Recipe—Chicken Parmesan Meatloaf

Chicken parmesan has got to be one of my favorite Italian dishes. I don’t make it very often because of the amount of work that it requires but I love the stuff! I also love meatloaf, the hubby not so much. Well I saw a recipe the other day for an Italian chicken meatloaf and I thought to myself, why not give it more of a kick and incorporate my favorite chicken parm qualities, flavorful marinara and melted mozzarella…and this gorgeous chicken parmesan meatloaf was made. I expected the loaf to be much dryer, but with the sauce and eggs, it was the moistest meatloaf I have ever made, hands down. The parsley and basil give the meat a nice Italian flavor but really took it over the top was the homemade sauce and fresh mozzarella smothering the top. Delish! I love that this recipe is not only tasted fantastic but it is light on carbs and low in calories. I was able to whip this recipe up in less than 15 minutes so the hardest part was waiting for it to bake. And best of all, the hubby liked it.

Note: I used panko instead of breadcrumbs to keep the carbs down but I imagine some Italian seasoned breadcrumbs would be wonderful!

INGREDIENTS
2 lb ground chicken meat
2 tsp garlic, minced
1/2 yellow onion, chopped
2 eggs
1–1 1/2 c panko
2 c marinara sauce, divided
1/2 c parmesan cheese, grated
1/2 c fresh basil, chopped, divided
1/4 c fresh Italian parsley, chopped
salt and pepper
8 oz fresh mozzarella ball, sliced

STEPS

  • Preheat oven to 375º.
  • In a large bowl combine the meat, garlic, onion, eggs, panko, a 1/2 cup of the marinara, parmesan cheese, a 1/4 cup of the chopped basil, Italian parsley, salt and pepper. (I start with a cup of the panko crumbs and add more as needed to help absorb some of the moisture.)
  • Mix until well combined.
  • Shape the meat mixture into a loaf shape and place in a large greased baking dish.
  • Bake for 40 minutes.
  • Remove loaf from oven and pour remaining marinara sauce over the top.
  • Layer the sliced mozzarella over the top and continue baking for an additional 20 minutes.
  • Turn on the broiler for 3–4 minutes to brown the cheese.
  • Remove the loaf from the oven and allow it to sit for 10 minutes.
  • Garnish the meatloaf with the remaining 1/4 cup of chopped basil and slice to serve.

Recipe—Jalapeño Cheddar Chicken Burger with Guacamole

This chicken burger is the love child of Mexican and American cuisine. It is delicious. Or should I say was delicious, because my husband and I each devoured ours. The entire thing. This had to be the most flavor packed chicken burger I have ever had. Usually when I think of turkey or chicken burgers I think of dry flavorless patties. Not the case with these bad boys! These jalapeño cheddar chicken burgers were incredibly moist and definitely not short on flavor. If you are looking for a way to spruce up the average burger, or even to cut some calories give these burgers a try. They are definitely unique and unlike any chicken burger you have probably ever had before, the perfect burger to enjoy with a refreshing Corona on a warm summer day. Ahhhhhh yeaaahhhhh. That’s what I’m talking about.

Note: These can definitely be cooked on the barbeque. I used my skillet because ground chicken tends to stick easily due to the low fat content.

INGREDIENTS
1 lb ground chicken
1/2 c yellow onion, finely chopped
1/4 c fresh cilantro, finely chopped
2 tsp garlic, minced
2 tsp jalapeño, chopped
1 tsp ground cumin
1 tsp paprika
1/2 c shredded cheddar
kosher salt and pepper
2 tbsp olive oil
2–4 buns

guacamole
slices of cheddar cheese
lettuce
sliced tomatoes
sliced red onion

STEPS

  • Preheat oven to 350º.
  • Combine ground chicken, onion, cilantro, garlic, jalapeño, cumin, paprika, cheddar, salt, and pepper in a bowl.
  • Using your hands mix everything together.
  • Form the mixture into 2–4 patties depending on the size you want.
  • In a large skillet, heat the olive oil over medium-high heat.
  • Add the patties and cook for 5–7 minutes per side or until cooked through.
  • While the patties are cooking toast the buns in the oven or 4–5 minutes.
  • Place each patty on a bun and garnish with whatever your heart desires. (I would use all the garnishes I recommended if I were you.)

Recipe—Bacon Cheddar Chicken (Copycat Version of Outback’s Alice Springs Chicken)

I am a bacon and cheese fanatic, which is why I am in LOVE with Outback Steakhouse’s Alice Springs Chicken. If you have never had this dish I speak of, let me tell you all about it. It is a juicy chicken breast cooked in a sweet and tangy honey mustard sauce, then topped with the most delicious things you can think of, sautéed mushrooms, bacon, and cheese, LOTS of cheese! Yummy-messy-goodness that’s what this is! I will admit though, I think mine is slightly better than Outback’s. Shhhhhh… don’t tell. While this dish does require a bit of prep I personally think it is well worth it.

