken, about 2–3 minutes.
  • Stir in cheese until sauce is smooth and creamy. Remove from heat.
  • Place a scoop of the meat mixture into the toasted rolls and top with the cheese sauce.

Recipe—Classic Chicken Salad

Trying to figure out what to make for your next luncheon or picnic? Search no further! This classic chicken salad recipe is perfect for these warm summer months. During the summer I like cool refreshing sandwiches and chicken salad is always at the top of the list. This recipe is simple, delicious, and a classic. It is perfect in sandwiches or served in a tomato over a bed of lettuce. Heck, I’ve even just gone at it with a fork, I won’t lie. I will say this is better than anything you will find at the deli counter and it is so easy to make. The inclusion of lemon juice and parsley gives this chicken salad a certain freshness that others don’t have.  This is one of those recipes that just gets better over time. I ate this three days after I had made it and it was amazing how much the flavors all intensified. It’s good stuff, Maynard!

Note: This calls for boiled chicken breasts but I have also made it with leftover grilled chicken and it gave the salad a really nice flavor and texture.

INGREDIENTS
4 boneless skinless chicken breasts
1 stalk celery, sliced
1 c mayonnaise
1 tsp mustard
2 tsp lemon juice
1 green onion, thinly sliced
2 tbsp fresh parsley, chopped
1 tsp salt
pepper

STEPS

  • Bring a large pot of water to a boil and add chicken breasts.
  • Boil chicken for 20–25 minutes.
  • Remove chicken from pot and place on a large cutting board to cool.
  • Dice chicken into small pieces.
  • In a large bowl combine chicken and celery.
  • To make your dressing mix together the mayonnaise, mustard, lemon juice, green onion, parsley, salt and pepper.
  • Pour the dressing over the chicken and celery and stir to coat.
  • Refrigerate until ready to serve.

Recipe—Crock-Pot French Dip Sandwiches

When I was a very young girl I wasn’t a picky eater, but I certainly had my favorites. Whenever we went to a deli I ALWAYS ordered a ham sandwich with mayo on white bread. Yeah I was pretty adventurous. One day my dad took me to an Italian deli and I was devastated when they told me they didn’t have ham or white bread. I know what you are thinking, a deli with no ham or white bread?!? I looked at my dad with big eyes and I was at a complete loss as to what I should order. My dad made a decision and ordered me a French dip. I ate the whole thing in record speed and it was delicious! From that day on I had a new favorite sandwich.

If you have never had a French dip then you are missing out! A French dip is a hot sandwich made up of tender thinly sliced roasted beef on a roll and served with a cup of flavorful juice called au jus. You dip each bite of the sandwich in the au jus and take a bite of the juicy flavor packed beefy sandwich. Oh my goodness, my mouth is watering as I write this! This recipe takes my favorite popular sandwich and makes it cheap, easy, and convenient by cooking it in the crock-pot. The meat is incredibly flavorful and tender. It was a huge hit with my family. My hubby actually went back for seconds and then tried to snag our toddlers leftovers too. And I will say, my son was not having it. I only wish I made more because I would have loved to have some leftovers the next day.

INGREDIENTS
2 1/2–3 lb chuck roast
garlic powder
Kosher salt and pepper
3 c beef broth
1 (10.5 oz) can condensed French onion soup
3/4 c red wine
French rolls
sliced provolone cheese (optional)

STEPS

  • Trim any excess fat from the meat.
  • Season the roast with garlic powder, kosher salt, and pepper.
  • Spray crock-pot with non-stick cooking spray. (This makes clean up a breeze!)
  • In the crock-pot stir together broth, French onion soup, and red wine.
  • Add the seasoned roast to crock-pot.
  • Cook on low heat for 7–8 hours.
  • Remove roast from crock-pot and place on a cutting board.
  • Allow roast to sit for 10 minutes.
  • Using a ladle transfer half of the liquid (au jus) to a small saucepan.
  • Slice the roast (mine was falling apart tender so I ended up shredding it with a large fork) and return meat to crock-pot.
  • Continue to cook on low heat for an additional 30 minutes while the meat soaks up some of the flavor packed juices.
  • Heat the au jus you removed from the crock-pot in the saucepan over low heat.
  • Lightly toast your rolls in the oven while meat is soaking and au jus is heating.
  • Using tongs squeeze excess juice from the meat and place on toasted rolls.
  • Top with cheese if desired.
  • Serve sandwich with a side of the au jus in a small bowl or ramekin for dipping.
  • Enjoy while hot and juicy!

Recipe—Fancy Man Grilled Cheese

I recently received a cookbook with 50 different grilled cheese sandwiches. Eventually I will try them all! The sandwiches were not named; they were just referenced as Grilled Cheese #1 and so on. I told my husband to pick any one of them out for me to cook and he picked one that had roast beef, Dijon mustard, caramelized onions, and Brie. Go figure, a man picked one that was made with beef. Brie is a fairly elegant cheese so I decided to name this one the Fancy Man Grilled Cheese. Suiting right?

This sandwich turned out to be absolutely delicious! The Brie was lovely and it melted to be just the perfect amount of gooey. It was a very nice pairing with the sweet caramelized onions and the heartiness of the roast beef. I really want to try this sandwich again but substitute the roast beef for some green apple slices. I love apples with Brie and think it would be a delicious pairing as well. The sandwich was a hit with the whole family and we will most certainly be making it again. It truly is ooey gooey goodness!

Note: I found spreadable Brie by Président that worked fabulously. I didn’t have to deal with the white rind so it was very quick and easy to work with. I’m sure regular Brie would work just as well. This recipe is written for two large sandwiches.

INGREDIENTS
1 yellow onion, sliced
2 tbsp vegetable oil
4 large slices of sourdough bread
2 tbs butter, softened
Dijon mustard
spreadable Brie (I used most of a 4.4. oz container)
1/2 lb of sliced roast beef

STEPS

  • Heat a heavy nonstick frying pan over medium heat and add the oil.
  • Once the oil is nice and hot add the sliced onions and stir them immediately so each onion slice is coated in the oil.
  • Allow the onions to cook stirring every 30 seconds or so. Once the browning begins, lower the heat to decrease your risk of burning the onions.
  • Continue to stir the onions every couple of minutes until they are a golden or deep brown. This will take at least 10–20 minutes.
  • Remove the onions from the pan and place in a bowl to the side.
  • Carefully wipe out your skillet with a paper towel to remove any residual bits.
  • Spread one side of each piece of the bread with butter.
  • On two on the pieces of bread spread the opposite sides with Dijon mustard and then a thin layer of the Brie.
  • Place the bread butter side down in the pan and cook over medium high–heat.
  • Top the bread in the pan with the sliced roast beef and add your caramelized onions. Spread the dry sides of your two reaming pieces of bread with a layer of Brie and top your sandwich with them butter side out.
  • Cook for approximately 3 minutes or until the bread is a toasty brown.
  • Turn and repeat.
