Recipe—Pomegranate Pear Salad with Goat Cheese

When people typically think of big fresh salads they think of summer. Salads are perfect year round if you know how to incorporate fresh seasonal produce. Well here is a perfect fall salad recipe. It is bright, colorful, and bursting with flavor. The flavors all complement each other really nicely. The sweetness of the fruit, richness of the goat cheese, nuttiness from the walnuts, and the bite of the basil create a perfect flavor symphony. This may even be making one of my holiday dinner menus this year.

Note: Many grocery stores now sell containers of the pomegranate seeds all cleaned and ready to use. If you don’t want to deal with the hassle of removing the seeds yourself this can be a great time saver.

DRESSING INGREDIENTS
1/4 c pomegranate juice (I use POM)
2 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
1 garlic clove, minced
1 tsp brown sugar
fresh ground pepper

SALAD INGREDIENTS
6 c (9 oz bag) fresh spinach
2–4 oz goat cheese
1/2 c walnuts or pecans
1–2 pears, cored and sliced
1 pomegranate, seeded
1/4 c fresh basil, chopped

STEPS

  • Whisk together all dressing ingredients.
  • Toss the spinach with the dressing.
  • Crumble the goat cheese over the salad.
  • Top with walnuts, pear slices, pomegranate seeds, and fresh basil.
  • Serve immediately.

Recipe—Shrimp Taco Cups with Creamy Cilantro Lime Sauce

The other night we were going to a friend’s house for a Mexican feast and I was put on appetizer duty. I wanted something besides plain ol’ bean dip that I could make ahead of time and assemble there, something light, refreshing, and elegant with a Mexican flare. These bite size shrimp taco cups were perfect! I must admit the sauce totally makes this dish. It is sooooo good! I think I will be making it in the future as a salad dressing. It would be great with a spicy chicken breast over a bed of greens. It just has so many flavors and each ingredient really shines through. Enjoy!

Note: Since these had to travel I was able to cook the won ton cups and shrimp at home and assemble them at my friend’s house. These are perfect if you are hosting a social gathering since all the prep can be done ahead of time and just quickly assembled once your guests arrive, which means more time for socializing! Perfect for the upcoming holidays.

Recipe—Personal Pineapple Upside Down Cakes

Pineapple upside down cake is one of those traditional all American classics that has been around forever, well at least since the 1920s. These personal versions are great for entertaining a small group and so easy to whip up and serve. One of the many great things about this recipe is that you can keep the items stocked in your pantry and whip these up in a very short amount of time. They are quick and so incredibly easy to make. I made them for our dinner party the other night and they were a real hit. My husband said he could have kept eating them and my 2-year-old son liked them so much he didn’t even have an interest in the ice cream I served with it. He just wanted the cake, or as he called it, “birthday.”

Note: This recipe is written to make 6 personal cakes using a Texas muffin pan. If you don’t own one of these you can use a standard muffin pan and substitute pineapple rings with pineapple chunks and adjust the baking time to 17–20 minutes.

INGREDIENTS
2 eggs
2/3 c sugar
4 tbsp pineapple juice (use the stuff in your can of pineapple rings)
1 tsp vanilla
2/3 c flour
1 tsp baking powder
1/4 tsp salt
1/4 c butter
2/3 c brown sugar
1-20 oz can pineapple rings
maraschino cherries

STEPS

  • Preheat oven to 350º.
  • In a medium mixing bowl beat together eggs, sugar, pineapple juice, and vanilla.
  • Using a separate bowl mix together the flour, baking powder, and salt.
  • Stir the dry ingredients into the wet ones and set aside.
  • In a small saucepan melt the butter and stir in the brown sugar until almost dissolved.
  • Grease a 6-cup Texas muffin pan.
  • Evenly distribute the brown sugar sauce in each cup.
  • Place a pineapple ring in the bottom of each muffin cup and a cherry in the center of the pineapple ring.
  • Pour the cake mixture into each cup until there is none left. They will probably be about 3/4 of the way full.
  • Place muffin pan in oven and bake for 22–25 minutes or until a toothpick comes out clean when inserted in the center.
  • Allow to sit for 3 minutes.
  • Place a cutting board over the top of the muffin pan and quickly flip the muffin pan upside down.
  • If the mini cakes don’t release from the pan lightly tap the pan with a rubber spatula until it releases.
  • Serve warm with a scoop of vanilla ice cream and enjoy!

