Recipe—Baked Acorn Squash

I have a confession to make, I know this will make me sound like a total blonde but I want to be sure you all know I’m human and that I don’t know everything about cooking. I am still learning every day. So here I go… until I got my first acorn squash in my organic produce box a few weeks back I thought they were a decorative item. Seriously. Okay, go ahead and laugh now.  I remember seeing them in the grocery stores with all the gourds and pumpkins every fall but I was oblivious to the fact that people actually ate them. I am so glad I discovered that these were in fact edible because they are delicious and I now love cooking with them. I am sharing a recipe for a classic oven baked acorn squash. This is a really sweet treat and a fun way to enjoy the veggie. These squash remind me of my favorite Thanksgiving side dish, sweet potatoes with brown sugar and pecans. Yum! Depending on how many people I have over for turkey day this year I may just even make these instead. Why not mix it up and break out of tradition?

INGREDIENTS
1 acorn squash
1 tbsp butter, softened
salt
2 tbsp brown sugar
2 tsp maple syrup

STEPS

  • Preheat oven to 400º.
  • Carefully cut acorn squash in half and using a spoon clean out the seeds and stringy pulp.
  • Coat the inside of each squash half with the softened butter and sprinkle with salt.
  • Add 1 tablespoon of the brown sugar to the cavity of each half.
  • Drizzle a teaspoon of maple sugar over each half.
  • Put a 1/4” of water in a baking dish (This keeps the squash from drying out.)
  • Place the prepared acorn squash in the water cut side up.
  • Bake squash for 1 hour or until they are soft and easily pierced with a fork.
  • Allow to cool for 5 minutes before serving.

Recipe—Buffalo Cauliflower Bites

I am a girl who loves her boneless buffalo wings, just not all the calories that come with the batter fried chicken. This is a fabulous adaptation of the classic American appetizer. My husband isn’t really a fan of buffalo chicken but he really enjoyed these to my surprise. To be honest, the two of us finished off the entire batch over some Sunday football and I was guilt free! This is a really great appetizer that is not only quick but incredibly easy. Enjoy!

INGREDIENTS
1 head of cauliflower, cut into bite size pieces
1/2 c buttermilk
1/2 c flour
1 tsp garlic salt
1/2 c buffalo sauce (I love Frank’s Red Hot Buffalo Wings Sauce!)
1 tbsp butter, melted

GARNISHES
bleu cheese dressing
celery and/or carrots

STEPS

  • Preheat oven to 350º.
  • In a large bowl whisk together buttermilk, flour, and garlic salt until smooth. (If the batter seems too thick add more buttermilk a tablespoon at a time. You want it to be slightly thick so that it sticks to the cauliflower. If it is too runny the batter will all drip off while baking.)
  • Place the cauliflower into the bowl of batter and gently toss to coat.
  • Spread the battered cauliflower out on a greased baking dish making sure to shake off any excess batter.
  • Bake for 20–25 minutes turning once until some of the edges turn a nice golden color.
  • While the cauliflower is baking combine the buffalo sauce and melted butter in a small bowl.
  • Remove the cauliflower from the oven and drizzle the buffalo sauce mixture over the top and toss to coat.
  • Return the cauliflower to the oven and bake for an additional 5–10 minutes.
  • Remove the finished cauliflower from the oven and plate with some fresh veggies and a side of bleu cheese dressing.

 

Note (added 01/13/14): Many people have asked about the texture. The batter becomes more like a soft breading on the outside rather than crispy. To get a crispy texture try frying the battered cauliflower. And be sure to shake of excess batter as you place it on the baking sheet so that the cauliflower is lightly coated.

Recipe—Dutch Apple Pie Muffins

The last couple of weeks I have had some beautiful apples in my produce boxes. Not quite enough to make applesauce or an apple pie though. So I thought, why not try to whip up some apple pie muffins! This recipe calls for brown sugar rather than any white sugar giving them a rich caramel apple flavor. These are not your typical light and fluffy muffins, they are actually dense and really moist, sort of like a pound cake. A perfect treat to enjoy during chilly fall mornings with a big cup of joe. Not that we have had any mornings like that this season in California though. My Halloween decorations are up and I don’t think we have had a day under 90º. This girl is ready to break out her scarves and boots! Nonetheless, I will continue pretending like it’s fall weather when cooking in my kitchen. This weekend I am headed up to Apple Hill for our annual family pumpkin picking trip where I will be sure to get a big bag of apples. My next mission, crock-pot applesauce!

