Recipe—Garlic Shrimp and White Beans

A couple of weeks back I had the opportunity to be a guest blogger over at Rantings of an Amateur Chef. I shared this simple recipe for Garlic Shrimp and White Beans. In case you missed it here it is. 

I absolutely love it when I can find a recipe that is not only fabulous but also incredibly quick and easy. Being a working mom those are mandatory criteria for a recipe to make it into our weeknight dinner rotation. This recipe for garlic shrimp and white beans is very simple and yet super flavorful and it only uses one pot making clean up a breeze. Score! I just put the pan right on the kitchen table and let everyone serve it up family style. This rustic recipe goes great with some crusty bread to sop up all the rich tomato sauce and a green salad to balance out the meal. Yum!

Note: If you don’t have a large ovenproof skillet just complete the first 9 steps in a regular skillet and transfer the bean and tomato mixture to an oven safe baking dish and then top with shrimp and finish off under the broiler.

INGREDIENTS
6 tbsp olive oil, divided
4 tsp garlic, minced and divided
1 tsp chili powder
1/4 tsp crushed red pepper (more if you like is spicy)
1 bay leaf
15 oz can petite-diced tomatoes, drained
salt and pepper
2 tbsp tomato paste
2-15 oz cans white cannellini beans, rinsed and drained
1 c chicken broth
1 lb large shrimp, peeled and deveined
1 tsp paprika
2–3 tbsp flat leaf parsley, chopped

STEPS

  • Preheat broiler.
  • Heat 2 teaspoons olive oil in a large ovenproof skillet over medium-high heat.
  • Add 2 teaspoons of the garlic, chili powder, crushed red pepper, and bay leaf.
  • Cook stirring constantly for 1–2 minutes making sure not to burn the garlic.
  • Add the tomatoes and season with salt and pepper.
  • Using the backside of the spoon smash up any large chunks of tomatoes and cook until broken down, about 5 minutes.
  • Add the tomato paste and cook stirring constantly until the tomato mixture is a deep red and begins to caramelize, about 5 minutes.
  • Stir in the beans and broth and bring to a steady simmer.
  • Cook down until the liquid has reduced and thickened.
  • In a large bowl combine the shrimp, 2 tablespoons of olive oil, remaining 2 teaspoons of garlic, paprika, and salt and pepper tossing to coat.
  • Lay the shrimp over the beans making sure they do not overlap.
  • Place the entire oven safe skillet in the oven under the broiler.
  • Broil until the shrimp are cooked through, about 4–5 minutes.
  • Carefully remove skillet from broiler.
  • Drizzle with dish with the remaining 2 tbsp of olive oil and garnish with the chopped parsley.
  • Enjoy!

Recipe—Crab Stuffed Mushrooms


Are you looking for a classy appetizer to serve at your New Year’s Eve party tomorrow or any other night of the year? Search no further! These crab stuffed baby portobello mushrooms are easy, can be made ahead of time, are really elegant, and of course delicious. These will be a hit with all your guests. The crab filling is creamy with a nice little kick to it thanks to the Tabasco and the breadcrumbs give them the perfect little crunch. If you are serving a steak for a main course these can also be the perfect complementary side dish. Either way enjoy this fabulous recipe as you ring in 2013! Happy New Year everyone!

Note: You can completely make and assemble the stuffed mushrooms a half day in advance and store in the fridge until ready to bake.

INGREDIENTS
1/4 c olive oil
1 tbsp butter
1 tbsp garlic, minced
1 tbsp shallot, chopped
10–12 baby portobello mushrooms, washed and destemmed
salt and pepper
3 tbsp red bell pepper, chopped
8 oz lump crabmeat
1 tsp hot sauce (I like Tabasco)
1 1/2 tsp Worcestershire sauce
2 tbsp mayonnaise
2 tbsp Dijon mustard
2 tsp old bay seasoning
1/2 c breadcrumbs

STEPS

  • Preheat oven to 350º.
  • In a medium sauté pan heat the olive oil and butter over medium-high heat.
  • Add the garlic and shallot and sauté for 2 minutes.
  • Add the mushroom caps and season with salt and pepper.
  • Sauté the mushroom caps for 2 minutes.
  • Remove the mushroom caps from the skillet and place them upside down on a baking sheet lined with parchment paper.
  • Add the chopped bell pepper to the skillet and sauté for 1 minute.
  • In a medium bowl mix together the crabmeat, hot sauce, Worcestershire sauce, mayonnaise, mustard, old bay seasoning, and a dash of salt and pepper.
  • Stir in the sautéed veggies and mix well.
  • Stuff each mushroom cap with the crab mixture and top with breadcrumbs.
  • Bake for 12–14 minutes or until the breadcrumbs start to brown.
  • Allow mushrooms to cool for a couple of minutes before serving.