Recipe—Cheesy Stuffed Mushrooms Wrapped in Bacon

The other night I wanted to surprise my husband with a nice steak dinner because, well… that’s what good wives should do for their hardworking men. I wanted to come up with a “manly” appetizer that would complement a nice steak. I love my steaks with mushrooms as well as blue cheese so this is what I came up with. A steakhouse worthy appetizer of baby portobellos filled with rich blue cheese and a dash of tangy steak sauce and finished off with salty bacon. They were delish! The cream cheese really helps to cut the overpowering blue cheese flavor giving these just the right balance. These could easily be prepared ahead of time and stored in the fridge until you are ready to bake them making them perfect for dinner parties. They are absolutely delectable and worth the effort.

Note: For an easy and mess free way to fill your mushroom caps, put the cheese filling in a Ziploc bag and cut off the corner to create a disposable pastry bag.

INGREDIENTS
12 slices of bacon
12 baby portobello mushrooms
1/2 c cream cheese, softened
1/4 c blue cheese crumbles
1 tsp steak sauce (I like A1)
salt and pepper
2 tbsp chopped green onions

STEPS

  • Preheat oven to 400º.
  • Arrange bacon slices in a large Pyrex baking dish and cook for 8 minutes.
  • Flip bacon over and cook for an additional 8 minutes. You want it to only be partially cooked and pliable so that it is easy to work with.
  • While the bacon is cooking clean the mushrooms and remove the stems.
  • Remove bacon from oven and place slices on a paper towel lined plate.
  • Reduce oven temp to 350º.
  • In a small bowl combine the cream cheese, blue cheese, steak sauce, salt and pepper and stir thoroughly breaking up the large chunks of blue cheese.
  • Once your cheese mixture is well combined stir in the green onions.
  • Fill your mushroom caps with the cheese mixture. (See above note)
  • Wrap each mushroom in a piece of the bacon and secure using a toothpick.
  • Place the finished mushroom caps on a foil lined baking sheet and cook for 15–18 minutes or until mushrooms are soft and the filling has melted.

Recipe—Piña Colada Pie with Drunken Rum Sauce

Looking for that perfect summer dessert that takes you away to a tropical island? Then look no further! My piña colada pie is a little slice of paradise. This crust less pie could not be easier to make. You literally combine all the ingredients and put it in the oven to bake. It is a creamy custard based pie which is great all on it’s own but add in the drunken rum sauce and ooo-weeee! That’s good stuff, like a party in your mouth! I like to top mine with some homemade whip cream and crushed macadamia nuts to dress it up a bit. I made this for some friends the other night and they said it was like nothing they had ever had before (I am pretty sure it was a compliment). It is a one of a kind dessert that will make your mouth happy.

PIE INGREDIENTS
1 1/2 c heavy whipping cream
1/2 c sugar
6 eggs
1 tbsp vanilla
1/2 c flour
2 c shredded coconut
8 oz can crushed pineapple, drained

DRUNKEN RUM SAUCE INGREDIENTS
1 c butter
1 c Myers dark rum
1 c brown sugar

GARNISHES
whipped cream
crushed macadamia nuts

STEPS

  • Preheat oven to 350º.
  • In a large mixing bowl combine cream, sugar, eggs, vanilla, and flour.
  • Mix using a hand mixer for about 2 minutes on medium speed.
  • Fold in coconut and pineapple until completely combined.
  • Pour your pie mixture into a greased pie dish.
  • Bake for 40–45 minutes.
  • Remove pie from oven and allow to cool.
  • While pie is cooling start the rum sauce by melting the butter in a small saucepan.
  • Stir in brown sugar and whisk until sugar is dissolved.
  • Add in rum and bring to a gentle boil.
  • Turn heat to low and simmer for 2–3 minutes.
  • Pour sauce over a warm slice of pie and top with whipped cream and some macadamia nuts.

Recipe—Chard and Mushroom Frittata

By now you probably know, or have read that, I recently signed up for organic produce delivery. It’s always fun trying to come up with recipes that utilize as many of the ingredients as possible. I feel like I’m on an episode of Food Network’s Chopped. One of my latest boxes included red chard, crimini mushrooms, and green onions. As soon as I saw the produce I knew I had to make a frittata.

A frittata is an Italian version of an omelet and it somehow seems much fancier. Rather than having the ingredients as a filling like an omelet, a frittata’s ingredients are mixed into the eggs. Frittatas are typically started on the stovetop, finished in the oven, and served as slices. While it is typical to cook a frittata in a cast iron skillet I use a pie dish. Frittatas are fabulous in that they can be served for any meal and they are great for reheating. A frittata can be made up of any combination of ingredients so have some fun and get creative.