Note: For best results be sure to allow adequate time for marinating the chicken breasts.

INGREDIENTS
1 c Dijon mustard
1 c honey
1/2 c mayonnaise
1 tsp lemon juice
4 boneless, skinless, chicken breasts
1 tbsp olive oil
2 tbsp butter
2 c white mushrooms, sliced
salt and pepper
paprika
8 slices bacon, cooked
1 c Monterey jack, shredded
1 c cheddar, shredded
2 tsp fresh parsley, chopped

STEPS

  • In a medium sized bowl mix together the mustard, honey, mayonnaise, and lemon juice until well combined.
  • Spoon out half of the marinade and place in a small bowl, cover, and chill until later.
  • Add the chicken breast to the large bowl with the marinade and toss to coat.
  • Cover the bowl and place in the fridge for 2–12 hours to marinade.
  • Preheat oven to 375º.
  • Heat the olive oil in a large skillet over medium heat.
  • Add the chicken to the skillet and discard the marinade that the chicken was soaking in.
  • Cook the chicken for 5–7 minutes per side or until golden brown.
  • While the chicken is cooking melt the butter in a small skillet over medium-high heat and sauté the mushrooms.
  • Transfer the cooked chicken breasts to a large baking dish and drizzle with some of the reserved honey mustard marinade. (Save the leftover marinade to serve alongside the finished dish.)
  • Season the chicken with salt, pepper, and paprika.
  • Place two pieces of bacon on each chicken breast and top with the sautéed mushrooms.
  • Sprinkle the Monterey jack on each breast and then the cheddar.
  • Bake the dish for 10–12 minutes or until the cheese is thoroughly melted and the chicken cooked through.
  • Remove the dish from the oven and sprinkle the chopped parsley over the melted cheese.
  • Serve each chicken breast with a small side of the honey mustard.

Recipe—Chicken Cordon Bleu Rollups

My son loves chicken strips dipped in honey mustard and he also loves croissants. (Who doesn’t, really?) I whole-heartedly made this for him because I knew it would be a hit with the munchkin. Turns out the whole family loved them! This recipe is so simple, quick, and cheap to make. My little guy was even a wonderful helper in assembling them, and of course he made sure to be on quality control check while we were putting them together. Little rascal. I just served these with a big green salad for a balanced dinner. We had plenty of leftovers and they reheated extremely well in the oven. I’m definitely keeping these in mind for appetizers too. They were a perfect finger food and were fun to eat and make!

INGREDIENTS
1/4 c honey
1/4 c yellow mustard
1/8 c mayonnaise
1 lb chicken breast tenders
1 tbsp butter
2 cans crescent rolls
8 slices Swiss cheese, cut in half
8 slices ham cut in half lengthwise

STEPS

  • Combine together honey, mustard, and mayonnaise in a small bowl or measuring cup.
  • Place the chicken tenders in a large Ziploc bag and add in 1/2 of the honey mustard sauce and toss to coat.
  • Melt the butter in a large skillet over medium-high heat and cook the saucy chicken breast tenders flipping once until done, about 10–12 minutes.
  • Separate the crescent rolls into the individual triangles.
  • Spread the remaining honey mustard on each one.
  • Place a slice of the Swiss cheese on each crescent triangle and then top with a slice of ham folded in half.
  • Top each with a cooked breast tender.
  • Roll up the crescent starting at the wide end and place on a baking sheet covered in parchment paper. (The parchment paper helps make cleaning up the melted cheese a breeze!)
  • Repeat with remaining chicken tenders and crescents.
  • Bake for 18–20 minutes or until golden brown.

Recipe—Garlic Parmesan WingsSo I am totally on a low carb kick right now. I am determined to loose this extra weight in preparation for summer and just to feel better overall. A lot of people ask me, “How can you do low carb? Don’t you miss all the good stuff?” My response is, “Uhhh…NO!” One of the reasons I love low carb is that you still get to eat really good food. Look at these garlic Parmesan wings, NO CARBS! Zero! Zilch! And while they are short on carbs they are most certainly not short on flavor. I actually made these for a party last weekend and they were a hit! When I told my husband what I was making for the party he told me he probably wouldn’t eat any. Well, guess who was standing over the kitchen sink chowing down on these wings? He just could not resist them. They smelled so incredibly good! And tasted just as scrumptious. I highly recommend these wings even if you aren’t watching your carbohydrates. They were super easy to make and a real crowd pleaser. By the end of the night several people had asked for the recipe. That my friends, is a very good sign.