Recipe—Savory Herb Bread Pudding

A couple months back my family and I went to Disneyland for a few days. During our stay at the Hilton we ended up ordering room service for dinner because we were just too pooped from all the fun to actually go out. One of those nights I ordered roasted chicken, which came with a savory bread pudding. The bread pudding was phenomenal! So phenomenal, that I ordered the same dish a second time during our visit. Yes, it was that good! The bread pudding was flavor packed and went perfectly with the chicken. This last weekend I tried to replicate the recipe to go with my roasted turkey because I didn’t want to do the same old stuffing I had just had a couple of weeks prior at Thanksgiving. I think it turned out fantastic! One thing I love about this recipe is that it is super easy, can be made in advance, and goes with any type of meat! This Christmas I will be making this bread pudding along with my prime rib. Whether you are cooking a ham, turkey, or a fine cut of beef at Christmas this will be the perfect side dish that will have everyone talking. It is a perfect substitute for those plain dinner rolls or even mashed potatoes.

Note: The bread pudding can be assembled up to a day in advance and stored in the refrigerator. Remove baking dish from fridge at least one hour before baking and bring to room temperature. If you have a smaller group of people this recipe is easy to halve. Just use an 8″ x 8″ baking dish.

INGREDIENTS
2 large sourdough rounds, cut into 1” cubes
1/2 c fresh parsley, chopped
1/4 c fresh sage, chopped
2 tbsp fresh thyme, chopped
salt and pepper
6 tbsp butter
2 tbsp garlic, minced
1/3 c chives, chopped
8 eggs
2 c chicken broth
2 c heavy cream

STEPS

  • Preheat oven to 325º.
  • In a large bowl combine the bread, parsley, sage, thyme, salt and pepper.
  • In a small skillet melt the butter over medium-high heat and add the garlic cooking until tender. Do not burn the garlic!
  • Add the chives to the skillet and cook for 3 minutes.
  • Drizzle the melted butter over the bread and toss to coat.
  • In a medium mixing bowl whisk together the eggs, broth, and heavy cream.
  • Pour the liquid mixture over the bread and stir until evenly coated.
  • Transfer the bread mixture to a greased 9” x 13” baking dish.
  • Gently press the soaked bread into the pan.
  • Bake for 50–60 minutes or until center is set.
  • Tent dish with foil until ready to serve.
  • Slice into squares and enjoy!

Recipe—Homemade Spiked Eggnog

What’s Christmas without a glass or three of spiked eggnog? It is a must have item in our family. I am not a huge eggnog fan but I will drink the occasional glass here and there. However, my sister really loves the stuff so I wanted to be sure and have some on hand for her while we celebrated the holidays early this year. Unfortunately, this eggnog comes with a sad story.

This year I thought I would be adventurous and make my own eggnog. It turned out incredible and was actually really easy to make! This was by far the best eggnog I have ever had. I was so excited to share this fabulous concoction with my sister because I knew she would feel the same way. After slaving over the oven all day (okay I’m exaggerating, more like 20 minutes, this recipe is actually really quick to make) I had the eggnog done and poured it into my brand new glass pitcher. It was a gorgeous site! My mom, sister, husband, son, and I went and walked through a Christmas light display at our local zoo. The perfect end to the evening would be a homemade glass of eggnog. I poured the first glass and then went to pour the second when crack! The handle on my new pitcher literally fell off and the entire batch of eggnog shattered on my counter and went everywhere! I was on the verge of tears. However, the one lonely glass you see above survived. Thank goodness! So we all shared this one lonely glass of eggnog and it was the best glass of eggnog ever!

If you have never had homemade eggnog I highly recommend you give it a try. One thing that I absolutely love about this recipe is that the eggs are par cooked in the hot milk rather than raw, giving this a less eggy flavor. It is the perfect holiday beverage and takes on a superior quality being homemade.

Note: If you want virgin eggnog just omit the rum for a family friendly version. 