One of the many benefits of a frittata is that it’s a great way to get in some vegetables. Frittatas are low carb and are a healthy alternative to a cheesy omelet. I made this for dinner along with some sourdough toast and it was so quick and easy. Swiss chard is one of my favorite leafy vegetables and it is a fabulous source of vitamins, minerals, antioxidants, and fiber. It goes great when sautéed with garlic and is a wonderful complement to the earthy flavor of crimini mushrooms. I was very pleased with how this recipe turned out and will most certainly be making it again.

Note: If chard is not available, spinach is a great substitute.

INGREDIENTS
2 tbsp olive oil
2 c crimini mushrooms, thinly sliced
1 tbsp garlic, minced
1 bunch red chard, thoroughly washed
8 eggs
2 tbsp milk
2 green onions, sliced
salt and pepper
1/2 c Parmesan cheese

STEPS

  • Preheat oven to 375º.
  • Separate the stems from the leaves of the chard.
  • Roll the leaves of the chard up together and slice into strips about a 1/2” wide.
  • In a large skillet heat the olive oil over medium-high heat.
  • Add the mushrooms and garlic and cook until mushrooms are soft and lightly browned, about 10 minutes.
  • Add the chard to the skillet and cook until limp but still a bright green color, about 4 minutes.
  • Remove skillet from heat and transfer veggies to a greased pie dish making sure that the veggies are distributed evenly.
  • In a medium bowl whisk together eggs, milk, green onions, and salt and pepper.
  • Pour the egg mixture over the veggies making sure that the mixture covers the dish completely.
  • Bake for 20–25 minutes or until eggs appear set.
  • Sprinkle with the cheese and finish under the broiler for an additional 3 minutes.
  • Remove from oven and allow to cool for a minute.
  • Cut into slices and serve.

Recipe—Creamy Mushroom Artichoke Chicken

This is a quick and simple chicken recipe that is easy enough to enjoy mid-week after work and impressive enough to serve up at a dinner party. Every time I have made this, my guests and family have “cleaned” their plates. It is a lovely creamy comfort dish that has loads of flavor. The Italian dressing from the marinated chicken and the capers give the dish a nice little zest and goes with the earthy mushroom flavor nicely. I love it served with rice or potatoes. You just will want to put this rich sauce over everything on your plate. Mmmmmm… If you actually have any leftovers they are great for lunch the next day! My work days always seem better when I know I will have a yummy lunch to enjoy later.

Note: If you are short on time you can cut the chicken into 1” cubes and it will cook much quicker.

INGREDIENTS
1 c Italian dressing
4 boneless skinless chicken breasts
3
tbsp butter, divided
8 oz white mushrooms, sliced
3
tbsp rice vinegar
1 pt whipping cream
3
tbsp capers, drained
1/4
teaspoon freshly ground black pepper
6.5 oz jar artichoke hearts, drained

 STEPS

  • Marinade your chicken breasts in the Italian dressing for at least 1 hour.
  • Using a large skillet melt 1 tbsp of the butter over medium-high heat and cook mushrooms until brown and tender, about 5–10 minutes.
  • Remove mushrooms from skillet and place to the side.
  • Add the remaining 2 tbsp of butter to the skillet and add the chicken breasts.
  • Cook the chicken for 10–18 minutes or until no longer pink, turning occasionally.
  • Transfer chicken to a serving dish and cover with foil to keep warm.
  • Remove skillet from heat and add the vinegar, stirring to loosen all the browned bits in the bottom of the skillet.
  • Return skillet to low heat and stir in cream, capers, and pepper.
  • Bring sauce to a boil and cook uncovered until thickened, about 4–6 minutes.
  • Return mushrooms to skillet and add artichoke hearts heating through.
  • Pour the creamy sauce over your chicken breasts and serve immediately.
Sandwiches

Recipe—Fancy Man Grilled Cheese

I recently received a cookbook with 50 different grilled cheese sandwiches. Eventually I will try them all! The sandwiches were not named; they were just referenced as Grilled Cheese #1 and so on. I told my husband to pick any one of them out for me to cook and he picked one that had roast beef, Dijon mustard, caramelized onions, and Brie. Go figure, a man picked one that was made with beef. Brie is a fairly elegant cheese so I decided to name this one the Fancy Man Grilled Cheese. Suiting right?