INGREDIENTS
2 tsp dried oregano
2 tsp dried rosemary, chopped
2 tsp kosher salt
1 tsp dried cumin
3 lbs chicken wings & drumsticks
4 tbsp olive oil (I used some roasted garlic flavored that I had on hand. Delish!)
2 tbsp dried basil
2 tbsp garlic, minced
1/2 c Parmesan cheese, finely grated

STEPS

  • Preheat oven to 425º.
  • In a small bowl combine oregano, rosemary, salt, and cumin. Stir to combine.
  • Place the wings in a large bowl and sprinkle with the seasoning mixture. Toss to coat.
  • Place all the wings in a single layer in a baking dish.
  • Bake for 23–27 minutes or until the wings just start to turn a golden brown.
  • Place the cooked wings in a large mixing bowl.
  • Drizzle the wings with olive oil and toss to coat.
  • Season the wings with the basil, garlic, and Parmesan and again toss to coat, making sure they all have an even coating of all the flavorful goodness.

Recipe—Cheesy Mexican Chicken

Saucy and cheesy, I love almost any dish with those qualities. This recipe has both of those and is also delicious and low-carb. And best of all there are only 5 ingredients! Win, win, win! A working mom’s dream come true! My saucy chicken is great all on it’s own, served over rice, with some warmed tortillas, or even as burrito filler. I love how quick and easy it is to put together, perfect for a week night. While I love red sauce my husband is a big fan of green. Next time I may try this with green enchilada sauce and pepper jack cheese just for something different.

INGREDIENTS
1 lb boneless skinless chicken breasts
1 pack taco seasoning or a batch of my homemade taco seasoning
10 oz can red enchilada sauce, mild (I love Las Palmas!)
1 c cheddar cheese, shredded
3 green onions, chopped

STEPS

  • Preheat oven to 350º.
  • Cut the chicken into cubes and sprinkle with the taco seasoning.
  • Sauté the chicken in a skillet over medium high heat stirring occasionally until cooked through, about 10 minutes.
  • Place the cooked chicken pieces in a greased 8” x 8” baking dish.
  • Drizzle the enchilada sauce over the top of the chicken and toss to coat.
  • Sprinkle the cheese over the chicken.
  • Bake for 15–20 minutes or until it is bubbling.
  • Remove from oven and sprinkle with the green onions.

Recipe—Chicken and Cheese Stuffed Sammy

I am in love with almost any recipe that can be prepared in advance and then just tossed in the oven. This recipe is one of those! I recently made it when a couple of friends would be stopping by for lunch. It was a quick visit so I knew I didn’t want to be in the kitchen while they were there. I assembled the whole thing that morning and then just put it in the oven when they arrived. Not only is great if you are having a couple of guests over for lunch but it is perfect for a picnic or even camping. You can make the sandwich ahead of time and then just toss the foil wrapped sandwich on the grille and turn it once or twice to keep the bottom from getting too crisp.

This sandwich is made in one large sourdough loaf that can be cut into 3-5 individual servings. It is literally packed with delicious flavors that go together really well. There’s just something perfect about the combination of hearty chicken pieces and thinly sliced pastrami, especially when smothered with gooey melted Swiss cheese and pressed together with perfectly toasted bread. I promise that you won’t find anything like this is your local deli. De-lish!

INGREDIENTS
large sourdough loaf
Dijon mustard
mayonnaise
1 1/2 c Swiss, shredded
1/2 lb sliced pastrami
2 c shredded rotisserie chicken
1/2 c roasted red bell peppers
3 thin slices of red onion
salt and pepper

STEPS

  • Preheat oven to 400º.
  • Cut an oval out of the top of the loaf and remove it.
  • Tear out the inside of the bread leaving 1/2” thick bread shell.
  • Spread mayonnaise and Dijon mustard on the inside of the loaf and the underside of the lid.
  • Sprinkle half of the shredded Swiss in the bottom of the bread shell.
  • Layer in pastrami, shredded chicken, roasted red peppers, onions, and remaining cheese.
  • Season with salt and pepper.
  • Place the sandwich lid back in place and wrap tightly in foil.
  • Bake for 20–22 minutes or until the cheese is melted and all of the ingredients are warmed through.
  • Remove sandwich from foil and place on cutting board.
  • Cut into desired number of servings.

Recipe—Whole Chicken in a Crock-Pot

I absolutely love roasting chicken in the oven but I just don’t usually have time during the workweek. Using a crock-pot is a wonderful alternative way to cook an entire chicken. This recipe is super easy and the chicken comes out incredibly moist and is pretty much falling off the bone. Just be sure to be very careful when removing the whole chicken from the crock-pot because it will be on the verge of falling apart. Serve this up with a side of mashed potatoes and your favorite veggie for a dinner made of comfort foods. I even used the drippings from the crock-pot to make a quick and easy gravy which went great with mashed potatoes and chicken.

Note: If you are really short on time in the mornings prepare the entire chicken in the ceramic crock-pot insert the night before and just place the entire thing with the lid on in the refrigerator. Then in the morning you just drop the insert into the crock-pot and turn it on. Wellah! Dinner really can be this easy!

