Recipe—Zuppa Toscana 

I have been sitting on this recipe for months now just waiting for the right time of year to share. After getting record amounts of rain in Sacramento this last weekend and it FINALLY feeling like fall, I think we are finally ready for one of the best soup recipes ever! Now I can’t even take credit for this soup recipe. My friend made this Olive Garden “copycat” soup for me back in July when I was recovering from a medical procedure, and I was absolutely smitten. I had to ask for the recipe and made it for my family less than a week later. It is now a family fave. I just absolutely love that spicy sausage with the rich creamy broth and the loads of kale. (Not gonna lie, the kale makes me feel like I am eating healthy.)

Note: If you are watching your carbs you can easily leave out the potatoes for a fantastic low carb soup. 

INGREDIENTS

12 oz pack of bacon, chopped
16 oz hot Italian sausage, ground
1/2 yellow onion, chopped
2 tbsp garlic, minced
64 oz chicken broth
5 medium potatoes, cubed into 1/2″ squares
2 bunches kale, stems removed and leave chopped
1 pint heavy cream
2 tsp salt
1 tsp ground pepper
freshly grated parmesan

STEPS

  • Add the bacon to a large pot and cook over medium-high heat.
  • When the bacon is cooked to desired doneness, remove it from the pot and set aside.
  • Add the sausage to the pot breaking it up as it cooks.
  • Once the sausage is cooked through, drain off most of the grease leaving about 1–2 tablespoons.
  • Add the chopped onions and garlic to the pot with the sausage and cook stirring occasionally until the onion starts to brown, about 5–6 minutes.
  • Add the broth and potatoes to the pot and bring to a boil.
  • Simmer the soup for about 15–20 minutes or until the potatoes are just fork tender. 
  • Add the kale, cream, salt, and pepper to the pot and simmer for another 5–10 minutes. 
  • Ladle the soup into bowls and top with parmesan.

Recipe—Smothered Chicken

I am not posting this recipe because it is super easy or quick. Not that it is challenging by any means, just lots of steps and dirty pans. But hey, sometimes meals are completely worth it. I am posting this recipe because it is rich, tasty, and a wonderful indulgence. This is the type of dinner for a romantic night, a special occasion, in or if you are entertaining a couple of guests. The name says it all, a simple chicken breast smothered in all sorts of wonderful, creamy, scrumptious, goodness. This is the perfect recipe for all the low carb lovers out there. When I’m focusing on eating low carb I typically go for lower fat items but sometimes you just need something rich to satisfy those cravings. This is it.  Even if you aren’t watching carbs, this will be a wonderful indulgent dinner.

CHICKEN INGREDIENTS
2 tsp garlic powder
1 tsp kosher salt
1/2 tsp pepper
4 boneless, skinless chicken breasts
4 slices, mozzarella cheese

CREAMED GREENS INGREDIENTS
2 tbsp olive oil
1 tsp garlic, minced
3 tbsp red onion, minced
1 bunch of kale or chard, inner stalks stripped out and greens chopped
4 oz cream cheese
1/4 c grated parmesan cheese
salt and pepper

SAUTEED MUSHROOM INGREDIENTS
1/4 c butter
2 c mushrooms, sliced
1/2 c white wine
1 tsp garlic, minced
salt and pepper

CHICKEN STEPS

  • Preheat oven to 350º.
  • In a small bowl combine the garlic powder, salt and pepper.
  • Sprinkle the seasoning over the chicken.
  • Place the seasoned chicken in a greased baking dish and bake for 16 minutes.

CREAMED GREENS STEPS

  • While the chicken is baking, heat the 2 tablespoons of olive oil in a large skillet over medium high heat.
  • Add the red onions and garlic to the pan and sauté for 2–3 minutes.
  • Add in the chopped greens and cook until they are completely wilted.
  • When the greens are done stir in the cream cheese and parmesan cheese, and season with salt and pepper.
  • Continue cooking until the cream cheese is melted.
  • Remove from heat and set aside.

 SAUTEED MUSHROOM STEPS

  •  Melt the butter in a medium skillet over medium high heat.
  • Add the mushrooms to the pan and cook until browned all over.
  • Add the wine, garlic, salt, and pepper.
  • Continue cooking until most of the wine is cooked out.
  • Remove from heat and set aside.

ASSEMBLY

  • When the chicken is done cooking, remove the dish from the oven and flip the chicken over.
  • Divide the creamed greens over the top of each breast.
  • Add the sautéed mushrooms to each breast.
  • Top each breast with the sliced mozzarella.
  • Continue baking the smothered chicken breasts for another 14–16 minutes.

Recipe­—Italian Sausage Burgers with Garlicky Greens

Italian Sausage Burgers with Garlicky Greens

I love a big thick juicy homemade beef burger just as much as any one else, but I also love coming up with tasty alternatives to the all American meal. When I saw a recipe for an Italian sausage burger on Huffington Post I knew I had to try it. I love the flavor of Italian sausage and like Popeye I love my greens. So I made my own little tweaks and made these fantastic Italian sausage burgers. They were awesome! They are definitely rich, but oh so tasty.

INGREDIENTS
1 lb bulk Italian sausage, formed into 4 thin patties
4 slices of provolone cheese
2 tbsp olive oil
2 tsp garlic, minced
1 bunch chard, kale, or spinach, inner stalks stripped out and greens chopped
salt
1/4 c pesto
1/4 c mayonnaise
4 ciabatta rolls, cut in half

STEPS

  • Heat a large skillet to medium-high heat.
  • Add the sausage patties and cook until browned on the bottom, about 5–7 minutes.
  • Flip the patties and cook on the other side for an additional 5–7 minutes or until cooked all the way through. (Top each patty with a slice of provolone during the last couple of minutes.)
  • While the sausage patties are cooking, heat the olive oil in a large skillet over medium-high heat.
  • Add the garlic and chopped greens.
  • Cook until the greens are wilted and tender and season with salt.
  • Place the ciabatta rolls in the oven to lightly toast and heat through.
  • In a small bowl mix together the pesto and mayonnaise.
  • Spread the cut side of each roll with the pesto mayonnaise.
  • Place the cooked patty on the bottom bun and top with cooked greens and top bun.

Recipe—Kale Chips

I am someone who does all my menu planning and grocery shopping on the weekend so that I don’t have to worry about making any extra trips to the grocery store during the week. Being the working mom of a toddler keeps me busy enough Monday–Friday. I receive my produce delivery early in the week and one of my recent deliveries had an unexpected bunch of kale that didn’t really fit with anything I had planned on the dinner menu. I decided to use it for a healthy after school snack for my munchkin.

I have seen kale chips popping up all over the place so thought I would give them a try. While they may not look ultra appealing, they are delicious! My son and I gobbled them up. They are so addicting! Even my son kept coming in to the kitchen asking for more chips. While they totally taste best fresh out of the oven, they were still good the next day. They just loose some of that fresh crispiness over time. These are a perfect snack for those people watching their carbs or calories and they really were quick and easy to make. Perfect for snacking!

INGREDIENTS
1 bunch kale
olive oil
kosher or sea salt

STEPS

  • Preheat oven to 350º.
  • Tear the kale leaves into bite sized pieces stripping out the inner stalks.
  • Wash well in water and dry as much as you can. (I used my salad spinner and it worked great!)
  • Evenly distribute the leaf pieces on a large cookie sheet and drizzle with olive oil.
  • Toss to coat.
  • Sprinkle with salt.
  • Place in oven and bake for 10–15 minutes or until the kale is crisp.
  • Best enjoyed while warm and fresh!