This sandwich turned out to be absolutely delicious! The Brie was lovely and it melted to be just the perfect amount of gooey. It was a very nice pairing with the sweet caramelized onions and the heartiness of the roast beef. I really want to try this sandwich again but substitute the roast beef for some green apple slices. I love apples with Brie and think it would be a delicious pairing as well. The sandwich was a hit with the whole family and we will most certainly be making it again. It truly is ooey gooey goodness!

Note: I found spreadable Brie by Président that worked fabulously. I didn’t have to deal with the white rind so it was very quick and easy to work with. I’m sure regular Brie would work just as well. This recipe is written for two large sandwiches.

INGREDIENTS
1 yellow onion, sliced
2 tbsp vegetable oil
4 large slices of sourdough bread
2 tbs butter, softened
Dijon mustard
spreadable Brie (I used most of a 4.4. oz container)
1/2 lb of sliced roast beef

STEPS

  • Heat a heavy nonstick frying pan over medium heat and add the oil.
  • Once the oil is nice and hot add the sliced onions and stir them immediately so each onion slice is coated in the oil.
  • Allow the onions to cook stirring every 30 seconds or so. Once the browning begins, lower the heat to decrease your risk of burning the onions.
  • Continue to stir the onions every couple of minutes until they are a golden or deep brown. This will take at least 10–20 minutes.
  • Remove the onions from the pan and place in a bowl to the side.
  • Carefully wipe out your skillet with a paper towel to remove any residual bits.
  • Spread one side of each piece of the bread with butter.
  • On two on the pieces of bread spread the opposite sides with Dijon mustard and then a thin layer of the Brie.
  • Place the bread butter side down in the pan and cook over medium high–heat.
  • Top the bread in the pan with the sliced roast beef and add your caramelized onions. Spread the dry sides of your two reaming pieces of bread with a layer of Brie and top your sandwich with them butter side out.
  • Cook for approximately 3 minutes or until the bread is a toasty brown.
  • Turn and repeat.

Recipe—Mediterranean Chicken Stackers

Mediterranean chicken stackers are one of the more complex recipes that I have shared. It’ not necessarily complicated, it’s just lots of little steps. It’s certainly worth it though if you like Mediterranean inspired food. I love this served over noodles that have been tossed in garlic and olive oil. There are so many flavors in the chicken stacker itself, that you really don’t need a sauce for your noodles. Think of this as a play on chicken and eggplant parmigiana in one. What’s not to love?!?!

Note: If you aren’t a fan of goat cheese then I recommend using mozzarella instead. Mozzarella has a much more mild flavor.

INGREDIENTS
1 eggplant, cut into 1/2 inch slices (you will need one slice per chicken breast)
salt and pepper
olive oil
1 c croutons, coarsely crushed
1 tsp garlic, minced
3 oz herb goat cheese at room temperature or sliced mozzarella
4–5 thin sliced chicken breasts
1 beefsteak tomato (you will need one 1/4″ thick slice per chicken breast and the rest of the tomato finely diced)

STEPS

  • Lightly sprinkle the eggplant slices with salt and allow them to sit for 15 minutes.
  • In a large skillet heat 2 tbsp of olive oil over medium-high heat.
  • Add the crushed croutons and minced garlic to the pan and cook until lightly toasted, about 6–8 minutes.
  • Transfer the cooked croutons to a small bowl and set aside.
  • Pat your eggplant dry.
  • In that same skillet heat 2 tbsp of olive oil over medium heat.
  • Add the eggplant and cook until golden and tender only turning once or twice, about 6–7 minutes.
  • Transfer the eggplant to a large plate and spread an even layer of goat cheese over each slice (1–2 tbsp), or add a slice of mozzarella to each if you opted for that.
  • Lightly cover the eggplant with a sheet of foil to keep warm.
  • Season your chicken breast with salt and pepper.
  • Using the same skillet add 2 tbsp olive oil and heat over medium-high heat.
  • Put your chicken in the skillet and cook turning once or twice for 8–10 minutes or until cooked through.
  • Add a chicken breast to each slice of cheese covered eggplant and again cover with foil to keep warm.
  • Place the tomato slices in the skillet and cook turning once to warm through.
  • Add the tomato slices to the top of each chicken breast and again cover with foil to keep warm.
  • Add the diced tomatoes and 1/4 cup of water to the pan and scrape up all the bits in the pan using a spatula. Bring to a boil
  • Cook stirring occasionally until thickened, about 3 minutes. Lightly season with salt and pepper.
  • Add your previously cooked croutons to the tomatoes and stir together.
  • Plate your chicken stacker and top with the crouton and tomato mixture.