INGREDIENTS
3 1/2 c milk
1 1/2 tsp vanilla
1 tsp ground cinnamon
1 cinnamon stick
pinch of ground cloves
6 egg yolks
3/4 c granulated sugar
1 c rum
1 c heavy cream
1/4 tsp nutmeg

STEPS

  • In a large saucepan heat the milk, vanilla, cinnamon, cinnamon stick, and cloves over medium heat.
  • Bring to a gentle boil and remove from heat.
  • Allow the milk to set for about 2 minutes while the cinnamon stick seeps.
  • While the milk is cooling, beat the egg yolks and sugar in a large mixing bowl until it’s pale yellow and fluffy.
  • Remove the cinnamon stick from your milk and slowly pour into the egg mixture.
  • Beat on low until well incorporated.
  • Pour the mixture back into the saucepan and heat on medium/medium-low heat for 5 minutes until thick and creamy. DO NOT LET IT BOIL OR THE EGGS WILL CURDLE!
  • Remove the saucepan from heat and stir in the rum, heavy cream, and nutmeg.
  • Allow the eggnog to cool on the counter for at least an hour.
  • Transfer the eggnog to a pitcher or serving dish and refrigerate for 8–10 hours.

Recipe—Leek Quiche

I recently started following this fabulous gourmet blog called C’est la Vie Cuisine. On the day I found out I would be receiving leeks in my next produce box Lucie posted a recipe for leek quiche. I knew it was meant to be! I adapted her recipe (see the original here) based on what I had on hand and by adding in some extra eggs and cheese to accommodate a deeper pie dish. This recipe turned out great! I served it for dinner with some breakfast sausage and toast but it can be enjoyed for any meal. One of the many fabulous reasons I love quiche! This recipe was so easy and really tasty! The caramelized leeks and onions take on a nice sweet flavor making it a fabulous complement to salty breakfast meat like sausage or bacon.

Leeks are a part of the onion family and are very mild and sweet in flavor. The leek basically looks like a HUGE green onion. Leeks are known for being very low in calories and having wonderful health benefits. They are high in dietary fiber, potassium, iron, magnesium, calcium, phosphorous, folic acid, and vitamins A, B, C, and K.

Notes: Leeks can have a large amount of soil and dirt between the layers so after you slice them make sure to wash them thoroughly. I submerge them in water and use my hand to swish them around. The leeks float to the top and the dirt sinks to the bottom. I then use a salad spinner to help remove all the excess water.

You can omit the piecrust all together to create a low-carb version of this recipe. To do this, grease your pie dish and whisk the mozzarella in with the egg mixture. Bake time will be the same.

INGREDIENTS
3 tbsp butter
1 yellow onion, chopped
3 leeks, white and light green parts only, thinly sliced (see above note about washing)
1 tbsp garlic
1 sheet of refrigerated piecrust at room temperature
salt and pepper
9 eggs
1/2 c half and half
1 c mozzarella

STEPS

  • Preheat oven to 400º.
  • In a larger skillet melt the butter over medium-high heat.
  • Add the onion, leeks, and garlic to the skillet.
  • Cook stirring frequently until the onions begin to caramelize, about 15 minutes.
  • While the leeks and onions cook gently press the crust into your pie dish.
  • In a medium-mixing bowl whisk together your eggs and half and half until well incorporated.
  • When the leeks are done cooking season with salt and pepper and gently fold the cooked veggies into the egg mixture.
  • Sprinkle half of the mozzarella into the bottom of your pie dish.
  • Add the egg mixture to your pie dish and top with remaining mozzarella.
  • Bake the quiche in the oven for 30–35 minutes or until the middle is firm.
  • Allow quiche to cool for 5 minutes before slicing and serving.

Recipe—Velvety Celery Cream Soup

I have gotten big bundles of celery in my organic produce delivery several weeks in a row now. I certainly love my celery sticks but I just don’t think I will be able to eat another one for a few days. While recovering from celery stick overload I made one of my favorite vegetable soups, celery cream. This is one of the easiest soups to make and even though it is very simple it is wonderful. It is super creamy and the lemon and hot sauce gives it just the right kick. I made a big batch to take to my mother in law who just had knee replacement surgery a couple of weeks ago. One thing I love about this soup is you can make a big batch of it and it reheats great! I typically double the recipe and then divvy the soup up into several containers for future dinners and lunches. It’s a perfect dinner for cool evenings or even on a rainy Sunday afternoon.

Note: When using a blender to puree the soup you will need to do it in batches. I recommend placing a towel over the top of your blender and holding the lid firmly in place as the heat will make the lid blow off and it makes a huge hot mess and can burn you if not secured.