Note: This recipe makes one dozen delicious muffins.

TOPPING INGREDIENTS
1/2 c brown sugar
7 tbsp flour
1/4 c butter, softened
1 tsp cinnamon

MUFFIN INGREDIENTS
1 1/2 c brown sugar
2/3 c oil
1 egg
1 tsp vanilla
1 c sour cream
2 1/2 c flour
1 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
2 c diced apples

STEPS

  • Preheat oven to 350º.
  • Grease your muffin pan or line with paper muffin cups.
  • In a small bowl combine all topping ingredients and mix until crumbly. Set aside.
  • In a large bowl mix together sugar, oil, egg, vanilla, and sour cream.
  • In a separate bowl sift together the flour, baking powder, cinnamon, and salt.
  • Slowly stir the flour mixture into the batter until combined.
  • Add the diced apples mixing until evenly distributed.
  • Distribute the batter among the 12 muffin tins. It’s okay if they are fairly full. These do not swell up really big.
  • Generously sprinkle the muffins with the topping.
  • Bake for 30 minutes or until a toothpick comes out clean when inserted in the middle.
  • Allow muffins to cool in pan for 5–8 minutes before removing and then transfer to a cooling rack or cutting board.

Recipe—Personal Pineapple Upside Down Cakes

Pineapple upside down cake is one of those traditional all American classics that has been around forever, well at least since the 1920s. These personal versions are great for entertaining a small group and so easy to whip up and serve. One of the many great things about this recipe is that you can keep the items stocked in your pantry and whip these up in a very short amount of time. They are quick and so incredibly easy to make. I made them for our dinner party the other night and they were a real hit. My husband said he could have kept eating them and my 2-year-old son liked them so much he didn’t even have an interest in the ice cream I served with it. He just wanted the cake, or as he called it, “birthday.”

Note: This recipe is written to make 6 personal cakes using a Texas muffin pan. If you don’t own one of these you can use a standard muffin pan and substitute pineapple rings with pineapple chunks and adjust the baking time to 17–20 minutes.

INGREDIENTS
2 eggs
2/3 c sugar
4 tbsp pineapple juice (use the stuff in your can of pineapple rings)
1 tsp vanilla
2/3 c flour
1 tsp baking powder
1/4 tsp salt
1/4 c butter
2/3 c brown sugar
1-20 oz can pineapple rings
maraschino cherries

STEPS

  • Preheat oven to 350º.
  • In a medium mixing bowl beat together eggs, sugar, pineapple juice, and vanilla.
  • Using a separate bowl mix together the flour, baking powder, and salt.
  • Stir the dry ingredients into the wet ones and set aside.
  • In a small saucepan melt the butter and stir in the brown sugar until almost dissolved.
  • Grease a 6-cup Texas muffin pan.
  • Evenly distribute the brown sugar sauce in each cup.
  • Place a pineapple ring in the bottom of each muffin cup and a cherry in the center of the pineapple ring.
  • Pour the cake mixture into each cup until there is none left. They will probably be about 3/4 of the way full.
  • Place muffin pan in oven and bake for 22–25 minutes or until a toothpick comes out clean when inserted in the center.
  • Allow to sit for 3 minutes.
  • Place a cutting board over the top of the muffin pan and quickly flip the muffin pan upside down.
  • If the mini cakes don’t release from the pan lightly tap the pan with a rubber spatula until it releases.
  • Serve warm with a scoop of vanilla ice cream and enjoy!

Recipe—Ratatouille

Ratatouille Over Penne

When most people hear the word ratatouille they think of a movie about a little rat named Remy who dreams about becoming a chef. Ratatouille is not just a very cute Pixar movie; it is also a delicious dish loaded with succulent Mediterranean vegetables that your family is sure to enjoy.

Ratatouille is a traditional French vegetable stew that originated in Nice. The full name is ratatouille niçoise. It is a flavorful, hearty, low calorie fare that can be served as an excellent main dish, to accompany a protein, or tossed with pasta. This recipe is a great way to utilize all those wonderful summer garden veggies that are in season. Aside from all the chopping this recipe is very easy to prepare.