INGREDIENTS
2 tsp paprika
1 tsp salt
1 tsp onion powder
1 tsp thyme
1/2 tsp garlic powder
1/4 tsp cayenne pepper
1/4 tsp black pepper
1 yellow onion, chopped
2 stalks of celery, chopped
1 large chicken

STEPS

  • Combine all the spices in a small bowl.
  • Place the chopped onion and celery in the bottom of the crock-pot.
  • Remove any parts from inside the chicken.
  • Rub the seasonings all over the chicken. (I like to rub some of the seasonings under the skin covering the breasts. This allows the flavors to really seep into the meat.)
  • Place the prepared chicken in the crock-pot on top of the onions breast side up.
  • Cook on high for 4–5 hours or on low for 8–10.

Recipe—Chicken Caesar Burgers

Everything delicious about a chicken Caesar salad can be found in this chicken burger. It’s got the lemon zest, rich parmesan, and creamy dressing. Many people think of ground chicken patties as bland and dry. After trying these one’s opinion of them will completely change. These are not only really moist but they are also super tasty.  When I cooked these the other night I made my hubby the burger on the bun and I just enjoyed the patty along with a big side Caesar. This gave me a fabulous low-carb alternative. These sandwiches are incredibly quick and easy to make and give you a really great healthy alternative to a beef burger.

INGREDIENTS
1 lb ground chicken breast
2 tsp garlic, minced
1/3 c grated parmesan
salt and pepper
1 tbsp Worcestershire sauce
1/3 c fresh parsley, finely chopped
1 tbsp lemon zest
4 tbsp olive oil, divided
1/2 c parmesan, shredded
4 sandwich rolls
1/4 c Caesar dressing
8 large romaine leaves
1 large red tomato, sliced

STEPS

  • Preheat oven to 400º.
  • In a large bowl combine the chicken, garlic, parmesan, salt, pepper, Worcestershire sauce, parsley, and lemon zest.
  • Mix the meat and ingredients and form into 4 patties making sure they are the same shape and size as your rolls.
  • Heat 2 tablespoons of olive oil in a large non-stick skillet.
  • Add the chicken patties to the heated skillet and cook for 4–5 minutes per side.
  • While the patties are cooking place the buns cut side up on a cookie sheet and drizzle with the remaining 2 tablespoons of olive oil.
  • Flip the buns over so they are cut side down.
  • Remove the patties from the skillet and transfer them to the baking sheet if there is room, if not use a second baking sheet.
  • Top the chicken burger patties with the shredded parmesan cheese.
  • Bake the buns and patties in the oven for 5 minutes or until the cheese is melted and the buns are nice and toasty.
  • Spread each cut side of the buns with Caesar dressing.
  • Place 2 romaine leaves and two slices of tomatoes on each bun bottom.
  • Add the chicken patty and finish off with the top bun.

Recipe—Jalapeño Popper Chicken

Today is the 5th and final day of my hot & spicy week! My jalapeño plant has been giving me more peppers than I know what to do with so this week I will be featuring five different jalapeño based recipes. I hope you enjoy each and every one! 

One of my all time favorite appetizers has got to be jalapeño poppers. I pretty much like anything with jalapeños but when you combine them with cream cheese and cheddar, oh my, it is good! This dinner recipe combines this awesome appetizer with a meaty chicken breast that ends up being so moist and tender. For this recipe I used crushed Ritz because I really like the crunchy buttery exterior but I really want to try it with Cheez-Its instead next time. I think that would be pretty darn tasty giving it that extra layer of cheesy crispiness.

Note: As much as I like my fried chicken this recipe has you bake it. If you aren’t concerned about cutting the extra calories you can certainly fry it up and then finish it in the oven for an even crispier exterior.

INGREDIENTS
4 chicken breasts
salt and pepper
2 jalapeños, deseeded and chopped
1/4 c cream cheese, softened
1/2 c cheddar, shredded
1 egg
1 1/2 c crushed Ritz crackers

STEPS

  • Preheat oven to 375º.
  • Season chicken with salt and pepper and set aside.
  • In a small bowl combine the cream cheese, cheddar, and peppers.
  • Using a small sharp knife carefully cut a pocket into the side of the thickest part of the chicken breasts.
  • Using your fingers work the cream cheese filling inside each breasts until they are packed full.
  • Secure the opening in each breast with a toothpick
  • Using a shallow bowl beat the egg.
  • Dip the chicken pieces into the egg and then the crushed crackers making sure to cover the chicken completely.
  • Place the chicken breasts in a greased baking dish.
  • Bake for 30–35 minutes or until the chicken is cooked through.
  • Remove the chicken from the oven and allow it to sit for a couple of minutes before serving. The cheese filling will be very hot!