INGREDIENTS
4 tbsp (1/2 stick) butter
1 bunch of celery, sliced
2 yellow onions, chopped
1 tbsp garlic, minced
4 tbsp flour
6 c chicken broth
1 bay leaf
1 c heavy cream
1 tbsp lemon juice
4–5 dashes of hot sauce
1/2 tsp ground white pepper
salt (optional)

STEPS

  • In a large soup pot melt the butter and add the celery, onions, and garlic.
  • Cook over medium-high heat until soft.
  • Sprinkle the flour in the pot and stir while cooking for 1–2 minutes.
  • Add the chicken broth and bay leaf.
  • Bring pot to a boil, cover, and reduce heat allowing to simmer for 30 minutes.
  • Remove the bay leaf.
  • Using a blender puree the soup in small batches until nice and smooth. (See above note)
  • Transfer the soup back into the pot.
  • Add in the cream, lemon juice, hot sauce, pepper, and salt. (Be sure to sample the soup before adding in the salt. Unless you are using a reduced sodium you may not need it.)
  • Bring pot to a boil, cover, and reduce heat allowing to simmer for an additional 10 minutes or until desired thickness.

Recipe—Creamy Persimmon Pomegranate Salad

During the fall and winter months it can be difficult to find quality ripe fruit for a fruit salad. And when you do find some, you pay an arm and a leg. This is a fabulously simple salad you can whip up in minutes using some seasonal fall fruits. This sweet and creamy salad is great for breakfast or even as an addition to your Thanksgiving meal. I think the walnuts and pomegranate seeds give it a nice little crunch and best of all, it is really healthy!

Note: You may or may not find seeds in your persimmons. I have found them both ways. When you chop them be sure to keep a watch for them and discard any you find.

INGREDIENTS
6 fuyu or amagaki persimmons, chopped
3/4 c pomegranate seeds
1/2 c candied walnuts, chopped
1 c plain Greek yogurt
2 tbsp honey

STEPS

  • Combine the persimmons, pomegranate seeds, and walnuts in a medium bowl.
  • In a small bowl, stir together the honey and yogurt.
  • Pour the yogurt over the fruit and gently stir to combine.

Recipe—Peppercorn Crusted Steak with Bourbon Cream Sauce

Usually when we have steak in our house my hubby does his magic on the grille. The other weekend he was taking his first of many architectural exams. I wanted to surprise him with a nice steak fit for a king to reward him for all his hard work, without having him fire up the barbie. These really turned out to be some great skillet cooked steaks. The sauce was rich and creamy and really dresses up what is already a fabulous cut of meat. This recipe is perfect for a romantic dinner in or a special indulgence.

STEAK INGREDIENTS
2 New York steaks, rib eyes, or filets
1/2 tbsp kosher salt
1 tbsp fresh ground pepper
2 tbsp olive oil

SAUCE INGREDIENTS
1 tbsp olive oil
1 tsp garlic, minced
1 tbsp yellow onion, minced
1 tsp peppercorns
2 tbsp bourbon
1/2 c beef broth
1/2 c heavy whipping cream

STEAK STEPS

  • Season both sides of the steaks with salt and pepper making sure to rub it in.
  • Heat a medium sized skillet over medium-high heat.
  • Add olive oil to the pan and heat.
  • Carefully add the steaks to the pan and cook for 4–5 minutes.
  • Reduce the heat to medium and flip the steaks.
  • Cook the steaks for another 4–5 minutes.
  • Transfer the steaks to a large plate and cover with foil.

SAUCE STEPS

  • Add oil to the skillet the steaks were cooked in.
  • Add garlic, onions, and peppercorns to the skillet and cook over medium heat until onions are translucent.
  • Carefully add the bourbon to the pan to deglaze. It may ignite so stand back and poor in slowly.
  • Use a whisk to stir and break up all the bits in the bottom of the pan.
  • Add the beef broth and the heavy cream to the pan and bring to a gentle boil.
  • Turn heat to low and simmer.
  • Cook sauce for 3–5 minutes until it begins to thicken, stirring occasionally.
  • Plate the steaks and pour the sauce over the top of them.

Recipe—Blueberry Cream Cheese Danishes

I have posted a few recipes now that call for puff pastry. As I have said before it is a great ingredient! I always keep it on hand in the freezer because it is incredibly easy to whip up some quick breakfast pastries. Here is a fabulous recipe for blueberry cream cheese danishes. One thing I love about these is that you can prep the rolls the night before, refrigerate them and then when you wake up in the morning all you have to do is slice and bake. Perfect for all the company you will be having over around the holidays!