Ratatouille

I will state that this makes a pretty hearty amount so you will probably have leftovers unless you are serving a whole army. The leftovers are incredible, as the flavors seem to intensify with time. I made lasagna with my leftovers and I must say it is one of the best lasagnas I have ever had! The big chunky vegetables were awesome, especially when I paired them with Italian sausage and some ricotta. I will be sure to share that recipe with you next. Delish!

INGREDIENTS
1/4 c olive oil
1 yellow onion, chopped
4 cloves garlic, minced
1 eggplant, cut into 1/2-inch cubes
2 zucchini, cut into 1/2-inch cubes
Coarse salt and ground pepper
1 yellow bell pepper, deseeded and cut into 1/2-inch cubes
1 red bell pepper, deseeded and cut into 1/2-inch cubes
15 oz can diced tomatoes
1/2 tsp dried thyme
1/4 c fresh basil, chopped

STEPS

  • In a large pot that has a lid, heat olive oil over medium heat.
  • Cook onions until soft, about 5 minutes.
  • Stir in garlic and cook for about 1 min.
  • Add in eggplant and zucchini and season with salt and pepper.
  • Add 1/2 cup of water, cover, and simmer stirring once until vegetables begin to soften, about 5 minutes.
  • Stir in bell peppers, cover, and simmer for another 5 minutes.
  • Add in tomatoes and thyme and bring to a boil.
  • Reduce heat to medium-low and cover.
  • Stir occasionally until vegetables are cooked to desired consistency. Mine take about 12–15 minutes.
  • Remove from heat, stir in basil, and serve immediately.

Recipe—Classic Chicken Salad

Trying to figure out what to make for your next luncheon or picnic? Search no further! This classic chicken salad recipe is perfect for these warm summer months. During the summer I like cool refreshing sandwiches and chicken salad is always at the top of the list. This recipe is simple, delicious, and a classic. It is perfect in sandwiches or served in a tomato over a bed of lettuce. Heck, I’ve even just gone at it with a fork, I won’t lie. I will say this is better than anything you will find at the deli counter and it is so easy to make. The inclusion of lemon juice and parsley gives this chicken salad a certain freshness that others don’t have.  This is one of those recipes that just gets better over time. I ate this three days after I had made it and it was amazing how much the flavors all intensified. It’s good stuff, Maynard!

Note: This calls for boiled chicken breasts but I have also made it with leftover grilled chicken and it gave the salad a really nice flavor and texture.

INGREDIENTS
4 boneless skinless chicken breasts
1 stalk celery, sliced
1 c mayonnaise
1 tsp mustard
2 tsp lemon juice
1 green onion, thinly sliced
2 tbsp fresh parsley, chopped
1 tsp salt
pepper

STEPS

  • Bring a large pot of water to a boil and add chicken breasts.
  • Boil chicken for 20–25 minutes.
  • Remove chicken from pot and place on a large cutting board to cool.
  • Dice chicken into small pieces.
  • In a large bowl combine chicken and celery.
  • To make your dressing mix together the mayonnaise, mustard, lemon juice, green onion, parsley, salt and pepper.
  • Pour the dressing over the chicken and celery and stir to coat.
  • Refrigerate until ready to serve.

Recipe—Crock-Pot French Dip Sandwiches

When I was a very young girl I wasn’t a picky eater, but I certainly had my favorites. Whenever we went to a deli I ALWAYS ordered a ham sandwich with mayo on white bread. Yeah I was pretty adventurous. One day my dad took me to an Italian deli and I was devastated when they told me they didn’t have ham or white bread. I know what you are thinking, a deli with no ham or white bread?!? I looked at my dad with big eyes and I was at a complete loss as to what I should order. My dad made a decision and ordered me a French dip. I ate the whole thing in record speed and it was delicious! From that day on I had a new favorite sandwich.

If you have never had a French dip then you are missing out! A French dip is a hot sandwich made up of tender thinly sliced roasted beef on a roll and served with a cup of flavorful juice called au jus. You dip each bite of the sandwich in the au jus and take a bite of the juicy flavor packed beefy sandwich. Oh my goodness, my mouth is watering as I write this! This recipe takes my favorite popular sandwich and makes it cheap, easy, and convenient by cooking it in the crock-pot. The meat is incredibly flavorful and tender. It was a huge hit with my family. My hubby actually went back for seconds and then tried to snag our toddlers leftovers too. And I will say, my son was not having it. I only wish I made more because I would have loved to have some leftovers the next day.