Note: You can substitute the blueberries and jam for any flavored fruit jam you have on hand. I’m really fond of apricot too.

INGREDIENTS
4 oz cream cheese, softened
1 tbsp butter, softened
3 tbsp sugar, divided
2 tbsp blueberry jam
1/4 c fresh blueberries, chopped
1 package Pepperidge Farm puff pastry sheets, room temperature
flour for work surface
1 egg
1 tbsp water

STEPS

  • In a small mixing bowl beat together the cream cheese, butter and 1 tbsp sugar until smooth and creamy.
  • Fold in blueberry jam and blueberries making sure not to over stir.
  • Sprinkle flour on the work surface and unfold puff pastry.
  • Evenly spread a thin layer of the cream cheese mixture over the pastry leaving one edge exposed about an inch back.
  • Starting at the edge opposite from the exposed edge roll up like a jelly roll.
  • Wrap your roll in saran wrap and chill in freezer for an hour or fridge for a couple of hours. (This will make it easier to slice through.)
  • Preheat oven to 400º.
  • Beat the egg and water together in a small bowl.
  • Remove the saran wrap and cut roll into 1/2” slices.
  • Place the slices cut side down on a parchment paper lined baking sheet.
  • Brush the top of each spiral with the egg wash and sprinkle with remaining sugar.
  • Bake for 14–16 minutes or until just starting to turn a golden brown.
  • Remove the spirals from the baking sheet and allow to cool.

Recipe—Best Ever Butternut Squash Soup

I know the title of the recipe carries a big name, but it’s true, this is the BEST EVER butternut squash soup. Most butternut squash soups taste like squash puree and not much else, but this soup has so many flavors and a lot of depth. I absolutely love this stuff. It actually worked out that this recipe was my best use yet of my delivered organic produce. I ended up having the first five ingredients in last weeks box. Score! It was a sign that this soup was meant to be. One thing that I really love about this soup is that it is thick because of all the veggies in there, not because of any flour or cornstarch like most soups. If you are looking for a fabulous fall soup, look no further. This will fit the bill.

Notes: Most of your time making this recipe will be spent chopping veggies. To save some time, you can buy packages of pre-chopped butternut squash at the store. It will cost a little more but will shave off quite a bit of prep time.

This soup can be made vegetarian but cutting out the bacon and replacing the chicken broth with vegetable broth.

You can use a hand mixer or blender to process the mixture. The hand mixer will give you a slightly chunkier soup and the blender will give you a really smooth one. If you use a hand mixer be sure you don’t use a non-stick pot, as the hand mixer will destroy it. If using a blender you will need to do it in batches. I recommend placing a towel over the top of your blender and holding the lid firmly in place as the heat will make the lid blow off and it makes a huge hot mess and can burn you if not secured.

INGREDIENTS
8 slices bacon, chopped
1 large yellow onion, chopped
2 large carrots, peeled and chopped
3 celery ribs, chopped
1 green apple, peeled and chopped
1 tbsp garlic, minced
2 medium butternut squash, peeled and chopped
32 oz chicken broth
2 tbsp lime juice
1 1/2 tbsp honey
2 tsp salt
1 tsp black pepper
1/8 tsp ground allspice
1/8 tsp ground nutmeg
1/8 tsp cayenne pepper
1 c heavy whipping cream
crème fraîche or sour cream (for garnish)

STEPS

  • In a large soup pot, cook bacon over medium-high heat.
  • Remove bacon and drain off grease leaving 2 tbsp in the bottom of the pot.
  • Sauté onions and carrots in the bacon drippings for about 5 minutes.
  • Add in the celery, apples, and garlic and sauté for another 5 minutes.
  • Add in the squash and broth.
  • Bring pot to a boil, reduce heat and simmer for 20–25 minutes or until all produce is fork tender.
  • Remove pot from heat.
  • Using a hand mixer or blender process the mixture until smooth. (See above note) If you use a blender return the soup to the pot.
  • Stir in the lime juice, honey, salt, pepper, allspice, nutmeg, cayenne pepper, and whipping cream.
  • Simmer soup for 10–15 minutes or until thickened.
  • Using a ladle serve the soup into a bowl and top with crumbled bacon and a dollop of crème fraîche or sour cream.