INGREDIENTS
2 1/2–3 lb chuck roast
garlic powder
Kosher salt and pepper
3 c beef broth
1 (10.5 oz) can condensed French onion soup
3/4 c red wine
French rolls
sliced provolone cheese (optional)

STEPS

  • Trim any excess fat from the meat.
  • Season the roast with garlic powder, kosher salt, and pepper.
  • Spray crock-pot with non-stick cooking spray. (This makes clean up a breeze!)
  • In the crock-pot stir together broth, French onion soup, and red wine.
  • Add the seasoned roast to crock-pot.
  • Cook on low heat for 7–8 hours.
  • Remove roast from crock-pot and place on a cutting board.
  • Allow roast to sit for 10 minutes.
  • Using a ladle transfer half of the liquid (au jus) to a small saucepan.
  • Slice the roast (mine was falling apart tender so I ended up shredding it with a large fork) and return meat to crock-pot.
  • Continue to cook on low heat for an additional 30 minutes while the meat soaks up some of the flavor packed juices.
  • Heat the au jus you removed from the crock-pot in the saucepan over low heat.
  • Lightly toast your rolls in the oven while meat is soaking and au jus is heating.
  • Using tongs squeeze excess juice from the meat and place on toasted rolls.
  • Top with cheese if desired.
  • Serve sandwich with a side of the au jus in a small bowl or ramekin for dipping.
  • Enjoy while hot and juicy!

Recipe—Cheesy Mac Attack A.K.A. Macaroni N’ Cheese

When I think classic comfort food, I think of macaroni n’ cheese. Not the orange powdery stuff in a box that one might consider to be cheese, I’m talkin’ the real deal here. I’m talkin’ down right delicious oven baked mac n’ cheese that has a perfectly crunchy topping covering ooey gooey cheesy noodle goodness. If you are on a diet, do yourself a favor and don’t make this! You will not have the self-control to only eat one bite let alone resist it. Once you try this macaroni n’ cheese you will never need or want another recipe ever again. It is so good! It has now even become a regular item at our holiday dinners so keep it in mind come the holidays. I hope you and your family enjoy this favorite recipe of mine.

Note: I will warn you, this makes A LOT of ridiculously divine macaroni n’ cheese. It’s not a bad thing, just be warned! I actually follow the recipe and then split it into two 9”x 9” dishes and freeze one since it freezes great! The disposable foil containers you get at the grocery store are perfect for this and I love that they fit in the seal o’ meal bags allowing them to last well over 6 months in the freezer, not that it will last that long, but it could.

INGREDIENTS
1 lb pasta of choice (I like rotini because the cheese sticks to it really well)
2 c small curd cottage cheese
1 c sour cream
2 eggs
1 c Swiss cheese, shredded
3 c cheddar cheese, shredded
1 tsp salt
1/2 tsp garlic powder
1/4 tsp pepper
1 c bread crumbs (I like crushed croutons)

STEPS

  • Preheat oven to 375º.
  • Bring a large pot of water to a boil and cook pasta noodles al dente according to package instructions.
  • While pasta is cooking combine cottage cheese, sour cream, eggs, cheeses, and seasonings in a large bowl.
  • When your pasta is done cooking add it to the cheesy mixture and stir well.
  • Place macaroni n’ cheese in a 9” x 13” baking dish, or two 9” x 9” dishes if you wish to freeze one for later.
  • Top with breadcrumbs.
  • Place in oven and bake for 25–30 minutes or until bread crumbs are lightly browned on top.
  • Allow to cool for 5 minutes before serving. (Good luck waiting that long!)

Recipe—Classic Macaroni Salad

Who doesn’t love good ol’ fashioned macaroni salad? It is a staple at summer bbqs and is the ultimate in summertime comfort food. With 4th of July right around the corner I thought that this would be a fabulous recipe to share. This macaroni salad is so basic and easy but it is still out of this world. It has just the right amount of creaminess. There is something about the way the vinegar breaks down the mayonnaise that makes it just right. The veggies give the salad the perfect amount of crunch to complement the soft noodles. I could seriously eat this stuff every day. It’s one item that I don’t think I could ever get sick of. This is a recipe that will suit everyone at your next gathering. Be sure to try this before summer ends. I have a feeling you will be happy you did.

Note: Be sure not to overcook your pasta or your salad will turn to complete mush. Once your pasta is cooked al dente, drain it in a colander and run cold water over the noodles to stop the cooking and cool it down quickly. When you add the dressing it may seem too saucy but don’t fret. The pasta will end up soaking up quite a bit of the moisture once it chills in the fridge. Another important reason you don’t want your pasta overcooked. If it seems dry the next day just stir in some additional mayonnaise. 

INGREDIENTS
1 1/4 c mayonnaise
2 tbsp distilled white vinegar
1 tbsp yellow mustard
1 tsp sugar
1 tsp salt
1/4 tsp pepper
1/2 lb macaroni, cooked and drained
1 c celery, sliced
1/2 c green bell pepper, chopped
1/2 c red bell pepper, chopped
1/2 c green onion, chopped
1/2 c sliced black olives

STEPS

  • Combine mayonnaise, vinegar, mustard, sugar, salt, and pepper to make your creamy dressing.
  • Pour dressing over cooked noodles and stir in all remaining ingredients. (I like to leave out a few black olives and green onions to garnish the top of the salad with.)
  • Cover and chill until ready to eat.

Recipe—Melt in Your Mouth Italian Meatballs

What’s not to love about a big heaping pile of spaghetti topped with fresh parmesan cheese and some giant meatballs? It’s a hit with people of all ages and this is one of my family faves. These meatballs are so juicy and savory that you just won’t be able to get enough of them. I love them smothered in sauce or just by themselves. The Italian flavor really comes through and is better than you can imagine. This recipe is incredibly easy to make and practically foolproof. Not only are these phenomenal over your favorite pasta with marinara but are also awesome sliced up on pizza or in a meatball sub with mozzarella cheese melted over the top. My mouth is seriously watering as I write this and I just had them two nights ago. You really won’t be able to get enough and your family will be fighting for the leftovers if there are any. This recipe yields approximately 20 1 1/2″ meatballs .

There are three methods for cooking these meatballs. I prefer to bake them so that I am not getting as much grease from the meat. This is how the recipe is written. However, for extra tender meatballs you can cook them in the pasta sauce on the stovetop or in a crock-pot. See instructions for additional cooking methods at the end of the recipe.

Note: This recipe calls for 1/2 lb of Italian sausage, which is typically sold by the whole pound. I always double the recipe and freeze the extra meatballs for this reason. They freeze incredibly well and we can get about 3 dinners worth out of them. If you would like to freeze them follow the recipe as written. Place the cooked meatballs on a wax paper lined cookie sheet making sure they don’t touch and put them in the freezer overnight. Once the balls are frozen distribute them into freezer bags. To reheat I just put defrosted balls directly into my pot of sauce and allow them to simmer for 15–20 minutes or long enough to heat through.

INGREDIENTS
1 lb ground beef
1/2 lb Italian sausage
1 large egg
1/2 c grated parmesan cheese
1/2 c breadcrumbs
2 tbsp fresh minced garlic
1 tsp garlic powder
1 tsp salt
1 tsp fresh ground black pepper
1/2 c milk
1/2 tsp dried oregano
1/4 cup chopped fresh parsley

STEPS

  • Preheat oven to 350º.
  • Mix all ingredients together in a large bowl being sure that everything is evenly distributed.
  • Using an oversized spoon scoop about a ¼ cup worth of the meat mixture and shape into round meatballs. (Mine end up being about 1 1/4″–1 1/2″ in diameter.)
  • Place the formed meatballs in a large baking dish.
  • Bake for 25 minutes or until cooked through.

Method for cooking on the stove top: For this cooking method drop the uncooked meatballs into a pot of simmering sauce and do not stir for at least 20 minutes or the balls may break apart. After 20 minutes give the balls and the sauce a gentle stir and cook for an additional 20 minutes while simmering on medium-low heat and stirring occasionally.

Method for cooking in the crock-pot: Gently place your uncooked meatballs in the bottom of the crock-pot and pour the sauce over the top. Cook on low for 7–8 hours.
